Chewy Peanut Butter Cookies Recipe
(About 24+ cookies)
Dry ingredients:
7.5oz all purpose flour (about 1 2/3 cups)
** Used 2.5 cups flour once and batter was slightly drier, but cookies still equally good! Hubby prefers more. **
1 tsp baking soda
1 tsp salt
Wet ingredients:
10.5oz brown sugar (about 1.5 cups)
1 cup creamy peanut butter (about 250g)
2 Tbs honey
1 tsp vanilla extract
4 Tbs melted butter
2 eggs
1/2 cup roasted peanuts (chopped)
Whisk together dry ingredients.
Whisk together wet ingredients.
Add dry to wet ingredients.
Fold until just combined.
Add roasted peanuts.
Scoop and roll into ball.
Flatten to 2 inch diameter.
Bake at 350°F for 10-12 minutes (rotate halfway)
Made these and SO good! Best PB cookies. ATKs scientific recipes are good for a reason. Make these! 👍😎🤩
Thank you!!!
Thank you!
Thanks Gloria Lee
Just want to thank you for posting the recipe
273 g brown sugar
45g honey
53g butter
216g flour
These are now my go-to peanut butter cookie! Chewy and delish!
1) If you don’t have the “Adjust-a-cup”, coat your utensils with cooking spray before measuring the peanut butter and honey. The food will come out easy and cleaner.
2) The dough looks very wet/oily as compared to other cookie doughs.
3) I used a #40 (1.5 TBSP) scoop and baked 10 minutes. Cookies were between 2.5”-3” wide. Perfect!
4) 4:50 why bother rolling the cookies into a ball when you’re just going to turn around and flatten them out?
5) Finally, the bottom of my 1/4 cup measure is almost exactly 2” wide. I just pressed the cookies down with the measuring cup until I saw the edge of the dough around the bottom of the cup. Perfect!
Ingredient list from an American to all non-Americans, sent with apologies:
213 g all-purpose flour (plain flour)
6 g baking soda (bicarbonate of soda)
6 g table salt
300 g brown sugar
270 g creamy peanut butter
42 g honey
5 ml vanilla extract (vanilla essence)
57 g unsalted butter, melted
2 large eggs (100 g out of shell)
70 g peanuts (chopped)
Form dough into patties 1 cm thick, 5 cm in diameter.
350°F oven = 180°C oven
That's for British People, now do the translation for all Non-Americans.
@@pavelow235 To the extent you figured that out, perhaps you can do the translation for non-Americans and non-UK'ers?
@@aaron74 Hey, don't shoot the messenger you could have worded it as "....from an American to all the Limey's out there...."
Awesome, thanks! Way easier to weigh peanut butter than measure in a cup.
Thanks from Canada. Go Metric! And measuring the peanut butter by weight is soooo much easier!! One small correction for the vanilla. The recipe calls for 1 teaspoon or 5 ml (not 14 ml).
Baked this recipe with my husband this afternoon. Placed a Hershey kiss on the warm cookies while cooling.
The cookies are so good! We will definitely make them again.
Erin, thanks so much for the science of saturated/unsaturated fat ratios. I never really knew why some baked goods differed in crisp-to-chewy comparisons.
I always thought it was more brown sugar. And then of course added more peanut butter. Nope, lol wrong way.
@@beththomas2222 I thought it was the brown sugar too.
These turned out really great. I used half dark brown sugar half light because I ran out of dark. Still came out delicious! 5 stars! ⭐️⭐️⭐️⭐️⭐️
I baked your Chewy Peanut Butter Cookies twice already. Everybody loves them!! Thank you so much for the recipe, Erin!! Best wishes to you & your Mom!! ❤ from Malaysia
Made these cookies this afternoon. It is a very simple recipes and I appreciate that you mentioned to turn the cookies half way through baking. I’ve never heard that before and I’m really amazed how that step helps to make perfect cookies. First time I’ve made them and they are delicious! Thanks for a great cookie.
Omg, I was already loving this video, but then Erin brings out her mom?! Delight overload! When these at-home vids started, nearly two years after the start of the pandemic, and shortly after all the other YT cooks seemed to be heading back to food studios (BATK; Food52, et.), I wondered if ATK had missed the mark. But I *love* seeing my favorite chefs in their own real, normal, non-sexy kitchens. These kitchens (and tools) feel like mine (except I have a very messy kitchen), and it feels like I get to peep inside of their lives a little bit. And as much as I adore Bridget and Julia, it's great meeting other cooks and product reviewers on a regular basis. Keep up the good work; keep inviting ur moms (and dads) over. 15/10: highly recommend ATK channel and recipes.
