    In effort to get as many vegetables to my grandchildren As I can I chop a small zucinni and a pablano pepper and add to my ground meat. They never notice . Thanks for great sauce. 😊. Thanks for great sauce recipe.

    In High School, I enjoyed the most glorious cheese enchiladas! I have had that taste on my mind ever since. Thank you for your great recipes. I have finally found that flavor I have missed for so many years. That was in a school in Beeville, TX and the lunchroom ladies were the best cooks ever because they were from just across the border. We had those delicious mexican meals about twice a week. Thank you so much for your great recipes.

    I'm a San Antonio guy. I love good Tex-Mex and I've eaten at large portion of Mexican restaurants in this town. LOL... That's sayin a lot being that there are hundreds in this city! These my friends are the "real deal" Tex-Mex enchiladas. I made these about an hour ago and I think that they're probably some of the best I've ever eaten. I'm now officially spoiled. No more restaurant enchiladas for me!

    Just a small suggestion. If you ever do two layers and you find your cheese touching the foil covering. Just spray PAM on the foil and the cheese will not stick to the foil and stay on the enchiladas. Love your videos. 👍🏻

      in restaurants i've worked in we used plastic wrap under the foil. will not melt.

    Im not sure if it depends on the type of dish or not, but please be careful about sitting your hot dish on your stove burners. Its never happened to me but it has to my daughter and my aunt. When they pulled the glass dish from the oven and set it on the cold burner the dish exploded in a million pieces.
    I always love watching you cook! I will be giving these a try. Im sure they will be awesome! Thanks for sharing.

      I was born in Alice Texas and living on the outskirts of Houston! I'm going to try this recipe tonight. Getting everything prepped as I type! I'll probably add a little more chili powder, but that's just everyone's different taste in spiciness!

      I use the term fluffy too, lol Love it. I just turned 60 May of 2020. Blessings to you. I love Hispanic food, I live in Southern California so you know Mexican food is all around me. Before coming to Cali I lived in New York. I enjoyed Puerto Rican Cuisine. I just love the ingredients used to make the food taste so good along with the love of the person making it. I am African American/Jamaican so my taste pallet for seasoning and good tasting food is essential. My love for good seasoned food came from my Mom (RIH mommy she went home in July this year) She had a knack for mixing the right ingredients. I often wondered why she never pursued a career in cooking. I guess her family and close friends was enough to cook for. I'm so glad I came across your channel some months ago. Everything I have watched you make has made my mouth water and looks so easy to make. I have been wanting enchiladas for a few weeks now. It's not easy for me to get to a store but I finaly got the simple ingredients to make some, so I will be trying your recipe tonight for dinner.     I made your enchiladas last night and they were delicious! I decided to experiment with the tortillas. So instead of warming them up in the oil first I steamed them between wet paper towels in my microwave. They were pliable enough to roll with the filling in them. I was concerned that maybe they wouldn't be as soft after baking. To my surprise they came out perfectly. I did add some sauce to baking dish first. I then smothered them in sauce, cheese, and onion to bake. I just wanted to save time and it worked pretty well. Love your videos.

    I needed a recipe for some good enchilada sauce for my cheese enchiladas that didn’t require me to use the dried whole chili’s. I only had powdered ingredients on hand. I watched this video and used your sauce recipe and I’m so happy I did. Tastes so delicious! I’ve tried other recipes but this one is my new favorite!     I am a Texan and love my Tex-mex! You have rocked my world with this!! With covid shutting everything down and restaurant prices going up I can make it authentically at home!     What really impressed me with this recipe was the Sauce.No tomato and thats how it should be. Authentic Enchilada sauce would not contain tomato. Good Job.

      Av Wall omg thank you. I went to this so-called Mexican restaurant in Florida (Lol I know) the enchilada sauce tasted like prego pasta sauce... all the food was terrible. I’m from southern cal so boy do I miss my good Mexican food!!!

