I have been admiring Rainbow Plant Life's work for a long time, Nisha's videos are gorgeous, cozy and informative. So I was excited to try her most popular proper dish on her channel, her red lentil curry! This vegan dish has a little something for everyone: it's affordable, it's healthy, and it's so easy to make.

This is so nice to see ☺ Thank you so much for trying out my recipe and for your sweet words, Merle!
Of course!! You're an absolute legend and I can't wait to try more in the future. TY for your amazing work!
Three words I live by: Always Trust Nisha
Seriously! 😍
Her chili was a fail for me :(
I completely understand why now!
Same
Really? Why so, just genuinely curious :) @@monicaurcelay626
Nisha’s recipes never fail. I love her and her UA-cam channel. ❤thank you for trying it out. Love you too Merle!! 💕
Rainbow Plant Life's recipes are always great! IMO Nisha is one of UA-cam's most reliable chefs.
have no idea if this is true, but remembered hearing/reading that salt changes the texture of lentils based on when it's added: "The other trick is to wait to add the salt or any acidic ingredients until the lentils are done cooking. These ingredients can cause the lentils to stay crunchy even when fully cooked. If you stir in the salt while the lentils are still warm, they will absorb just enough to taste fully seasoned." You can test it out next time you make it
Having made many, many a soup and dahl with dried red lentils, I can say, personally, I've never had that issue. I season at every point of the cooking process, especially when browning off the first aromatics, and I'm definitely liberal with the salt! Never had any crunchy lentils left once the meal is done cooking.
@@MsJosiejo32 good to know. figured was probably subtle enough for me not to notice, but it seemed like they took longer than Merle expected to cook, so wondered if there was something to it
Yep, heard that from American Test Kitchen.
So true Jessica, I believe that goes for a lot of hearty stews and soups.
Thank you for the love everyone, make sure to go check out Nisha's channel over at Rainbow Plant Life here on UA-cam. And let me know what you'd like me to try next!!!
I dont know if you like Broccoli but this looks yummy:

I really like her Chickpea, Fennel & Brown Rice stew. Honestly, it's all been great.
omg! I (as an non-vegan) have been making this recipe for years now and it's still one of my all time favorites!! AND!! very important: It's so freezable!! Every time a need a super quick meal i just pop little container right out of the freezer and, voila, within minutes a wholesome, comfy, nutritious, jummy meal. And you can add anything on the side and it will taste good. And instead of crushed tomato's , i use more like a passata/tomato puree to make it even more creamy and rich. LOVE IT!
Rainbow Plant Life is one of my favorite cooking blogs ever. Basically anything from the website is amazing, albeit some dishes require a lot of effort to make. The Palak Tofu recipe has become a classic in my cooking rotation.
the lil boost of dopamine i get when i get notified of a new video from you is unmatched

Same!! I so look forward to these every week!!
This is my all time favorite recipe. We make it every couple weeks if not more, and always add a veggie (usually spinach) at the end! Have never had a RPL recipe we don’t like.
Yup. Spinach at the end is the best addition. My secret ingredient is thai green curry paste instead of nut butter. Also not traditional, but the aromatics in it really shjne through the lentils.
Can confirm as a non-vegan person, this dish is DELECTABLE!Ive made this numerous times, also with chickpeas(but it took more time). You can also add some spinach, cubed potatoes and carrots....list goes on!Since i am greek and i live in greece, legumes are in our weekly diet at least twice every week, soups. All soups that contain legumes have carrots and potatoes.Nisha's curry recipe is the best!Funny enough, ive tried it with chicken as well and it worked wonderfully(i know its not vegan duh).So yeah, trust Nisha!
nisha's recipes are so good. i've liked EVERY SINGLE one I've tried, and I've probably had over 100 (not kidding - doing her meal plan/recipe plan service right now, so I get 4/week - they are AWESOME)
This is my all time favorite lentil curry. Ive made is so many times.
In Rainbowplantlife we trust! I love her meals so much. I truly trust every recipe she puts out.
Love Nisha and have her 1st cookbook. She has a new cookbook coming out in the fall and I've already pre-ordered it.
I’ve never made her recipes, tho I’ve watched quite a few of her videos haha. (I was intimidated.) You inspired me and I made this today! My 2YO and I both loved it! Thanks M! I added cubed potato!
OMG!! That Red Lentil Curry is awesome! I have never had curry before but this was delicious. Love you Merle!❤️
Never had curry? How is that even possible?
Nisha is Queen. This felt like a meta moment when two of my fave vegan UA-camrs collide. I was like 😮 at :50 when you said you haven't tried her recipes. They are super tested and brilliantly delicious. I've already pre-ordered her 2nd cookbook ❤️
Im not even vegan but i love watching Merle
I've been making this recipe for years, and it's my favorite curry recipe!! So good!
Nisha's instant pot cookbook provided some delicious meals for the fam through the pandemic. Super dope watching you make and try all these recipes from other creators/cooks!
love how most of this can be made with shelf-stable ingredients. Nisha's my absolute fave!!
She's a genius!
