  • Mosaic Hops SMASH review. This is the first in a series of new hop varieties that John brewed up as a small SMASH beer. We used one hop to focus on its bitterness, flavor and aroma properties.     Good idea, thank you! Guys, I believe that the fermentation is something you are underestimating. Most of the fruity, piny etc. aromas come from chemical transformation of hoppy oils during fermentation. You would have different results with respect of flavors, aromas and their intensities depending on yeast strain, temperature profile, time and presence or absence of excessive pressure during fermentation. You can get totally different results even if you stick with absolutely the same wort, the same hops and the same recipe, but make changes in fermentation process. Cheers!

      That is possible, but in this SMASH series we are more focused on what the hop delivers regardless of biotransformation. Furthermore, I believe that lot selection of hops plays a bigger role than we think. And certainly around the time this video was made the popularity of Mosaic was pretty high and who knows what characteristics the lots left for homebrewers had. Cheers! -Mike

      How was it mate, recommended? I'm doing my first brew this week, it'll be a smash with pale ale malt and mosaic hops. Might try the Vienna next time with the remaining mosaic that I have left over if you recommend it.

      @@madasinwat2 I absolutely recommend giving the Vienna/Mosaic brew a try. Vienna has enough character and diastatic power to be used as a single grain, and Mosaic has a beautiful aroma and flavor when used as a late addition hop. I think I will be coming back to brew this beer very soon.

    Nice work guys. I have brewed a couple of SMaSH beers with Motueka and US Cascade. Both were nice and a cool way to learn about the hops

    wonder if mosaic would mix well with pawpaw fruit..I'm making a hops mead and have a ton of pawpaw fruit . Pawpaw taste like a mix of mango and banana .

      Sounds very interesting. There seems to be more meads and ciders getting these fruit forward hops added to them so.. give it a go! Cheers! -Mike

    I recently had a Terrapin Mosaic red rye IPA, that's single hopped with Mosaic hops, and it was phenomenal! Tasted & smelled like fruit punch. One of the best beers I've ever had.

      Fruit punch sounds great. There is more to this variety for sure. We will be experimenting with late additions moving forward.

      Brew Dudes There are so many combinations & ratios involved in making beer that its mind boggling. I appreciate the hard work and information that you provide to narrow the science & art down even further. I'm so involved in trying new beers that I rarely do a home brew, but information like this helps me make the most of the ones that I do brew. Thanks and cheers!

    Well i just bought a 4 pack of Relic brewery s- M is for Mosiac - ipa. Its a 6.4 so itsakittle thin throughout. But the flesh of the video was very satisfactory

    I have made a smash with mosaic and got completely different results. I used 20 10 and 5 min and flame out additions and got a huge peach apricot flavour

      Interesting - We just had a SMaSH Mosaic beer from Long Trail Brewing Co. and it tasted less fruity than ours. A perplexing hop to say the least.

      Yep maybe its susceptible to climate change, from one year to the next. Brewed a few years back and I got a marmalade of, toffee, plum , peach, apricot , mango, hint of citrus more grapefruit than anything else. Doing it again for Crimble (sorry xmas) with 2016 hops we shall see if its changed, one thing I have had to alter is aa in my software.

    Tessellation DIPA by Lone Pine Brewery. 8.1% ABV is a good one.

    rakau (pronounced rah-koh) is the unsung hero of new zealand hops, why you chose to do waimea is beyond me. But honestly, rakau is a beautiful hop you should review it

      Use a spicy hop like Saaz as an addition. Balance it right out. - John

      I just tried Founders Mosaic Promise, it contains what it states in the title. I got blueberry from that, like a sort of melon blueberry cross, idk!
