I used to live out west for a long time. One of my breakfast staples was a food cart outside a big box home improvement store. It was a breakfast burrito. Loaded up with yummy goodness. Made to perfection. You eat it and need a nap afterwards I say. Now Imlive on the other coast and decades later I make a facsimile of this for my family. A favorite of ours. I will try your version.
I just made beef liver soft tacos with guac, sour creme, and lime juice. I put some spicy seasoning on the beef liver before pan frying. I didn't have an onion, and that would have pulled it all together.

I wanted to let you know that when I made the "Cackel berry muffins" - not only did my entire family rave about them, 5 people, 6 cats & 1 dog. My daughter took some to work for her lunch, & her co-workers were so excited about them I had to send a link to the show to her to send out to them. You might have 6 more followers. Oh, the dog is bigger than Cletus, not yet 2 years old. She's going to the camp with my son-in-law, & he's gotten her packs to carry her own food.

I'm making this right now, enchiladas are in the oven. I didn't put poblano in the sausage, and used American slices of cheese instead of cream cheese. Also, I'm using homemade ketchup for the enchilada sauce. I tried the sausage and egg topping as I put it on and it was awesome! Looking forward to the finished results!

These look amazing! I’m definitely going to make them for our big family camping trip. We enjoy a lot of gourmet food when camping and your recipes are always at the top! Although I’ll probably use my enchilada hack and make it more of a casserole by layering the sauce, tortillas, and meat mixture into my Dutch oven rather than taking time to roll individual ones up. It takes less time that way but tastes just as delicious! Thanks for another amazing recipe. On a separate note, my husband and I just watched you dominate the competition on season 14 of cutthroat kitchen. We were rooting for you the whole time! Congrats on your win!
I just had tortilla casserole earlier this week I did. Not quite as delicious looking as your enchiladas over here but I also used them corn tortillas. They're really the best option for everything except for maybe burritos.

Also thank you for the videos the old southern style cooking you have takes me back to the days of my grandmother and mothers cooking, lord how i miss them. But watching your videos helps take me back to simpler days for sure. God Bless both of you.
I had beans, potato chips and tunafish sandwiches last night at like 3 in the morning. My favorite is burger with fries or corndogs with potato salad. I grew up in Hollywood and moved to a small farm town out of Seattle for 15 years. I used to clean up on the farm fresh deals in season at the Family Grocer!
I use a local butcher shop for our breakfast sausage, better than anything you buy at the big chain stores. I do like the Blue and Gold when our local FFA chapter sells it.
Dearest Mr. Rollins: Aside from your grrrrrreat recipes, I love your traditional gentlemanly mannerism and calming voice. You’re the pa/grandpa everyone wishes they had. He always made a complete Mexican Dinner tostadas, ground beef enchiladas, frijolies, refried beans and eat the Serranoes out of his little pepper garden. Me and mom always looked forward to that! He's been in heaven 9 yrs!!! He was a great cook. Lovedchis Chili can make that and his cornbread. Cooked out of cast-iron!!!! Everything so good out of cast iron. He would've loved these breakfast enchiladas. Will continue to watch.

You can’t go wrong with eggs, cheese, sausage, and peppers in the morning. Adding the tortillas and salsa sounds delicious, amigo!
I’d suggest adding a layer of sliced mushrooms on top before the shredded cheese!!! Yum yum
My grandma used to make breakfast enchiladas with hard boiled eggs, green onions, cheddar, and red enchilada sauce... So good
