- Ingredients (2 servings)
1½ cup rice
2 eggs
Cucumber & tomato slices
2 pork chops
1 tbsp minced lemongrass
1 tbsp minced garlic (~3 cloves)
1 chopped spring onion
1 tbsp fish sauce
1 tbsp light soya sauce (Maggi's recommended)
½ tbsp dark soya sauce (optional)
1 tbsp sugar (or honey)
½ tsp pepper
2 tbsp vegetable oil
**NOTE: The method shown in this video is NOT how real broken rice is produced. Because I couldn't find REAL broken rice (gạo tấm) overseas, I had to "fake" it that way.
It is not the same, but that's what you can do to reproduce the texture of broken rice. ^^

I'm new to cooking and I'm Vietnamese. My parents are always at work so I wanted to learn how to cook Viet food for my brother and me while they're away. Thank you for providing this video!!
Hope you enjoy
How did it go?
I love Helen's trick to make Broken rice. If u don't like or agree with her then stop watching her videos. I'm a home cook myself and most of Helen's recipes i found very helpful and interesting. Sorry about the bad grammar.
Hi everyone, if you can't watch this video, check out my new video for this same dish Broken Rice with Grilled Pork Chop and Meatloaf - Com Tam Suon Cha Trung
Hello Helen, I am of Vietnamese background and made this recipe and it was amazing! It was very authentic and reminded me of how it would taste at a restaurant. Thank you for sharing your recipes and i hope to cook many more! :)
Vietnamese cuisine is amazing. Asian food is the best and healthiest. Love your channel.
@Lina Lay I think the soy sauce used in that video is Black Soy Sauce, which is thicker and a litttle bit sweeter than the normal soy sauce. U can find it in any asian grocery.
The side dipping sauce is called (Nuoc cham) it gives the rice and pork a sweet flavor my husband is in love with that sauce he orders extra sauce at every Vietnamese restaurant we go to
Thanks a lot for watching my videos! I treasure your love for Vietnamese food :)
Your old videos style are so much more exotic please make more of these!!
If you read the Vietnamese subtitle in the video, I did mention that because I couldn't buy REAL broken rice (gạo tấm) overseas, I had to "fake" it.
It is not the same, I KNOW, but that's what you can do to reproduce the texture if you can't buy gạo tấm, got it?
Helen, you always inspire me. I can smell this dish and I've eaten it many times. It's my favorite.
It's so good! Hope you'll try out my recipe :)
I tried one of your recipe gladly they liked it thank you so much t
Vietnamese food is really delicious specially around 11 p.m
Thanks you for everything and now in my stomach playing pain 😄😄
In this recipe I used
1 tbsp light soya sauce
½ tbsp dark soya sauce
Soya sauce = soy sauce, same thing!
I love all your recipes, my fiancee who is Vietnamese love I can cook many of her favorite foods
2 pork chops, 1 tbsp minced lemongrass,
1 tbsp minced garlic (~3 cloves), 1 chopped spring onion, 1 tbsp fish sauce, 1 tbsp light soya sauce, 1tbsp dark soya sauce, 1 tbsp sugar (or honey), ½ tsp pepper, 2 tbsp vegetable oil
This looks so much tastier than the one I ordered last night.
what kind of soy sauce did you use? it look a lot thicker than the normal soy sauce...
I had the same problem, but I did find already minced lemongrass in a squeeze tube. You can find it in most grocery stores by fresh herbs. It worked. tasted great
I tried your marinade today Helen and it turned out fabulous!! I pan fried it instead. Thanks for your recipe.
This is my favourite Vietnamese meal when I go to the Vietnamese restaurant
Hi Helen! The pork chop looks really tasty! thank you for sharing.
Thanks for that history lesson. I had no idea that was the history of broken rice. Ironic how things change
Glad you enjoyed it!

