      @@andis9076 Regular water will not work in the same way as lye water, but you may just use regular water. The mooncakes just won't turn so evenly golden, but it won't affect the taste. Also you can make a substitute for lye water by boiling 1/8 tsp of baking soda with 1/2 cup (120ml water) for about 5 minutes.
