Another answer to the cooking tricks: I just found a chinese lady soaking the pieces in water with a hint of salt and vinegar for 20 min. To prevent 'em from soaking up much oil, later. Her channel is: CiCi Li - Asian home cooking

In answer to your question for tricks to cook aubergine... In the past, recipes called for aubergines to be sliced and salted before cooking to reduce their bitterness. As modern varieties are much less bitter, that is no longer necessary, however I find that it also used to toughen them slightly and the firmness meant that they would not fall apart so much once cooked. Deep frying also gives this as the caramelized outside helps the aubergine stay together. What I now do is much healthier, I put my cut aubergine on kitchen paper on a plate and microwave them on high, for 5 minutes. I find this extracts the liquid and again makes them firmer. Perfect for braising or stewing. For example I add them to Mapo Tofu if I don't have any Tofu. Try it! You may be surprised and its a handy technique for cooking aubergine.

Omg been trying to recreate the garlic eggplant been looking for, I added little more sugar, more ginger, used oyster sauce, but this is it, dish been looking for, tried adding other ingredients but no, adjusted amounts and it's what my favorite dish was, tyvm🙏

I don't like eggplant in most American recipes, and have had many bad experiences with the rubbery/greasy texture, and but this looks delicious and promising! Thanks for sharing.

There are no American eggplant recipes they are Italian and maybe you don't know how to cook.
Alternative to frying eggplant is to cut and cook them in pressure cooker for 7-8 minutes. Comes out very soft and ready for stir fry.

@@SchoolofWok I like to add spring onions for color as well as taste and a splash of sesame oil which matches the flavor of eggplant very well, both added at very end.
I love nasu dengaku, baked scored aubergine halves with miso marinade. Nice, clean, non-rubbery technique. It's nice too to serve aubergine as a sharing plate

Not bad. Was pretty easy to pull off. Didn't have ginger on me. Was ok without it. I'm sure it would have been fantastic with it.
I've tried this recipe using oyster sauce for stir fry sauce? I'm in USA, new England area, it's good but, here used to get and can't since covid and places closed, so on a hunt.. it's always been dark black, sweet, flavorful, more ginger taste than garlic??? Might try next time adding hoisin and black bean&garlic sauce, more ginger?? Idk? Any help? I'm keeping yours, and my spicy eggplant recipes, but sometimes want those idk memories? And we eat a lot of eggplant, especially in summer.. tyvm tc

Thanks! The same principles apply to electric, it's all about understanding your heat! If it takes a little longer to heat up, that's okay. It's all about allowing time for heat to build when it's needed! - Lee

What is vegetarian stir-fry sauce? Is it something I could make from scratch (even non-vegetarian)?
It's a veggie oyster sauce made from mushrooms instead of oysters. I'm not sure how you'd make it from scratch, but oyster sauce is the non vegetarian alternative! - Chris
why not put a slurry into the general sauce
instead of putting cornstarch on the eggplants

I did not see you add the chopped ginger to the eggplant dish. At what point should it be added?
The ginger was mixed in towards the beginning with the chopped garlic used to create the sauce

Corn flour, cornmeal and corn starch are three distinctly different things, Corn STARCH is what you are calling corn flour and it is wrong.
Not in the UK, it isn't. Cornflour here is what Americans call corn starch.
@@colettebishop2173 You are still wrong, I there is no way you can defend it, corn starch is a byproduct of corn flour. How do you differentiate between corn flour and corn starch? And don't tell me they are the same thing because they are not.
@@briandeeley1599 I'm British (as is the chef) We call the product he is using cornflour. You call it corn starch as an American, bit it is the same thing. What you call corn flour isn't something that is really used here, so you would probably need to buy it on line, from somewhere selling American groceries, where it would still be called corn flour as it would be an American import. If we go to an Indian or African shop, we can buy fine or coarse corn meal, the fine corn meal would be closest to your corn flour, but not quite the same. Your corn meal would be closest to our polenta (Italian). We are different countries and use different names for the same thing. It doesn't make anyone wrong,.