    I make mine almost exactly, after warming in corn oil, I dip the tortilla in the sauce, then fill & roll, smother with remaining sauce. Another secret that I do is use diced velveeta inside enchiladas, then top with thin slices on top. (use the block velveeta) finely diced onions in the filling.

    There used to be a Tex-Mex restaurant in my small town in Washington state that made barbacoa and enchiladas like in no other place. They were delicious. When the restaurant switched owners, the food was NEVER the same. That was many years ago and I thought I would never taste those enchiladas again...UNTIL I found your channel and this delicious enchilada recipe. My parents just love the enchiladas and say that they're exactly like the ones we had at that little Tex-Mex restaurant long ago! Thank you for the recipe.

    Nothing beats Hatch Chile. Red or green.
    But guajillo is a notable addition to a huge variety of Chile available these days.
    I like Chile that has turned red but is not dried that you can run through a blender. Then fine tune it with any of many others that are dried. You can make your sauce hotter or milder, make it Smokey or not, citrus or earthy.
    There is an endless secret special mixes you can make.
    That said this recipe sounds like a winner and I am going to try it.

    I made these enchiladas twice last week and they were a huge hit for us. I did tweek it slightly the second time around. I’m not a big fan of chili powder so I used 2 tablespoons instead of three and it was perfect for us. I can’t wait to cook these for some of my friends and family. I love your recipes.     My mom was a South Texas gal. When she made enchiladas she would sometimes soften the corn tortillas in the hot enchilada sauce instead of hot oil. She said it made the enchiladas less greasy. She also would eat her tacos in softened corn tortillas because she didn't like crisp taco shells. I'm allergic to onions, so she would make me a small pan of cheese enchiladas topped with her enchilada sauce & dollops of sour cream. (ala Pancho's...) It was great!

    Looks delicious! Couple of things ive done in the past is infuse the oil with the chili powder. This typically gives it a little more flavor. Ive also found that adding a beef stock pairs nicely with ground beef enchiladas. I also prefer a little sauce layer on the bottom of the baling dish. Again, however, lovely recipe and thanks for sharing!

    Hi I’m 66 years and I always made my mole without a recipe I just eye it and never took the time to note my measurements down So I made my mole with your measurements I used a different Chile powder I use gilbhart Chile powder. It came out perfect perfect consistency’s thanks no more guessing lol and do overs lol

    Hello, I love your videos. Your clear calm speaking and the most I live is that your recipes are simple easy to follow with spices and ingredients I use in my kitchen.     I'm pretty much a novice cook and you're directions are very good and clear. I just cooked this recipe along with your fluffy Mexican rice recipe and it was so very good! I'll be trying some of your other recipes also as I love Mexican food. I also will certainly be cooking this recipe again....no need to go to a Mexican restaurant when I can put together meals like this! Thank you very much!!!

    I like this ladies cooking. I added chopped capsicum, tomato and onion on top and then sprinkled fresh cilantro. I also added some smoked paprika n pepper to the sauce was great!!

    My grandsons will love this one. By way... I did make the chicken fettuccini Alfredo just as you taught me and it was such a hit. I added cooked mushrooms. My daughter doesn’t always like red sauce so she talked about how good this sauce was. Thanks my darling girl. Bless you!😘🌺

    Wow. You are the only person who makes enchiladas like my MIL did. Everyone who tasted it said they were the best they ever tasted, and they are! Only 2 small differences: 1) she didn't let the fried tortillas cool, she said it must be this way (believe me - I asked! Burned my fingertips many times, but she was used to it. Your way is much better.) 2) absolutely must be "Gebhardts" chili powder. She said other brands' taste could vary from bottle to bottle. Now that I'm the cook, I'm going to make it your way. Thanks.

      Yes! Gebhart was always in my Dad's pantry. These days I use Fiesta brand or Tone's, but she is spot on about the change in tastes. 😊
