SAAAAME!! I now live in the UK and have to really be creative when I cook Mexican food but with her tips i've been able to pull off some really great dishes.
Try using bone in , with skin chicken. Not as dry and the flavor is fabulous. Also try a can of Campbell’s Cream of Mushroom Soup in the salsa verde. Talk about a creamy addition. Mmmmmm.That’s a fabulous taste as well. Love watching you. I was in the business from 1967 to 2007. Cooking is my life even in retirement and senior age.

La Costena makes the best store bought green salsa! Not that others are bad, but they aren't as good as La Costena in my opinion. I use it to make spinach and mushroom enchiladas for my husband's breakfast. We also prefer Verole crema, but I think that's more of a Mexican sour cream than a table cream. You have inspired me so much with your videos! You make everything look so easy. I appreciate you making them.
I personally am not a fan of Herdez brand...to me it seems to lack the tomatillo tang. To me that tang adds a ton to the final dish. Other brands have more tang!
I made these….. delicious and can’t tell the difference from made from scratch sauce. I even used prepackaged shredded chicken and seasoned it well. I added a Chunk of onion and cilantro to cook with the sauce

As I've mentioned before in the comments one reason I love your channel so much is because I'm of Mexican heritage and my kids are half Asian. I noticed you use long grain rice. I do as well because I usually buy the giant bags at the Asian markets. Maybe it's why I can never get my stove top Mexican rice right😅 What I do instead is I toast my rice like normal then throw it in my rice cooker using the same 2:1 liquid to rice ratio. Comes out perfect every time.
Oh my goodness... I have this on my menu this week, but instead of chicken I'm gonna chunk up a pork loin and sear, then put salsa Verde over it with a little chicken broth... Simmer for couple hrs.. Then shred and stir and have Pork salsa Verde tacos with fresh tortillas and rice of course😍 Thank you Angelica for your everyday use of easy ingredients and making it taste amazing! I'm your biggest fan. I have cooked so many recipes now and have had them many times. My family knows you and your voice...lol! I have your cookbook too! So cool. I thought they had to be baked after assembly. Maybe that's why mine always turn out soggy. I gave up on enchiladas years ago, but I'll give this recipe a try.
I've typically seen enchilada recipes call for baking, but I also don't see any reason not to do it her way, just assemble with the ingredients freshly cooked. If your enchiladas turn out soggy, maybe less liquid or take any cover off for a longer part of the baking time, or bake less? -- I've only tried making enchiladas at home once. I had too much sauce (from a store-bought brand) and it was too hot/spicy (caliente) for me, and should not have been. But it seemed doable!
So when doing your enchiladas, be sure that you don’t over warm your tortillas or add to much sauce.. when baking it’s to warm up and melt the cheese only.. when buying your tortillas be sure it doesn’t say extra soft ! Don’t give up just try my way mixed with her way and your way will be amazing!!! I personally like the el Pato enchilada sauce in the can , but it’s to your liking and what’s available. I also like to use a Mexican blend of shredded cheese inside enchiladas with chicken and on top after smothering with sauce. Don’t bake over 10min on 350.. let cool for 4-5 min before serving 👏🏼🇲🇽❤️😊

I really appreciate your videos. I’ve learned a lot from you. Thank you for doing these. When I make shredded chicken for tacos, I will buy a package of boneless skinless thighs put them in the slow cooker and just dump one jar of salsa Verde in it and let it cook for five or six hours and then I shred it after it’s all done, it makes the best tacos. I’ve never added chicken bouillon to it. I’m going to try that next time. Thank you .
Just made this for dinner tonight. So much fresher and lighter tasting than ooey gooey cheesy enchiladas. Perfect summer dinner and the family loved it! Rice was amazing and surprisingly easy. Thankyou for this recipe. I was asked to make this with dairy free cheese for a party and it turned out really good. The only thing I do different when I make enchiladas is I use a little bit of the sauce to soften the tortillas instead of oil.

Pick your favorite green salsa or a roasted and do exactly what you said in a slow cooker and bam. It's great. You can do it with a chuck roast too

Herdez green sauce is a staple in my house. I add it to scrambled eggs and whatever else I'm doing. Will use this recipe for sure.

I remember when you couldn't buy Herdez salsa in Los Angeles. I used to bring back cases of the little cans from Mexicali every time I went to visit.

I like to dice/chop my chkn instead shred .it has a better tender texture.cuz if you shred its on the grain.so you chop opposite the grain.
