- Hi guys!
So here is a recipe to make delicious Chinese Coconut Sweet Cream Buns. I whisk ordinary whipping cream with sugar to give a thick sweet cream filling and, together with coconut on top, it tastes just like those yummy buns from a Chinese bakery!
Makes 6.
Ingredients are:
WATER ROUX
25g bread flour, sieved
100ml water
BREAD DOUGH
300g bread flour, sieved
50g sugar
Water roux (from above)
1 medium egg
70ml water, heated in microwave for 15 seconds
20ml vegetable oil
6g instant yeast
EGG WASH
1 medium egg
1 tablespoon water
Brushing egg wash onto the buns before baking helps to achieve a nice golden brown colour but it's entirely optional.
TOPPING
Sugar glaze (2 teaspoons sugar dissolved in 1 teaspoon of hot water)
25g desiccated coconut
240ml whipping cream
30g sugar
Bake at 170°C for 15 to 20 minutes or until light golden brown. This depends on your oven so adjust temperature and time accordingly.
I'm using the Morphy Richards Fast Bake breadmaker in this recipe. It makes my baking life very easy since it mixes, kneads and proves the dough and I don't need to lift a finger until the dough is ready to be used. One cycle to make dough takes 1.5 hours including the first prove. My baking life has been made so much easier by using a bread machine!

Baking temperature is 170°C (approximately 340°F) for around 15 to 20 minutes but please bear in mind that different ovens perform differently.
Can you post this recipe in cups and teaspoons/tablespoons please?
