- If you're looking for an easy, quick and authentic meal , this is it. This is my go to meal when having family or friends over because they're filling and heavenly delicious, and they are better than what you'll get in any restaurant. You can side these creamy, cheesy enchiladas with rice or refried beans , but they are delicious with a simple salad or alone too. I was brought up with these delicious enchiladas, and they won't let you down, I hope you give them a try. ❤️

INGREDIENTS------------------------------
FOR BROTH
2 Chicken breasts ( skinless, boneless 1 1/4 lb.)
1 /4 piece of small onion
1 Large Garlic Clove
3 sprigs of Cilantro
1/2 tsp Salt
8 peppercorns
TO ROAST------------
7 Med size Tomatillos
1/3 piece Onion
2 Serrano Peppers
2 Large Garlic Cloves
1 Tbsp Canola Oil
TO BLEND-----------------
Roasted Ingredients
1/2 tsp Mexican oregano
1/2 tsp Ground Cumin
1 Tbsp Chicken Bouillon
3 oz. Cream Cheese
1/2 C. Mexican Crema
Salt as needed
1 C. Chicken broth
2 Tbsp Salted butter(or unsalted)

Hola, Rachel! Fellow Texan here, born in San Antonio and living in Houston. I have been watching your videos for a long time. YOU are what makes these videos so special and I have to just offer my two cents regarding this particular video. It just wasn't the same with your voice dubbed in versus watching you cook and talk. I agree with the other commenters. You should have a cooking show on the Food Network or somewhere. You are an amazing chef. Homemade corn tortillas, OMG. You also have a wonderful sauce for a wonderful enchilada recipe. I can't wait to try it.
Enchilada Verdes is my favorite Mexican dish and even though I live in Los Angeles, it is not offered in many Mexican restaurants one or two at the most and so happy to have the recipe. Thank you.

Looks delicious. Granddaughter (8) says give her a ❤. She is picky eater; fruits and vegetables is her food of choice. She likes quesadillas though, and tacos that consist of tomatoes, lettuce, and cheese.😂 She says this looks good. I asked if I make will you try? She said yes 👏 so I will have to make and remind her what she said. Chicken is her meat of choice if she eats, otherwise she likes fish of any kind.

I just love getting back onto social media and the first thing I find is my sweet friend Rachel whipping up some delicious enchiladas. I've missed your videos amiga and am so happy to be watching prepare these delicious enchiladas verdes. This is a favorite here at home and I've also used the sauce for my spaghetti verde.
