It sucks too because some people like me who are dirt poor feel bad about what thier eating and instead go starving for the rest of the day since poor and was shamed. I remember clearly a vegan on my campus made me uncomfortable because i microwaved an egg which was the most protein i could ever get from a meal for the day and i ended up starving for the day due to loss of apetite

I pull out my phone, start recording and ask them to leave me alone and if they choose not to, I call the police and file a report and press charges. Luckily isn't hasn't gotten that far yet. This usually only happens in deep blue areas and I live in a wealthy conservative moderate area and everything is pretty relaxed and chill. About a decade ago I had a few instances but was able to deescalate but I made sure to make firends with the police and always carry a camera to record.
