I made this last night and really liked it. I substituted the korean pepper powder with kashmiri mirch powder and added a little more vinegar to my taste. What I really appreciate about your channel is that you very to the point and unlike other channels there is no half an hour droning before getting to the recipe. If the dish takes 5-10 min then your video is also only that long.
Hi, Wil. For those wishing to make this with less oil and also a bit faster, I’ve discovered that steaming the sliced eggplant for a quick minute before sautéing works fantastic. The amount of oil used is cut by 2/3rds. We steam it on a plate in our Instant Pot, set it for 1 minute manually and take it out before the timer even starts working (when you see the 1 come up, do a quick release). Then drain and proceed with the sauté steps. Hope that helps someone out there. 🇨🇦🇺🇸🙌

Do you think zucchini would work in place of eggplant? I have tons of zucchini I need to use . I just recently bought an eggplant to try but accidentally left it in the hot car for a few days as it rolled under my seat and of course found it a bit too late 😕
I have made this dish a number of times as a side dish and loved it. I decided to change it into a main dish by increasing the amount of sauce and adding mushrooms and shredded cabbage at the same time as I added the green onions. Just before serving I added udon noodles to the mixture and coated them with the sauce. Tasted amazing. Thanks for the recipes Will. This and your garlic chilli noodles are my go to quick meals

Thanks for the coconut sugar idea! I used 1/2 coconut sugar and 1/2 raw cane sugar. Otherwise followed recipe exactly. SO good. I’m glad I doubled it since I have a ton of Chinese eggplant right now.

Discovered this dish in Vietnam. Since I came back to my homeland I make that regularly with rice and sometimes tofu. I really enjoy this eggplant dish😋
@@valeriekurtz5620 I don´t really put a lot of effort into adding the tofu. most of the times I cut it into about fork/stick sized pieces, give them some color in an extra pan with oil and add them to the eggplant before I pour in the sauce. so the tofu marinades like the eggplant in it. I do it mainly to give the dish some protein

Eggplant isn’t my favourite vegetable, but I did have some mushrooms that needed to be used up. Otherwise I followed the recipe ( I did omit the oil). Wow. It was outstanding. I think it would be good with red peppers and carrots or perhaps cucumber on their own. My husband said it was definitely restaurant quality! Thank you so much for this great recipe.

Your videos are so cool! I watch them everyday during my lunch and dinner. Makes my food more tasty 😄. One suggestion would be don't increase the pace of the video. I feel it kills the beauty of the video. I know I can reduce the speed. But some areas it becomes too slow. Instead those who want to finish the video early can watch it at 1.5 or 2 speed. It wont matter them much..

I tried your recipe for real, it’s delicious its spicy sweet sour and salty. This recipe is a keeper whenever I crave for eggplant and Im not even vegetarian.
Made this last night with Chinese eggplant and it was delicious. I love eggplant so I knew this was going to be good but was surprised at how balanced the flavors are. The only change was that I substituted Korean chilli flakes with Aleppo pepper flakes and hot red pepper flakes. I plan to purchase Korea chilli flakes and make this again. I used to make something similar with oyster sauce but I prefer this version. Also, I used a cast iron pan which really helps getting some color on the eggplant. Thanks for sharing.
Ok, I made this today and it was beyond good! I even made it with Chinese eggplants and OMG, they're so much better than the other kind, I only want to eat Chinese eggplants from now on. I'll be making this again tomorrow.

Most people have only had eggplant parmesan which doesn’t do it justice. Way better with Asian spices or in Greek moussaka.

One suggestion would be don't increase the pace of the video. I feel it kills the beauty of the video. I know I can reduce the speed. But some areas it becomes too slow. Instead those who want to finish the video early can watch it at 1.5 or 2 speed. It wont matter them much..

Made this last night with Chinese eggplant and it was delicious. I love eggplant so I knew this was going to be good but was surprised at how balanced the flavors are. The only change was that I substituted Korean chilli flakes with Aleppo pepper flakes and hot red pepper flakes. I plan to purchase Korea chilli flakes and make this again. I used to make something similar with oyster sauce but I prefer this version. Also, I used a cast iron pan which really helps getting some color on the eggplant. Thanks for sharing.

Ok, I made this today and it was beyond good! I even made it with Chinese eggplants and OMG, they're so much better than the other kind, I only want to eat Chinese eggplants from now on. I'll be making this again tomorrow.
