Your way of preparing this was so simple to follow. Though I do prefer to bake the enchiladas. I also prefer green sauce. I'm a newbie so I still use the can sauce.
you just need a better knife. buy the best you can afford and get a knife sharpener. put it to work and keep yr kitchen knives sharp and out of the reach of children. it doesn't have to be expensive, just sharp. use flat surface of your onion or veggie to make even cuts. for leafy things like cilantro or spinach , use sharp kitchen shears. keeping your kitchen shears and knives sharp, make all the difference to your chopping skills. practice with carrots, onions and celery. the more practice with knives, chopping, the better you get. i am older (57) and taught my daughters to keep their fingers away from the blade. your recipes look very delicious. i want to try it.
