The eggs by themselves are to dense and seize up when they hit the hot pan. By adding water or in this case bonito stock to the eggs, they stay runny enough to allow a thin omelette to be prepared. I am so happy to find this video. The lessons on the rolled omelette in other videos miss this important ingredient of liquid to the eggs. Wow. I just saw more of the video. He did not just start rolling the omelette with a flick of his wrist and 2 chopsticks. What? You can't do that. He did!
@benchmstr An omelette simply needs to be beaten, and then fried without being stirred. Fillings are just often used. This is a "Japanese omelette" or tamagoyaki.

OreoBunny123 oil absorbs all direct heat and helps food fry more evenly. just try frying an egg with little oil vs. a lot of oil and you'll see the difference.

Knowing this technique and having the proper tools has resulted in my being hired into fine dining positions twice in my career. There are as many applications for Tamagoyaki outside the traditional ones as you can imagine. Great demonstration!
I love Japanese omelette, it's just so different with western style, it doesn't need any more ingredients like tomato, onion, mushroom, etc. to make it flashy and tastier, its sweetness and fluffiness are already the main reasons why people love it
Western don't have the time do such complicated steps because it has something to do with the culture of fast life. They instead resort to adding stuff to give the food some spice so at least they will enjoy it. Just look at the time, it took 5 min to cook a perfect and consistent omelet that require tools you don't find on your average household. It also had more steps in cooking, so as repetition having different time depending on the heat change cause by the previews step. Do you really expect western to stay in the stove for 5 min doing the same exact steps repetitively? I doubt that, they would rather cook it for 2 min like every other western omelet and DONE....time to eat.

You don't actually NEED a square pan, it can be made in a regular circular pan, the important thing is the technique. No, it won't have perfectly straight edges(and if you're not cooking professionally it doesn't really matter), but you can get the right overall shape, and the important thing is the striated layers of egg, and the taste and texture(how well you cooked the egg), of course.

Nope, heat doesn't work that way. He is doing the traditional Chinese heat control style (talking about style, I know his Japanese) on cooking by moving the pan away from the fire. The egg itself is NOT cooked when he added the new egg, so it will be just right by the time the newly added egg gets half cooked. Consistency is the basics to perfection. This guys are no ordinary chefs.

Actually you wont find fluffy'er eggs anywhere alot of misconception is that the middle keeps cooking, the new egg cools the temperature of the middel also moving away from the heat and even tipping another layer makes the juices wanna come out from leftover heat so that makes it even more runny
I think they will. Shape of the omelette (and other foods you may think) means either shape of the tools you use when cooking them changes, or ways to cook them changes, which may cause heat from fire change, causing change the flavour of food.

Long Tran I’m american though. ;-) The way to hold chopsticks will come naturally to those who try to use them longer than five seconds. They’re literally my go to when eating noodles, rice, and small meats.

its still a very light and fluffy dish, you're just eating more at a time so it may feel dense, but the eggs are still fluffy.

Actually you wont find fluffy'er eggs anywhere alot of misconception is that the middle keeps cooking, the new egg cools the temperature of the middel also moving away from the heat and even tipping another layer makes the juices wanna come out from leftover heat so that makes it even more runny

Actually it's a Japanese type of footwear called "geta". Japan is very space efficient and like many other things they serve more than one purpose

Long Tran I’m american though. ;-) The way to hold chopsticks will come naturally to those who try to use them longer than five seconds. They’re literally my go to when eating noodles, rice, and small meats.
Long Tran To be honest, in my opinion, most asian foods are better than most stuff produced in America. American and Canadian whiskeys are an exception to that rule, though.
