Fun fact: the pan is a Disco ("deeskoh") the food cooked on it is discada - same distinction as Turkey Fryer vs. fried turkey. It doesn't help that some makers use the terms interchangeably (looking at you Southwest Disk) so the confusion is understandable.

I'll be trying out doing Kung Pao Chicken soon, and my son-in-law is going to share a great fried rice recipe that I'll test-drive on the disc, also! Then, later on---I'm going to incorporate some "New Mexican" standards that I've cooked in the past, and see how that goes. And....can't wait to take it to the mountains this summer, when we start camping again! BTW, your video was great and easy on the eyes and brain----gave me some good ideas to enhance (i.e., garlic before the tomatoes) the discada recipe I was going to work off of this afternoon!

We pull a small (20' overall) Jayco Hummingbird....but our 4Runner ran out of gas in high altitude driving here in the Rocky Mountain West---so Toyota Tundra is our current TV! The only kind I've used comes out of a tube and looks like the excrement of a poisoned dog (but, as Jeff said, was pretty good if it was mixed into something else). I did see some that looked like really spicy regular sausage; you could tell it had a lot more form to it. Next time I see that kind, I'll get some to try. By the way, I think the better-looking stuff was made by Johnsonville.

That looks really good, though I think I'd have to scale it down and use a big frying pan. I saw some chorizo a couple weeks ago that looked like regular sausage; it was made by Johnsonville. I should have bought some. I like the flavor, but I would love to trade off some of the grease for a little more meatiness.

I've seen blog posts where folks do it inside using a frying pan. I like this ground chorizzo quite a bit.

Loved the video the only thing I kept cringing at was when you were using the plastic utensil to stir the food other than that it looks great.