I really like Vietnam pork chops but I can't find original recipes
Thanks Helen for sharing the recipe. I have made it for the family and they really enjoyed it.
What is that clear sauce with yellow stuff that you put on top of the rice?
Excellent. I made this and it came out insanely good. thank you for posting
I like the gentle music in this video :)
Thanks Helen! Your recipe look so nice.
Thank you I marinaded the pork chops and yum .
Wonderful!
Yes, it tastes a lot better with lemongrass, but It's still not too bad without :)
Hello helen greeting from indonesia 🙏 i like this vidio and watch the end sty conekted🥰
I had this dish in a Chinese-Vietnamese restaurant, it was divine :)
If I purchased packaged broken rice in the shop, how would you cook it then? What's the ratio of rice to water for two people? Thank you.
Great tip on how to make broken rice!
This recipe looks very easy to learn, thanks
I like this girl's soothing voice.
Hi Helen my fiancé is Vietnamese and I'm not, I appreciate your video because I'm learning how to cook Vietnamese by watching it.. Please do not stop posting more I love to learn more. And thank you. :)
Thank you Helen will try this marinade today.
I love your videos! This looks so good and you're such a pleasure to watch and listen to!
How can i make the sauce in the video? The sauce for dipping. Greatly appreciate if anyone can tell me🙏🏻🙏🏻 i wanna prepare this for my bf as he misses vietnam food so much ❤️🥰
Ur voice is so sweet and ur music back ground is beautiful. Ur recipe is easy to follow and sooooo good. Thk u ❤ will make this again and again
I love you Helen! Best recipe ever goatedddddd
You have an amazing voice. I am going to make this tomorrow.
thank u, tried the recipes, they re great ❤
My pleasure 😊
yes you can
You are so right! You're the second person that I've come across with that know the difference between real broken rice and whole grain rice. Real broken rice has a different texture and taste. You cannot turn whole grain rice into artificial broken rice. It won't taste the same. But anyways Helene is a great cook.
The cheaper priced rice has large amounts of broken rice grains in the bag
Nice song and video 😊
Thanks for your video. What is the sauce you added on top of the rice? Light fish sauce? What is that? Thanks again
Omgg I just made this, DELICIOUS
Hi. I really like the pork chop with the pork skin rice. can show how to make that pork skin?
Helen dễ thương quá!
Is that regular soy sauce you are using or dark soy sauce? Your soy sauce seems thicker almost like oyster sauce
@Ravenete Thank you for your support :)
Thanks

This is my favorite meal I friken love it💝💝💝💝💝💝

What kind of rice should I buy is it jasmine rice?
if i cant find lemon grass, what do you recommend that i use as a substitute?
Yummy! And I like the song for this video. :)
what is soya sauce? is it just regular soy sauce?
I'm gonna make this for my boyfriend's mom! thank you :)
I want to make that pork chop, looks really nice :)
Helen, I will be in Hanoi this month for 1 week..im gonna try to find this in a restaurant, looks delicious...thank you
I know it's 9 years too late but I hope you by now learnt that this dish is southern dish. You find best ones in Saigon. It has cantonese, and Thai influence.
thank you!!
Did anyone else start singing 🎶I’m a big, big girl in a big, big world🎶 also?! Lol sigh, memories
Hi, do you actually grill the meat in the oven or do you put it in fan oven?
Great!
@ 8:43 Helen's very first attempt to make a fried egg. hehe
Looks very yummy anyways. I will try it some time.
is your oyster sauce salty? It's ok to use oyster sauce but you may need to adjust the saltiness a little
You are very welcome! I wish i can eat your food, you make everything perfect! Keep up the great work cause you are the best!!
I made this recipe and enjoyed it :)
You can try the same method as in the video (soak in water for 1 hour and add water as high as rice level) of course you dont have to rub as yours are already broken :D
Will Black Soy Sauce also work? Or is it best to use Dark? The dark I have doesn't look as thick as yours.
Hey @thaijohnston1840! Thanks for your question. Black soy sauce can be a good alternative if you don't have dark soy sauce on hand. It may have a slightly different flavor profile, but it can still add depth and color to your dish. Just adjust the quantity according to your taste preferences. Give it a try and let me know how it turns out for you! Enjoy your grilled pork chop with broken rice. 😊🍽️
Your background music is very nice with the meal.
What was the sauce you added on the rice? And how do you make it???
Look yummy
Thank you 😋
For some reason, I want to open a Vietnamese restaurant in US and ask you to be a master chef.
I put the link at 08:00. Pls click on the sauce to see the video
i am not a vietanmese. but this recipe looks authentic and i wanna try. at the end of the video, there is a pairing sauce. may i ask how to prepare it please? thank you
Hope you enjoy
Thanks for this recipe , how do you make the sauce?
@itsemmiex no idea what you are talking about hehe
Do you mean Banh Cuon (Steamed rice rolls with minced pork and woodear mushroom filling)?
what's the difference between this marinade and the one used on the Ga Roti recipe?
this uses lemongrass and Ga Roti use five-spice as the aromatic element
Soundtrack: "Big Big World" Flute
