Salt your burgers after making the patty. Salting then mixing turns them into rubbery disks. It's exactly why this burger didn't stay smashed on the griddle.

if you watched it then you seen his biscuits were uneatable. Cooking is way different under a time limit and a competiton vs cooking for a bunch of guys that are hungry. I could never do a show like that.
I watched the entire season 3 just the other day and I believe in fair game to be honest. I can't speak for everyone when I say this, but some people make mistakes when under a lot of pressure. He did burn the bottoms of the biscuits and ultimately he slightly overcooked his fish, therefore I think the judges were fair in their decisions. I was rooting for him the entire show and it was a shame that he didn't win, but you can't win at everything in life.

I for one notice that you stepped back and let the other contestants fight over what to cook first and then took what was left most times cooking woth something you said you never cooked before. I was in a little joint in Hondo, Texas. I ordered a chicken fried steak and told the waitress I wanted enchilada sauce and cheese on it instead of gravy. She looked at me like I was insane, but they did it. it was incredible.

Here in the south, we have a lot of different opinions on everything. Hell some people been fussin', fightin', and fuedin' for longer than they can even remember.
But one thing I've seen most of us agree on is our food. I don't know of an angry man with a nice plump well dressed burger, bowl of piping hot chilly, a rack of ribs fallin' off the bones an dripping with juice, or nice chilled nanner puddin'.
Thank you for keeping the drama of the world out of your videos. And thank you for sharing your chow secrets with us.
My tip, if the split cracked burgers mess with your sense of style, don't mix the ground meat so much and it wont split as badly when you cook the burgers. It also helps preserve some of the texture of the meat too. :)

I'm from Toronto area originally, but traveled all over north america on a hand full of road trips.
Seen so many different cultures and eaten alot of different food from place to place.
I once went to Cuba for a week and had by far the best pizza and burgers out of this little shack on the beach. And your burger actually reminds me alot of that burger from Cuba.

One of my favorite things about y'all, is every single recipe is doable for anyone. You never use some impossible ingredient or piece of equipment. Everything is available or translatable to indoor cooking. Blessings

Mr. Rollins, I live just south of Houston. I’ve been through hurricanes before. But this one was the worst. Big old oak trees are down. One crushed my neighbors SUV. My house is okay. Just got my internet back an hour ago. Still no power, I’m on my generator right now. Fuel is getting difficult to find. Pearland and Brazoria county seems to be the last to get power back. (from what I’ve seen and heard) That’s okay, When Ike hit us ,I was without power for 2 weeks. The first video I’ve seen was yours.
I really enjoy watching.
At lest we had a warning of the storm. When tornadoes strike you folks in Oklahoma get VERY little warning. Y’all be safe and Blessed.

Watching this video at the very end when you mentioned no matter what's going on in our lives meant a lot. I live in Katy Texas, just west of Houston and we have been dealing with a vast majority of the area without power from Hurricane Beryl. I was without power since Monday at 6:15am up until around 7pm Wednesday. The heat and no power was getting too much. Thankfully the power is back on now and I can watch your video and God bless you Kent.

Kent, loving the recipes! Made your shotgun shells at the fire station and they turned out awesome! I made them a second time but had to add a twist to it(my lieutenant is on a keto diet). So I used keto street taco shells instead of the manicotti shell. They turned out great! Keep this great stuff coming! Can't wait to try making these burgers!

The bun must have sesame seeds and be lightly toasted aswell as buttered on which you put lettuce, tomato, the meat patty with melted cheese, fried onions, bacon and egg, beetroot and finally bbq sauce.
Never add pineapple it is sacreligious.

I’ll add hatch green chili to meat and enchilada sauce. The add 2 layers of grilled onions. I do love me some grilled onions. I even put green chili in my eggs at breakfast. Yumm to both.

Oh my the creations you make are unreal looking good. I couldn't eat half the food you make. (Portion wise) I fixed a prime rib for the 4th. Did it your way deep fried it. Talk about hit it was unreal so good. Had a neighbor who is a chef say i was going to ruin it. After fixing it and eating he changed his mind. Thank You for teaching to do it.

That’s fantastic! What you also made was New Mexico enchiladas. All that’s missing is the egg on top. My late mom used to make that. When we were stationed in the Netherlands, we were able to find green chile in a can from Hatch. So we had the New Mexico enchilada. My mom was born and raised in New Mexico.

When I was a young man, I would frequent El Mexicano In Albuquerque and get a Sopapilla Burger. Always asked for Christmas style. Oh so good. Going to have to try this recipe. Looks tasty!

An authentic Mexican cook taught me years ago that a great way to tone down the heat just a little on spicey hot enchiladas is a fried egg on top (delicious!) and I can’t help but think that would be ideal to top off this enchalada burger! I’m a trying it pronto 😁

I am not too used to the cowboy culture but it is GREAT to see this kind of cooking vid.
I'm so happy to have found your channel. You were mentioned on Troy Black. I grew up with my Grandparents and everytime we went camping or just sometimes for fun on the farm Grandpa would make these kinds of recipes and they always cooked coffee the way you do. That coffee smell in the morning was bliss - even as a kid. I'll be looking in the basement. I just know I still have one of his old coffee pots. God bless you and the hard work you all do. Kent Rollins, you have spoiled me you have. I have for starters, become addicted to your Enchilada Berger. I picked up a bottle of Hatch Chile Sauce of some kind, at my Publix the next day after I saw this video and did the best I could with it. Next day I ordered 8 bottles of Fresh Chile sauces. I wanted to try every one that appealed to me on their sight. I have in a week, probably had an Enchilada Burger at least 5 times. Now, my Fresh order just came this afternoon. I AM SO EXCITED!!!!! I don't know which one to open first. I'm sure I'll have 4 or 5 open in the frig by tomorrow. Thank you for the new found experience .
