upgraded my stock 288mm jetta tdi front brakes to the bigger GLI/GTI 312mm brakes

I didn’t go bigger in the rear
Use the same pads? It is not the same brake area? . Of course the improvement may be related to more torque applied to the brake rotors ( because de increase distance front the center of rotations. These 312 rotors fit to my Jetta TDI 2012?
You need to get the caliper brackets for the 312 brakes and then yes they will fit your car

For rears I believe u need to replace the whole caliper assembly and pads rotors

Does the OE spare wheel fits over the caliper after the 312mm upgrade? Spare wheel is 16 in rim, not sure about the clearance over original 288mm
Yes my oe wheels are 16” as well
312mm fits 16 inch.
GTI Performance/S3 345mm fits 17 inch
OE number of new brake caliper brackets? Iwanna upgrade my octavia 2 from 288 to 312mm.

I got a 2014(Mk6) Jetta S with 18” wheels. Should I upgrade just brake pads and rotors or the caliper as well?
Personally I would do the larger gti/gli caliper brackets to do the larger rotors like I did
