I like mine with the “melting “ cheese, never used an over to make enchiladas. Nice to see all the ways that people enjoy theirs!! This is Deliciousness!!
So I just tried this recipe and the Mexican rice on the wife and kids and they loved it ....the tomatillo sauce was delicious... I poured some crema too before serving... very very good thanks
i love that you make everything fresh, i have to stay away from anything canned or processed due to high blood pressure, i find cooking from scratch helps a lot.

So glad I found this recipe! There was only 1 kind of canned sauce I could eat due to it not having MSG, it's been discontinued and now the only one the stores carry now have the MSG in them. So thank you for this recipe to try, so I can still have green enchiladas!

You make corn tortillas look so easy! I attempted chicken flautas for the first time this weekend and had a hard time figuring out how to soften the tortillas enough to roll. Your way looks easier than my trial and error frying pan method!

I actually am afraid of getting an upset stomach so I avoid eating the tortillas, but I ate some chicken, cheese and salsa. It was good. 😄

If you prefer to use the canned sauce, just get a small can of diced green chiles, drain them, and mix them into your green sauce with a pinch of salt 👍
I love enchiladas not my husband, however if I get a chance to have one without him I do, we have a neighborhood in New York City where there's Mexican Restaurants. 👍🏻👍🏻
Looks so yummy. What are your tips for picking out good tomatillos? I never know if they are supposed to be hard or a bit on the softer side. Are they always supposed to be sticky?
I'm not sure about how t9 pick them, but they are sticky. Guess it's how they are lol :)

If the husks are not tightly stuck to the tomatillo and too lose and wilted, that means it's old. Sometimes I get older tomatillos and they still work, but for the fresher ones, look for a bright green sticky husk. :)
