    7-8 catfish steak
    2 Tbsps minced garlic
    3 shallots, thinly sliced
    1 canned Coco soda(Coco Rico)
    1/2 cup hot water
    3 Tbsps fish sauce
    1 Tbsp sweet soy sweet ABC Original (Kecap Manis) (for extra brown color)
    2 Tbsps sugar
    2 tsps black pepper
    2 Thai chili
    1 tbsp vegetables oil

    Finally a recipe that is easy. Question? Can you cook with a clay pot on an electric stove? I see that you are cooking on a glass electric, I have coils. Will my type of stove crack the clay pot? Or should this only be used in the oven?

    Oh Mai,
    You've done it again! Hot pot catfish is one of my favorites. I don't know if I've tried the coconut soda before, but I will.
    Wish I'd had this recipe back in March when I was in a charity catfish tournament. Our team came in third place with 309# of catfish for the weekend. Fresh out of the river catfish would have been delicious in this recipe!!

      le tran Rico Coco is a carbonated coconut flavored soda. I like using this in many of my recipes because the carbonation tenderize meat/fish. The soda is sweet so you don't need to add sugar and the sweet coconut flavor add more depth to food. It's an ingredient my mom often uses and I have come to do the same. :)

      Ashley Ha It depends on your stove temperature but it should be no more than 10mins. I normally let the liquid reduce to a thick sauce and once the color turns to a nice dark amber color that's when I know it's ready.
