    I watched this recipe today and had to make it immediately. It was so amazing- I substituted coconut sugar for cane sugar and used spicy Indian chili powder. It tasted great and was a hit with my family. Thanks

      Thanks for the coconut sugar idea! I used 1/2 coconut sugar and 1/2 raw cane sugar. Otherwise followed recipe exactly. SO good. I’m glad I doubled it since I have a ton of Chinese eggplant right now.

      Do you think zucchini would work in place of eggplant? I have tons of zucchini I need to use . I just recently bought an eggplant to try but accidentally left it in the hot car for a few days as it rolled under my seat and of course found it a bit too late 😕

    I love eggplant and this recipe will definitely hit the spot. I will have to look for the Korean pepper powder, or if you may suggest a more available substitute that wouldn’t change the recipe too much. I also like the containers you use for dry food storage.     I made this last night and really liked it. I substituted the korean pepper powder with kashmiri mirch powder and added a little more vinegar to my taste.
    What I really appreciate about your channel is that you very to the point and unlike other channels there is no half an hour droning before getting to the recipe. If the dish takes 5-10 min then your video is also only that long.

      Most people have only had eggplant parmesan which doesn’t do it justice. Way better with Asian spices or in Greek moussaka.

    Hi, Wil. For those wishing to make this with less oil and also a bit faster, I’ve discovered that steaming the sliced eggplant for a quick minute before sautéing works fantastic. The amount of oil used is cut by 2/3rds. We steam it on a plate in our Instant Pot, set it for 1 minute manually and take it out before the timer even starts working (when you see the 1 come up, do a quick release). Then drain and proceed with the sauté steps. Hope that helps someone out there. 🇨🇦🇺🇸🙌

      We can't absorb the nutrients in some foods without the help of a little (wisely chosen) fat. For a multi-serving, this isn't over the top at all. 😊

      I do this with all eggplant as I find it makes it so tender, but with Chinese eggplant, I don’t think it’s necessary.

    Eggplant isn’t my favourite vegetable, but I did have some mushrooms that needed to be used up. Otherwise I followed
    the recipe ( I did omit the oil). Wow. It was outstanding. I think it would be good with red peppers and carrots or perhaps cucumber on their own. My husband said it was definitely restaurant quality! Thank you so much for this great recipe.

      Indian red pepper is MUCH hotter than Korean pepper flakes. I would recommend using Kashmiri chili powder if you have it, otherwise cut down the pepper by 2/3rds

      I made this tonight but substituted ancho powder, which I had on hand. It was probably not as spicy as the original but it was delicious.
      Edit: I just looked it up and both chilis have similar heat, so maybe it's a good substitute.

    Wowwwww best eggplant recipe of all time but I substituted xylitol for cane sugar. This will become staple meal. 👏 😮 ps I recently learned that eating purple fruits and vegetables daily is very important to control metabolic disease ...now I have a go to recipe. 😃

      How do you use tofu in your eggplant recipe, Michael? I love eggplant and tofu so that sounds fantastic!

      @@valeriekurtz5620 I don´t really put a lot of effort into adding the tofu. most of the times I cut it into about fork/stick sized pieces, give them some color in an extra pan with oil and add them to the eggplant before I pour in the sauce. so the tofu marinades like the eggplant in it. I do it mainly to give the dish some protein

    I have made this dish a number of times as a side dish and loved it. I decided to change it into a main dish by increasing the amount of sauce and adding mushrooms and shredded cabbage at the same time as I added the green onions. Just before serving I added udon noodles to the mixture and coated them with the sauce. Tasted amazing. Thanks for the recipes Will. This and your garlic chilli noodles are my go to quick meals

    not a huge fan of eggplant.. so i'm going to try this to see if it can change my mind :) hopefully i can find some chinese eggplants because i do like those better.

    I made this last . The recipe was super easy to follow and it turn out amazing! I had a Chinese Pepper powder that was a lot finer than the one you used but ther flavor and heat were really great . I'm the only Vegan in my household so I do most of my own cooking. Your recipes are exactly what i have been looking for. i can eat more things than just a plate of roasted veggies. Thank you so much for the videos, and thanks for what you do .     Excellent eggplant 🍆, but it's the sauce that's life-altering. I make it by the jar full now and use it for tofu marinade, salad dressing, noodle sauce, and anything else that needs a sweet spicy kick. Thanks Wil!

    I had given up making eggplant with Asian recipes. Gets too oily and mushy.. Will give it one more try. Thanks.
    Also why do you always use olive oil in Asian recipes. Why not canola or peanut oil?

      Yeah I think asian chefs would hit me over the head lol it’s just personal preference 😬 I believe veggie, canola, or grapeseed oils are more common in Asian cooking

    I just made this and it was delicious! I used korean pepper paste as I don't have the powder/flakes and I also used white vinegar instead of rice vinegar.

    another way of doing it the korean way is steaming the cut up eggplant and mixing in the sauce afterwards! it gets mushy so it gets mixed reviews but i think its still good! you can refrigerate and eat it cold like a side dish!

    What’s the flavour profile of the Korean pepper powder? I’m indian and have red chilli powder in my kitchen. Just want to know if it’d work. Same with Szechuan peppercorn Vs thallassery peppercorns in your hot oil recipe. Like your channel. Thanks for help!

    Très belle recette, grand merci. Les méditerranéens adorent les aubergines et cette recette est une autre façon de les célébrer. Je ne possède pas le piment coréen mais je crois pouvoir le remplacer avec le piment d’espelette.
