not with all the salt, sugar and oil in modern Japanese food. The healthy japanese diet is the one with tons of seafood, tofu, vegetables and fermented product, mostly boiled, grilled or steamed, not the one with fried food (everything that ends with -age) and sugary sauce/marinate.
If you can't eat bland grilled fish with a little bit of salt and grated daikon, steamed tofu, braised vegetables, and natto, then you haven't been eating the healthy part of Japanese cuisine.

I am making Onigiri today. Along with Garlic Edamame, and a Strawberry Milk Jelly for dessert. and decided to make this as well now! I will post if it goes well later 😄

Also for anyone wondering how it tasted using substitutes: I didn't have dachi powder or mirin so I substituted chicken stock powder from a ramen packet for the dachi and balsamic vinegar for the mirin and it was still great! Not as good as the actual recipe I'm sure but still great!

I was searching for something else. Ended up here. ALWAYS wanted to make this. Used to watch the sushi chef at where I worked years ago make this. 😍
