    For those who are asking if you can replace the milk powder...-- If you don't have milk powder skip it and replace water with whole milk.

    I made the recipe, but switched the water for 10% cream as I wanted to bake a richer roll. The dough did not seem to proof very well, so I thought I ruined the recipe; but I put them in the oven expecting nothing and they turned out absolutely perfect!!! Big, fluffy, sweet and buttery rolls. I will definitely make them again, I topped them with a little bit of jam for breakfast :)

    Thanks for sharing! I did twice in a week and will be doing again soon.
    No Issue with the salt and yeast combi that I read from some of the comments.
    1st time I knead halfway and give up as it was too sticky to work with and I don't have a proper counter top to use, threw it in my kitchenaid mixer to continue the work. Works great too.
    2nd try, I use the mixer throughout.
    Really soft and nice.

    UPDATE: I made this again for the first time in years and it's still really good. And I didn't have or use milk powder and just replaced the water with milk instead and it still came out great! Still definitely need some extra flour for kneading and kneading took more than 15 minutes to get to a more smooth texture, but it's still a good recipe for soft, layer-y bread rolls. I may try making it a loaf instead of rolls next time. 💚
    TIPS: kneading will probably take more than 15min to get smooth after youve incorporated the butter, let the dough rest for a minute or two if it gets hard to knead or feels stiff - it will relax, and you can use the side of your spatula to scrape up and gather the dough if you dont have a scraper like shown in the video... Also if youre using regular flour you may need 2-3 tablespoons extra flour to get it less sticky while you are starting to knead. Hope this helps.

    So this is my honest feedback. I made this twice. The 1st time the dough did not proof well even after 3 hours and the yeast was good so was the weather. I still assumed it was my mistake and repeated the recipe with lil extra yeast. It proofed only a little bit, I then still waited for few more hours. Then when it looked decent enough to bake , I baked it. It came out just mediocre.Not very soft and all. I won't be following this recipe again because I feel it doesn't seem to work for me. How long do you mixed it using the kitchen-aide machine ? Why do you need to keep a warm towel around the bowl?

    • @stephaniekerr
      @stephaniekerr Рік тому

      @@anhvo3929 use your dough hook and mix until the dough pulls away from the sides of the bowl, about 7 minutes on medium speed. You want the dough to have a smooth texture. Use a warm wet towel around the bowl to retain the heat, so the yeast stays active. The dough naturally stays warm with the heat from your hands when kneading the dough. Using a warm towel around the bowl while the dough hook does all the work. Gives you the same results as hand kneading. After your desired consistency, work the dough into a ball on a floured surface for about three minutes and continue the recipe as follows.

    • @anhvo3929
      @anhvo3929 Рік тому

      @@stephaniekerr thank you so much for your instructions and explanation. The rolls looks so delicious and the recipe seem to be easy. The only problem for me is kneading the dough for that long period of time since my hands are quite weak now. I was so tempted to make it using my kitchen- aid standing mixer but I was afraid that it would not come out the same. Again, thank you so for your response. I am going to make it later today or tomorrow.

    many of you asking what is the difference between flours and how can you replace it.
    It generally works like this
    protein content per gram :(vary by manufacturer)
    all-purpose flour/plain flour 9-11%
    cake flour 8-9%
    bread flour 12-16%
    self-raising flour 8-9% with salt and baking powder added
    If you can't find you can make your own:
    all-purpose flour-2tbsp flour+2tbsp cornstarch per cup=cake flour
    all-purpose flour+1tsp vital wheat gluten per cup=bread flour
    cake flour+1 1/4 tsp baking powder+pinch of salt per cup=self raising flour

      Food At Home hi, you mentioned vital wheat gluten is it whole wheat flour? Or finest whole wheat flour I'm a little confuse as I cannot find bread flour here and I'll like to give this a try. Thanks

    • @CookingADream
      @CookingADream  7 років тому +1

      It's not whole wheat flour, whole wheat flour is not elastic thus not good for yeast bread.bread flour also called strong flour.the more strong and elastic the flour is you know the more gluten it has and good for bread.choose a flour you can get that very difficult to roll out after kneading.check the protein content, you can find on the packet in the nutrition information section.it should be minimum 12% I prefer 13.5% or above.
