Vietnamese grilled pork chop with broken rice - Com tam suon nuong | Helen's Recipes

  • Ingredients (2 servings)
    1½ cup rice
    2 eggs
    Cucumber & tomato slices
    2 pork chops
    1 tbsp minced lemongrass
    1 tbsp minced garlic (~3 cloves)
    1 chopped spring onion
    1 tbsp fish sauce
    1 tbsp light soya sauce (Maggi's recommended)
    ½ tbsp dark soya sauce (optional)
    1 tbsp sugar (or honey)
    ½ tsp pepper
    2 tbsp vegetable oil
    **NOTE: The method shown in this video is NOT how real broken rice is produced. Because I couldn't find REAL broken rice (gạo tấm) overseas, I had to "fake" it that way.
    It is not the same, but that's what you can do to reproduce the texture of broken rice. ^^

    I love Helen's trick to make Broken rice. If u don't like or agree with her then stop watching her videos. I'm a home cook myself and most of Helen's recipes i found very helpful and interesting. Sorry about the bad grammar.

    @Lina Lay I think the soy sauce used in that video is Black Soy Sauce, which is thicker and a litttle bit sweeter than the normal soy sauce. U can find it in any asian grocery.

    The side dipping sauce is called (Nuoc cham) it gives the rice and pork a sweet flavor my husband is in love with that sauce he orders extra sauce at every Vietnamese restaurant we go to

    If you read the Vietnamese subtitle in the video, I did mention that because I couldn't buy REAL broken rice (gạo tấm) overseas, I had to "fake" it.
    It is not the same, I KNOW, but that's what you can do to reproduce the texture if you can't buy gạo tấm, got it?

    In this recipe I used
    1 tbsp light soya sauce
    ½ tbsp dark soya sauce
    Soya sauce = soy sauce, same thing!

    I had the same problem, but I did find already minced lemongrass in a squeeze tube. You can find it in most grocery stores by fresh herbs. It worked. tasted great

    You are so right! You're the second person that I've come across with that know the difference between real broken rice and whole grain rice. Real broken rice has a different texture and taste. You cannot turn whole grain rice into artificial broken rice. It won't taste the same. But anyways Helene is a great cook.

    Is that regular soy sauce you are using or dark soy sauce? Your soy sauce seems thicker almost like oyster sauce

      I know it's 9 years too late but I hope you by now learnt that this dish is southern dish. You find best ones in Saigon. It has cantonese, and Thai influence.

    is your oyster sauce salty? It's ok to use oyster sauce but you may need to adjust the saltiness a little

    You can try the same method as in the video (soak in water for 1 hour and add water as high as rice level) of course you dont have to rub as yours are already broken :D

    Will Black Soy Sauce also work? Or is it best to use Dark? The dark I have doesn't look as thick as yours.

It may have a slightly different flavor profile, but it can still add depth and color to your dish. Just adjust the quantity according to your taste preferences.
