OH MY GOODNESS! This is so good. I made it last night and it turned out GREAT. I didn't have all the items in the video. I used some left over pizza sauce for the chipotle and tomatoes paste and yellow onion (I had no red onions😑). Everything else I had. It turned out so good. We had homemade savory Millet garlic bread. This definitely a new addition to our rotation 😊 Thanks a lot.

Would you consider doing a decadent cashew Lasagna and lower calorie maybe cashew/veg mix recipe for lasagna ? Kinda like what you did with you spinach dip recipe?? I’m thinking a recipe like this is out there but, I’m haven’t seen it? Thanks for the great ideas!

I like the more decadent plus a lower cal version suggestion. I’ve done many lasagna tests and just haven’t found the right balance between flavour, simple preparation and costliness but I’ll keep working on it for sure! My mom makes a veggie one from the blog “Cilantro and Citronella” that she finds easy to make and it’s tasty. You can take a look at that one in the meantime for a lower cal veggie option!

Just click the ragu recipe link below and when you’re on the blog post just scroll to the notes section of the recipe card. You can certainly omit the nuts in this recipe and just decrease the broth a bit or I make suggestions for other veg, protein, or ground seeds you could add. Let me know if you try it with a substitution and how you like it!

The walnuts help to thicken the sauce and they add a really nice toasty and nutty flavour to the sauce but you definitely don’t need to make a special trip to the supermarket for them. I have a note at the bottom of the recipe card on the blog with some ideas for making it without the walnuts. You can omit them entirely and just use a bit less broth so the sauce isn’t too runny or you can add something else in for a bit of texture like some grated carrot, crumbled tofu or even just a couple tablespoons of another ground nut or seed (like flaxseed). Let me know what you try and how it works out for you!

Oh thank you so much for the compliments ❤️ I’m so glad this looks like one you want to make! And yes I tend to use 3 cups cooked lentils but feel free to use 2 - 3 cups depending on how chunky you like the sauce. Sometimes canned lentils only have the equivalent of 2 cups so that’s fine and you can just add more or less tomato sauce to reach your desired consistency!

It’s much easier for anyone searching for meat free versions of the foods they enjoy if the titles of the recipes include what the sauce would traditionally be called. I understand it could be confusing and is not the authentic recipe but I’ve tried to be clear that this recipe is made with lentils.
You certainly could. There are options in Canada “better than bouillon no beef” or “no chicken” are great options. I always just use vegetable broth so that’s what I’ve done here but you could certainly swap that with “meaty” flavoured broth .
The nuts can be omitted or ground raw and added when serving if preferred. Roasting them at a lower temperature and adding them into this dish near the end (at a low simmer) can decrease the high temperatures and cooking time which could offer more protection from any damage to the healthy fats they provide. I do love the flavour that the nuts provide in this dish but they can certainly be omitted and you will still have a tasty meal 😌