Why tell people they can "go to the recipe" when, unless you're a member the recipe is blurred out...why not be honest and state that you need to be a member to see it!
I know right
This makes me so mad when influencers do this if I wanted to be a member I would have already done so however all I want to do is make some dang peanut butter cookies!!!! She can keep her precious recipe there’s lots of other influencers who freely gives their recipe!!!!!
She does give you all the ingredients in the video….just pause the video and write them down and you have your recipe!
Just wondering if anybody else has made these as per her recipe and they are so goopy there’s no way you could make a ball unless you add more flour boy I hope it works or America’s test kitchen really sucks
I don’t even want to make the cookies anymore
its irritating you cant just go to the website and print recipe without signing up. So, you go back through and take notes to get details. ALL other sites allow you to actually see and print recipes.
That's their business model. They don't take advertising dollars, so their product reviews are unbiased. To make up that shortfall, they need to bill you.
At least they do mention the amounts! They really don't even need to do that!
@@kdmdlo It is annoying. Easy fix though, don’t follow ATK.
@@sassyt1545 You're confused. I wasn't complaining. I'm fine with it. It's their business model. Debi was the one who was annoyed.
@@aaron74 yeah i hate recipes that include the amounts. Guessing is always better
I'm so glad that you're able to have your mom on the show! I miss my mother so much. Embrace her every day!
This is how all bulk ingredients should be measured out. This lady does this right. Always portion your dry bulk ingredients by weight not volume. Why? Because brown sugar can lose moisture and flour particles can settle and lose trapped air. Sifted flour has about 25% more air trapped in it compared to settled flour. If your bag of brown sugar is drying out and getting bricked you can revive it with a few drops of water. Let the water permeate the brown sugar overnight. Repeat this the next morning with a few more drops of water if the brown sugar still feels lumpy when you squeeze the bag. Absolutely love those Adjust-A-Cups for measuring wet sticky ingredients.
Why not weigh your sticky ingredients? Easier yet!
I made this recipe and it was so good I made a double batch for the Church pot luck Sunday, thanks .
Blessings to you for teaching us about the saturated fats . As a new "inventor in the kitchen" didn't know this ! Thank God for people like you.
I will definitely try this recipe! You are so right about using the correct type peanut butter. I only buy Adams natural, and tried making cookies with it...yuck. Now I see why. You really have to use Jif or Skippy type to make good ones.
Jif and Skippy will harden your arteries.
Thank you for this recipe. I just made them and I substituted the egg with Just egg and they were FANTASTIC. THANK YOU!!
Erin is one of if not my FAVORITE chefs on this show. Great recipe that I can't wait to try and you have an awesome MOM.
I made these cookies this week for a 70th birthday party. (I even bought a food scale to try this recipe!). These cookies were quite the hit!!! I highly recommend this recipe!
That folding action is so PRO! So nice to see your mother join you, thank you two for sharing with us!
I actually made these without peanuts- they are amazing-- thank you
Perfect! hat was my question.
@@rhemash I never add the peanuts. These are great cookies!
These ingredients folded together perfectly and it’s no lie… These are the best peanut butter cookies you’ll ever eat!
I really loved this recipe. This one will be my new favorite. I tweaked only 2 things. I omitted the chopped nuts and I browned (then cooled) the butter. Insanely delicious!
I don't add the nuts, either -- but, I love your idea of browning the butter. Next time!
We just don't get to see Erin often enough....and yeah, great cookies! And yea Mom too!
She tends to mix a lot of recipes by hand, which is nice to see on ATK.
Made these and they were a big hit at a Xmas party. I also took them when I visited my brother and they loved them. Best peanut butter cookie ever.❤
I'm glad that more and more channels, like ATK, and embracing the approach of weighing ingredients. There really is no excuse not to weigh ingredients these days. Scales are cheap, it's more accurate, and you don't need to dirty a bunch of cup measurements.
Still waiting for the day when we switch to metric
@@7HPDH specially for baking.
@@7HPDH Absolutely! I convert all my recipes to grams.
It worked perfectly fine for thousands of years the other way, I see no reason to over complicate it now with more gadgets and time.
@@akadventurer7563 no, you will have fewer gadgets because you can get rid of your bulky measuring cups
I am so glad to see a chef crack open each egg, one at a time, in a separate bowl, rather than breaking them open over the mixture that's already been put together. I recently saw a chef with Epicurious break 4 eggs right into a mixture of 2 pounds of ground meats. Had one of those eggs been bad -- and it can happen -- everything, all the meat, would have to be tossed.
