I do have a question: do you oil the pan? I oiled mine, but I would like to try without, if the rolls won't stick. I would also like to add that ordinarily, I don't like videos for instruction, but in your case you keep it moving, post notes and don't engage in chatter. I appreciate that the visual cues help in regard to what the texture of dough during various stages should look and feel like. When I made these rolls tonite, I had the video up as I was making them. BTW, there's only 3 left.......

Thanking you so very much for answering and explaining.Can I use then just the All Purpose Flour as it is or do I have to take out two tablespoons of the flour 30 Grams and replace it with two tablespoons of cornstarch I5 Grams. My recipe calls for I60 Grams of cake flour .If I take out 30grams and add 15 grams cornstarch. It would only make the quantity 145 grams so it a little confusing.What do you think. I just had to watch this video again, it's so satisfying to watch the dough respond to how you handle it 😄. I wonder if using bread flour would result in a less fluffy dough? If so, I'll just go pick up some AP flour. I wouldn't think self-rising flour would work in this recipe, but they are the two flours I have on hand currently.

Hi, i love your videos! I watched a couple of bread videos but could not understand the differences in the making process. Sometimes, the dough is roughly kneaded in the bowl then left to proof. Other times, the dough is kneaded into a smooth ball on a surface then left to proof. Will this difference affect the bread in any way? For me, kneading it in the bowl is the best because i do not have a proper surface to knead by hand, so my bread may not always achieve the window pane elasticity. Hence i'm wondering if kneading in the bowl for a while will be a good 'shortcut' for me. Thank you!
Thanks for watching my videos. Yes, there are many methods to make the dough. Kneading in a large bowl will work too, don't worry about that. All methods will work. The windowpane test required a kneading process you can do by hands on the surface or in a large bowl or using a stand mixer with a dough hook.
This is now a favorite... Initially it was dry and shaggy, so I added a tiny bit more milk. Then I don't have the strength to stir it. LOL.... so I went in with my hand to knead it, somehow it was like so so sticky, but it became smooth but sticky after 5 mins or so. Let it rest for 90 mins... turn out with beautiful strands. Baked with the softest and moist bread ever.. still soft and moist even after 2 days!

Smita Ghosh, thank you! about the paper pan, that was for once use only and I have forgotten the size. But this wasn't crucial, you can use any baking pan available and arrange the dough into a circle. The length of the rolls is just simply divided the dough into 10, there is no particular length for this, feel free to adjust. My recipes are flexible :)

I remember years ago I use to go down on Canal street n shop. I had special stores I went for my favorite things like scallion patties off the dollar cart n almond cookies umm mouth watering. No where can beat their fish markets! That scallion recipe looks like a lot of work. Enjoy

Thanking you so very much for answering and explaining.Can I use then just the All Purpose Flour as it is or do I have to take out two tablespoons of the flour 30 Grams and replace it with two tablespoons of cornstarch I5 Grams. My recipe calls for I60 Grams of cake flour .If I take out 30grams and add 15 grams cornstarch. It would only make the quantity 145 grams so it a little confusing.What do you think. I just had to watch this video again, it's so satisfying to watch the dough respond to how you handle it 😄. I wonder if using bread flour would result in a less fluffy dough? If so, I'll just go pick up some AP flour. I wouldn't think self-rising flour would work in this recipe, but they are the two flours I have on hand currently.

Hi, i love your videos! I watched a couple of bread videos but could not understand the differences in the making process. Sometimes, the dough is roughly kneaded in the bowl then left to proof. Other times, the dough is kneaded into a smooth ball on a surface then left to proof. Will this difference affect the bread in any way? For me, kneading it in the bowl is the best because i do not have a proper surface to knead by hand, so my bread may not always achieve the window pane elasticity. Hence i'm wondering if kneading in the bowl for a while will be a good 'shortcut' for me. Thank you!
Thanks for watching my videos. Yes, there are many methods to make the dough. Kneading in a large bowl will work too, don't worry about that. All methods will work.
The windowpane test required a kneading process you can do by hands on the surface or in a large bowl or using a stand mixer with a dough hook.

This is now a favorite... Initially it was dry and shaggy, so I added a tiny bit more milk. Then I don't have the strength to stir it. LOL.... so I went in with my hand to knead it, somehow it was like so so sticky, but it became smooth but sticky after 5 mins or so. Let it rest for 90 mins... turn out with beautiful strands. Baked with the softest and moist bread ever.. still soft and moist even after 2 days!

Pan de queso
Ingredientes:
125 ml (1/2 taza) de leche tibia
25 g (2 cucharadas) de azúcar fina
3 g (1 cucharadita) de levadura instantánea
1 huevo grande, batido
250 g (2 tazas) de harina para todo uso
3 g (1/2 cucharadita) de sal fina
42 g (3 cucharadas) de mantequilla suave sin sal
Harina extra para manejar la masa
100 g (1 taza) de queso cheddar rallado, para relleno y cobertura.
42 g (3 cucharadas) de mantequilla blanda + 1 cucharada de cebollín picado + 1/2 cucharadita de ajo en polvo (cebollín / mantequilla de ajo) para rellenar
Huevo batido para lavar huevos (no lo usarás todo)

1 taza de harina para todo uso = 125 gramos
1 taza de leche / agua = 250 ml

Smita Ghosh, thank you! about the paper pan, that was for once use only and I have forgotten the size. But this wasn't crucial, you can use any baking pan available and arrange the dough into a circle. The length of the rolls is just simply divided the dough into 10, there is no particular length for this, feel free to adjust. My recipes are flexible :)