OMGEEEE DREAM COME TRUEEEEEEEE - TWO OF MY FAVE WOMEN ON THE INTERNET TOGETHER. I am dying. My heart is overcome. Oh my God!!!!!!!!!
This is my go-to lentil recipe. I shared and made it for my family and friends. It also freezes incredibly well :)
Freeeing!!! Brilliant
I found RPL’s channel about a year ago and I’m so stoked you’re doing one of her recipes! ❤ IT LOOKS PHENOMENAL
I always make a double batch of this recipe since it's very meal prep friendly (and freezes great). Love your content, Merle!
when two of my favourite vegan creators collide.....today is a good day.
One of my faves! So excited for her new cookbook!
i bought her meal planning subscription in the beginning of the year, i haven't done every week but all the recipes i've tried are AMAZING!!
After you did that other curry recently I'm really happy to see you making this one. Nisha also has a tofu curry with veg that's great and her prep videos are also fantastic. I've been doing her meal plans since the start of the year and they are a great value and make sure you get 3 tasty meals a week
Back at it again with premium content ❤ I love Nisha. I am Indian-Jamaican and her recipes have so much flavor.
Also PickUpLimes, she is one of the vegan GOATs
literally just finished the last of this curry a couple days ago! you and nisha are my faves by far in the vegan space😍
two of my fav channels!!! love it
Parsley as a cilantro substitute always works well for me 😊
Rainbow Plant Life's recipes NEVER disappoint !
Nisha's recipes are always good. I definitely trust that she won't steer me wrong.
Nisha's recipes- awesome- the tofu tiki masala- zillions of seasonings etc. etc I even bought a spice blender for it and it was ultimately one of the best bites I've ever put in my mouth- love watching you!! You and Tabitha need to go eat out again!
I looove Nisha's recipes!!!! She even got me more into spice :)
This is one of my go to recipes. I make it with whatever nut butter i have on hand.
i was literally about to make this last night for the first time for dinner but didn't have all the ingredients!! Now I will deff make it thanks merle :)
Much love Merle! I thoroughly enjoy watching your video's!🎉 Love the Gaz Oakley one! Next, try Spicy Moustache😁
This is literally my go-to weeknight meal because it’s SO good, so cheap, and makes so much.
But just like others have said, I have not had a recipe of hers fail. Truly can trust Nisha to deliver.
You should try her tofu tikka masala! It’s a larger commitment time and ingredients wise, but it is extremely delicious and worth the effort.
i love her recipes!
I'm not a veggie or vegan but that curry looked delicious 🤤. I like a healthy meal now and then like veggie curries or vegan pasta sauce with penne, shell or twisted pasta. Lol. Spicy bean burgers and cauli cheese burgers are nice too. 😁 xx
I dont know if you made this recipe before Merle but, the Lasagna of Gaz Oakley is absolutely banging !
I just made this last night it's one of my favorite recipes. Yum!
Haven’t watched your video yet but had to comment that I absolutely love Nisha! She’s such a sweetheart! ❤️
Red lentils have to be my favourite ingredient ever- so cheap, versatile, quick to cook, love them. Since I went vegan, I cook with red lentils basically every week :D And they are so lovely in curry.
Saw this recipe about a year ago and have made it many times since, it has become one of my favourites :)
If you use cashew butter instead it tastes EXACTLY like korma. Nut butter isn't totally untraditional since ground nuts are used often in south asian cooking sauces. Also, the coconut milk is what cuts down the spiciness/spices which is why you use so much in the beginning.
The crossover I’ve been waiting for!!!!
This is one of my wife’s and my favorite meals. For us, we find 3 cups of stock (rather than 2) to be much better. I also like to add tofu and roasted cauliflower that has a good char. 😋
I love how you mentioned adding tofu because that's exactly what I want to try. 😀Fry it up and toss it in near the end. I'm not vegan but still love vegan recipes, and love both yours and Rainbow Plant Life's channels.
Sneaking in the video view while at work 😂. I'm digging the pot/skillet you're cooking with. Never seen anything like it.
Ah my two favorite creators in one video! Nisha's recipes are so good!
3:50 Actually, I watch this docuseries on netflix that went into cooking in India, and way way back when and maybe in some places still, they used cow patties to fuel the fires, so the heat was always low and slow, so when I do my curries, I don't go above a 3 or 4 on the burner.
I love RPL! I live and die by her lentil bolognese.
I make this recipe at least once a month! I use tomato sauce instead of crushed because it makes it a thicker curry. I would also recommend trying Nishas cauliflower soup! Easy, simple ingredients, affordable, and tastes great.
ohhh cauliflower soup sounds AMAZIN
I would love to see you try more recipes from Nisha!
Love Nisha’s recipes. Have her first book (Instant Pot one) and have her new one pre-ordered 😊. Try Sam Turnbull’s recipes from It Doesn’t Taste Like Chicken. Those always hit. Oooh, or Pick Up Limes. Love Sadia’s recipes as well.
Nisha is amazing, I make something of her's 2-3 times a week! Her vegan chili regularly gets love from the meat eaters in my life.