These cookies are amazing- she mentioned water but never used any from what I saw, so I didn’t either. They are perfectly chewy just the way I like them!
Such a good video. Not only did you teach us to make the cookies but you gave me a better understanding of baking chemistry. Thank you!
I am a fan of Erin's segments. She is an excellent cook.
I've made these twice in the last 5 days, they are so delicious. My favorite recipe.
Love the science of the ingredients. The knowledge of the science is indispensable for the development of new recipes. Your channel is worth subscribing to.
I just baked a double batch of these up today, and they seem to be a big hit with my family. Thank you for a great recipe!
I want the receipe for peanut butter cookie from our school cafeteria. 1970's when bakers were in school kitchens.
So tender and flavorful. I looked at a lot of recipies and this was the best!
Love Erin! And her mom appearing was a nice surprise! 2 fabulous ladies!
Mom is adorable!!
This is an excellent instructional. Great explanations and precise baking procedures. Again, like in all things culinary, the better you want your product to come out, the more attention to detail you must pay. Seriously.
This lady is so nice, the way she talks is very soothing and comforting. Great recipe though, I looove peanut butter!
Love when you explain the how and what an ingredient does to the recipe
It's awesome having your mom with you in this fun video beautiful thing.😘😊
Love this new format at home with one chef
I’m making these in the next day or so, can’t wait because they look amazing! You found the right person to make them for, nice to see your mom👏💯
Great presentation.
But what's the part about water? At minute 2:15 you mention water and proceed to make a very coherent presentation about protein water fat. Thank you. But the print recipe says nothing about adding water, and that's also true in the video process of building the recipe. So - do I add water to this recipe to get that nice result?
Also thank you for making a recipe that didn't require a heap of special (expensive) equipment.
When Erin adds the two eggs, she said they're going to add water to the dough, not that she would add extra water to the dough. The water's in the egg already. I had to click on the closed captions of the video to read what she said.
I thought the EXACT same thing! I swore she said “… we’re going to add water to the dough which I’ll talk about later.” I heard her explain the effects of water but never saw her actually add it. I spent the last 20 minutes scratching my head and was going to comment until I saw your post and the reply.
At 2:12 she actually says “Okay, so now we’re going to add two eggs. THEY’RE going to add water…”.
She talks so rapidly, it’s difficult for us old folk to understand. Thanks to you and the reply I’m ready to bake!
Tip: add brown butter instead of melted butter, it takes it to another level.
I think peanut proteins binding to water might explain why my peanut sauces for noodles always end up gloopy and thick instead of creamy! 😅
I'm a bit late 😊and just found this recipe. These cookies are delicious! Perfectly chewy! Thank you for this recipe! I will be making more, to individually wrap and freeze, so I have a grab n go snack ... I'm trying to avoid spending money and I often get hungry when I'm out running errands. ❤
Instead of using the adjust-a-cups and having extra utensils to wash, weigh the peanut butter and honey. The bowl is literally on the scale!
I want to thank you for explaining the science, it was very helpful.
So tender and delicious! Best peanut butter cookies ever.
Such a cute video, what a sweet mom
I make these cookies every chance I get and they never fail to impress at any potluck, holiday party, etc.
Boy, I wish I would have found your video yesterday. Everything you said happen to my batch of cookies last night. I used too much peanut butter thinking it will make the cookies more rich and flavorable, and they came out dry and crumbly because I did exactly what you said NOT TO DO...lol. Thank You as I will be now using your recipe from now on.
I use more butter n brown sugar when adding more peanut butter! Brown sugar is your key ingredient to keep your cookies moist! It works everytime!
Just pulled out my first batch. Wish I could post a picture. They're beautiful and my kids are quiet. So they're also delicious. Thank you!
My favorite cookie is peanut butter cookies. Thanks for the recipe.
Nicely done, Erin! Those cookies look very tasty! 👍👍
Can I make this ahead unfreeze the dough? Will it taste the same as fresh dough? Ty
Those look so yummy.
A #30 scoop is 1 oz (1.03 fl oz, 1.07 wt oz)
Wow. Thank you. My first successful chewy cookie
You and your mom are lovely ❤️great recipe can’t wait to try it 😊
These look great. Thanks for the peanut butter tips.
OMGoodness!!! You look exactly like your mom!! Cannot wait to try these! Ordering my kitchen scale!! ❤️
Best peanut butter cookies I have ever made!
