Pineapple Mooncake Recipe (Mid-Autumn Festival Ceremonial Dessert)

Mid-Autumn Festival is coming soon (Sept. 10th, 2022). We celebrate it by making mooncakes. Pineapple paste is a classic fruit mooncake filling. I innovatively put some lemon zest because the pineapple flavor goes well with the citrus aroma. We used a lot of sugar, but the tartness perfectly balances the sweet taste. I think you gonna love this one.
INGREDIENTS
For the filling (25g each)
850 g (30 oz) of pineapple meat
125 g (4.4 oz / 10 tbsp) of sugar (Amazon Link - geni.us/granulated-sugar)
60 g (2.1 oz / 3 tbsp) of honey (Amazon Link - geni.us/unfiltered-honey)
22 grams (1.5 tbsp) of lemon juice
2 tbsp of lemon zest
For the wrapper (25g each)
235 g (8.3 oz) of cake four (Amazon Link - geni.us/cake-flour)
125 g (6.25 tbsp) of inverted syrup or honey (Amazon Link - geni.us/unfiltered-honey)
46 g (3.5 tbsp) of vegetable oil (Amazon Link - geni.us/vegetable-oil)
3 g (1/2 tsp) of salt
13 g (2.5 tsp) of Lye Water, optional (Amazon Link - geni.us/lye-water)

1 egg yolk

This is the best video on making mooncakes I’ve seen. The best tip was how to form the dough. I’ve been rolling it flat and then shaping around the filling. It often tears and is not even. And is so much thicker at the bottom. Your way is so much easier- thank you 🙏🏻.

You have turned me into an absolute mooncake addict, and these are undboutedly going to be a favourite. As much as I love the snowskins, I like the baked ones equally. I might try slipping some chopped dates into the pineapple filling!

Pro tip, lightly oil the measuring spoon before using it. The filling comes out very easily.

A #50 or #60 cookie scoop, sprayed with cooking spray will make short work of portioning the pineapple jam. Also, if you oil your hands to roll the jam and handle the dough, it will stick less.

Mandy, when doing huiyou, should the moon cakes cool down before going into the container, or do you put them in while still hot and straight from the oven?

LOL! The Asian market around where I live sells mooncakes. They have lots of flavors: red bean paste, lotus seeds, salted egg yolk, sesame, fruit, five nuts... Check the asian market around where you live. You may find some.

However, I would like to ask if it’s okay to adjust the sugar or the measurement have to be exactly the same in the recipe?
Hi, to be honest, mooncake contains a lot of sugar, which does help with consistency. You can reduce a little bit of sugar but don't reduce it too much, otherwise, the texture won't come out the same.
Hello, please how long can they stay in the refrigerator before eating them? Are you supposed to eat it fresh out of the refrigerator or let it sit so its no longer cold?
