Potato cheese pie (makes 8 pieces)
Dough:
1 cup all-purpose flour
1/2 tsp salt
3 tbsp oil
1/3 cup water
Mix flour, salt and oil. Mix until crumbly and add water while stirring.
Knead until it forms a dough. Rest for 20 minutes.
Potato filling:
2 potatoes, boiled, mashed.
Salt, chili flakes, oregano, pepper, to taste.
Grated mozzarella cheese
Oil for frying

Can we deep fry so it covers all the white parts? I like it pink brown all over. Could also air fry I guess for 160 or 180deg possibly around 5mins..

Yes definitely, deep fryi would be crispy and delicious, air fry should be spray with cooking oil, and turn over to get brown evenly.