Wow those look good, I'm going to try to make these, thanks for the recipe.
I'm new to ATK been watching for a couple of years now - love it. thank you. happy holidays
I don't have a kitchen scale & have never needed one so depending how much much they cost I probably won't buy one for one cookie recipe. I wish you measured with a more traditional way using cups & spoons. The cookies looked so good!
Thank you for this! Gmother’s PB cookies were always a hit with my family but I always thought they were way too dry and crumbly, now I know why, I’ll try this today!
I do have 1 question, would using a stand mixer in stead of mixing by hand be to harsh?
Me and my kids just made these. I choose carefully if I'm going to use a stand mixer or food processor based on whether the advantage it will give outweighs the extra cleaning effort. I personally had no trouble mixing this by hand
I use my food processor when making any cookie recipe. Just easier as far as I'm concerned! I didn't like the way they come out with my stand mixer! Food processor I'd the way to go! I made 6 different batches of cookies tonite alone. Baking comes tomorrow! It will take days n days for me to have all of them baked off!! They go for gifts along with my homemade pies n cakes!
Hi, it's not clear to me if natural creamy pb can be used? or if we should use a creamy pb with added oils?
I tried this recipe and it was a huge hit with all my friends. So good. Thank you Erin!!!
Yes I do. I just did ricks chocolate chip from Bon Appetite. Holy cow. This is the first time I added the skor bar and wow. But i use bread flour for the chew
You look a lot like your mom. My mom( may she rest in peace) made great peanut butter cookies. I'm dying to try these.
Made these cookies- they were delicious!
I added chocolate morsels to the dough and it was delish!
Nice to see ATK back to a pleasant straight forward approach. No jokes, innuendo. or foolishness. Ty
Yes Thankyou!
That was great! Well done Erin
Now I know what I've been doing wrong with peanut butter cookies, my fav are when they are chewy..I really like those cup holder pushy things you used..lol..I love most cookies that are chewy but they don't always turn out like that. Can't wait to try this recipe. One of my fav peanut butter cookies is Tim Horton's because they are chewy.
Little weird that you've got the scale but are using volume for the PB and honey?
Love y'all anyway. Am planning on making this, but I'm going to add Reese's baking chips. ;)
Made these cookies and they taste so good.
Delicious 😋 looking cookies peanut butter are my absolute favorite.
Mine too!! I make a filling for the inside n make sandwich cookies! It's cream cheese, powered sugar, and peanut butter mixed together!! Omg it's to die for!! My kids n g-kids want me to dip them in chocolate too!! Yummy!!
Very well done best I've seen can't wait to try it thank you.
Is there any suggestions for reducing sugar for those of us with Diabetes? Can I use splenda or stevia?
Thanks for sharing your memories
Can’t wait to make these - any chance of using grams instead of ounces in the future?
OH that looks good I am having visions of adding Butterscotch chips to the mix.
So my tweeks. Bread flour. No peanuts. Mix in 4 oz milk chocolate, 4 oz semi sweet and a heavy 1/2 cup of Reese's pieces. Now I bake on stones so my time is different. But great great great finished product. If I could post a picture I would.
Do you use bread flour for the full measurement for the flour?
I also use bread flour for my chocolate chip cookies.
Can you please tell me where you got the #30 cookie scoop? I've been looking for one, and they're so hard to find. Thanks!
I bought this on Amazon and it worked great: Gorilla Grip Premium Stainless Steel, Spring-Loaded Scoop for Fruit, Cookie and Ice Cream, Easy Squeeze and Clean Release, Comfortable Handle, Medium, 2 TBSP Scooper Size 30, Uniform Portions
Just made these and they are delicious!!!!!!
OMG delicious ❤ I’ve already made them twice for gifts 🎁
This is just what I was looking for. I have always preferred cookies with this texture. I'm headed into the kitchen now. Thanks Erin!!
Would this work with a different nut butter such as walnut or almond?
thank you!
The special was guest everything! I wish my mom was around to make oatmeal cookies!
Do I need to refrigerate the dough before I bake your peanut butter cookies
I made these cookies and used high quality ingredients. Not sure if I liked them as they were bland. Was I supposed to put white sugar? I used organic raw honey and brown sugar too!
Wow!! You sure look like your mom!! Cookies look awsome too!!
Do you add water to your peanut butter cookies how much and when if you do please reply
Thank you for this recipe🥹 The cookies came out delicious and beautiful❤️❤️💕
