Had a friend that worked for Chick-fil-A for years and asked him about the inclusion of a pickle juice in their recipe. He told me at no point in the breading process do they add pickle juice. The real pickle flavor comes from when they put pickles on and seal the sandwiches in the bag which steams them
Corn flake crumbs make for an amazing texture for breading. My mom exclusively uses corn flakes for croquettes and milanesa, which is basically a Latin American version of schnitzel. I don't know common it is outside of Southern California, but you can get pre-ground cornflakes, which is convenient if you're using it for breading, because an entire box of whole corn flakes results in a fraction of what you would expect when they're ground.
Tip: Beat the tenders up a little bit with a mallet to tenderize and separate some of the chicken. That will result in more crispy, craggely edges because more flour is sticking to the surface.
Gotta love the fact that you don't stretch out the vid like most youtubers to 20-30 mins. Simple and straight to the point, no waffling. Speaking of which lol waffles would go great with those!

My favorite tender brine is to fill a jar with chunky cut jalapenos (seeds left in) and top with white vinegar. Mix 50/50 with butter milk and you're golden. Lately I've been dropping a few dried reapers in the mix also as they impart all the flavor of the reaper and
The best breading is 80% cake flour and 20% wheat dextrin (AKA Benefiber), with a dab of baking soda to help the mix brown up when frying. Instead of eggs, you use a batter made of water and dredging mix. Chicken goes in the dredge, then in the batter, then in the dredge, then in the batter, and finally left to sit in the dredge. Be generous with the batter and let it get drippy in the dredge; the end result will be that much more craggly, and you won't have to fret about wetting the dredge if you're sloppy with intent. All-purpose flour is okay, but cake flour has less gluten, which means less matter to absorb water and become stale or soggy. You need a little gluten for structure, but protein is otherwise your enemy if your goal is maximum crunch. Not only will this produce the crunchiest fried chicken you have ever had, it will stay crunchy even as the chicken cools. Dextrin is magical stuff.

Worked at a cajun/creole place where we did fried chicken in beef tallow fryers. Best chicken I've ever tasted, and the fries that came out of that fryer were next level too. Mixing blackening spice into the dredge was great for extra flavour too.
Chicken fingers are my go-to for trying out a new restaurant. Basically to see how they prepare food and how they make their food stand out enough that you want to come back for another meal
One time I had gluten-free chicken tenders at this restaurant in Portland that was attached to a board game store. It was tempura batter on the chicken rather than breading, and let me tell you- they were the most delicious chicken tenders I had ever had the joy of putting in my mouth. I dream of them sometimes.