I’m new to your channel and have been binge watching your videos! I loved that you represented one of my many ethnicities in your holiday video (🇧🇷!). I’m one of those mutts with a few different passports and a weird accent. Anyway, the lentils… I remember being little and there was a shortage of beans in Brasil and EVERYBODY freaked out because we had to eat lentils 😂
🇧🇷🇵🇹🇺🇦🇷🇺🇷🇴🩰🫶🏻 1:58
Thats crazy i JUST made this. Sooo good!
Also you humming Chili's theme song had me cackling.
Oh you need to get Nisha cookbook! Ahhhmazing!
FYI, Nisha has a new cookbook coming out in September, available for pre-order now, called "Big Vegan Flavor." It looks wonderful and very comprehensive for not just new recipes, but for setting up a great vegan panty and vegan cooking in general. I have what Nisha calls a "baby mouth," so usually make this with the pasilla peppers from my garden which are plenty hot for me, but probably wouldn't even register with many lovers of spicy peppers.
Gotta try this one! Highly recommend Nisha's shepherd's pie, too! It's dang good!
It looks great and quite easy to make. Must admit I saw it, on Nisha's channel, a long time ago, but never tried it. I believe that I make like 1% of all the videos I watch, maybe even less... You really motivated me, thank you, Merle! ❤ I believe that this time I'll truly give it a go... 💃🍜🍴
You really should! This one is WORTH IT
🙏❤😋
please make nisha's saag tofu! i used to love saag paneer and really miss it.... thanks for doing this. :)
My kids love this dish!
Of all the vegan recipe UA-camrs, Nisha, Sadia, and Tabitha Brown have never failed me
I’d love to see you try Haitian Legume! It’s an eggplant stew that’s not traditionally vegan but would definitely be easy to vegan-ize!
Love Rainbow Plant life! Literally made her lentil mushroom taco meat for dinner tonight.
How do all your dishes look so amazing?!?!
In many cases, I'm trying the dishes of very talented people! hahaha
You need to try her vegan crunchwrap supreme and her brownie recipes. They're so good
❤ RPL recipes, I have tried a few and have never have been disappointed. 😊 It warms my heart that you cover that RPL recipe. Thank you!
The Teesside Chef has an excellent flatbread that I make all the time, would go nicely with your lentils.
Please try more of nisha’s recipes. Also please try a simple sweet vegan recipe
This is my staple dinner, l have it every other week. It's so good!
Yum!
Nisha really knows her stuff❤
This curry has been a staple for me since I went vegan three years ago! It's notorious in my house, and every time I make it, all the non vegans are dying for a bowl (which I happily provide) haha
Curries usually get even better the next day, so if it's so good on day 0, imagine what it is on day 1 and 2 :D
My mum used to make this all the time and i got so bored of it. Now i make it maybe teice a year but i par boil the lentils with the spices and then add it to a lot of fried onions etc which are browned then just add the cocnut milk. I also add cut up okra near the end till just cooked and not slimy.
😍😍😍 love awesome vegan creators promoting each other
My two fave vegans!!!
Merle, where did you get that saucepan from? I wondered if you had an Amazon storefront or some type of online store where we can purchase some of the cookware you use.
RPL is my go-to for any vegan recipes. They are also SO flavorful and delicious!
Merle you are adorable. I really enjoy your channel.
Thank you so much!🥹
Looking forward to your weekly shoutouts!
My roommate is making a green lentil curry as I was watching this video, but it felt like I was smelling the video as he was cooking
wo0o0oah UA-cam meets Smell-o-vision
Looks good I feel like you need something to dip it in all that beautiful sauce
8:25 Was the test before or after the coconut milk? I stopped putting coconut milk in my curried tofu because it was mellowing the spice to much.
As a flexitarian, every time I don't know what to make, I end up making red lentil dahl.
I love serving it over short grain brown rice. The nutty texture goes so well with the creaminess of the lentils.
Your look in this video is totally giving Kristen Stewart in Love Lies Bleeding! What a fantastic movie. 11/10.
I don't know why, but there's something so special to see you recreate a RPL's receipe haha, I actually do follow her! You're too funny Merle! So good to have you back, can't wait for the next one! I was actually really excited about this one and was gonna make it myself but then it got to the spices and the coconut oil and the almond butter, and I was like nooope hahha. No offence!! I'm just so picky!! I wish I wasn't!!! 😥 Hmmmm... (I get it, you can leave some(?) of those out, but wouldn't that change the flavour too much? Plus, don't think I could just not put in the coconut oil and the almond butter.. Sad. But ain't got no one else to blame but myself I guess lol.
Anyway, so glad you showed Aria trying it too, I love it when you do that!!
P.S. What happened to yall's' podcast?? I miss it!! 😥❤
Your hair looks great!
Thank you so much
I would recommend Caitlin Shoemaker’s recipes, they are amazing! Her blog is From My Bowl
Definitely should try Channa masala
Is that pan from ourplace? its soo nicee
My best girl Merle!! 🤗🥰
