Its fascinating to see the headchef prepare the dashimaki-tamago ! He is so fast and so skilled, each movement is well trained. The tamagoyaki bentos looks so tasty ! Thank you very much for sharing. At 10:00 the headchef puts a little piece of wood into the boxes, with something written on it. Does anybody know what is written there ? How much dashi is used ? When the tamagoyaki was prepared ? Or ???
The technique used to roll the omelette is more typical of Osaka, not Kyoto. Additionally, other aspects of the restaurant’s presentation deviate from an authentic Kyoto style. While the food likely looks delicious, it seems reflective of Osaka cuisine.
