DISCADA: How to Make a Discada Mexicana (Norteña / South Texas Style)

- A discada is a great way to put on one heck of a show for your friends and make some great food outdoors.

Think of the disco as the original outdoor fryer and griddle ALL in one. This is a very popular way to cook in Northern Mexico and South Texas and they usually have all the ingredients you will see me use today, and in addition sometimes use chorizo and weenies. I personally like smoked sausage in mine since this is my own personal South Texas style, but again, run what you brung and use what you love. Here are my ingredients:
4 Slice Thick Cut Bacon
1 lb Pork (Country Style Pork Ribs)
1 lb Fajitas (Skirt Steak)
1 Smoked Sausage Link
1/2 Ham Steak
1/2 White Onion
1 Scallion
1 Serrano Pepper
1 Jalapeño Pepper
1/2 of Red Bell Pepper
1/2 of Yellow Bell Pepper
1/2 of Green Bell Pepper
1 Roma Tomato
Fresh Cilantro
Lime Juice

I grew up in Philadelphia. We never had any Mexican food back in the old days in the northern states. It’s changed now though
We do it little different in chuco town, but it's just as good. He was missing the chorizo and weenies.

I need one of these. I made this recipe tonight and it was delicious. I just used a regular wok and had to do it in stages, though, by cooking everything separately and then bringing it together in the end. Turned out pretty good if I do say so myself.

Guys please don't use a wok for Discada. There are special pans for that lol idk why he used a wok
@@Oooyessbro I used a wok, because that's the biggest pan I had available to me. I wasn't going to buy a special discada just to try a recipe.
Bro this is my new favorite food channel. I moved to NY from San Diego about eight years ago and there is nothing authentic where I live, so the last two years I've just been taking matters into my own hands and trying to perfect the tastes that they don't have here. Love taking my disco camping, and it's so old and well seasoned like my cast iron pans. Breakfast and dinner are always cooked on it.

I remember back in the 80's in Mexicali, Mexico of course. The welders welding that middle part of the disco, then it was OMG. Love it.
I have a discada and it's great for preparing a good mix of foods for a large crowd. The two changes I can recommend to Arnie's project in this episode, which are to my personal taste, are (1) leave out the chorizo; I use only beef chorizo at times, mostly for breakfast, but even so, it overpowers the taste of the other meats. Chorizo is best for mixing with scrambled eggs at breakfast. Also, (2) cut up your pork and beef the night before, season with WOW, squeeze lime juice over them and store in separate gallon ziploc bags. Other than that, there's hardly any way to mess up discada cooking.
My coworkers used to do this but with just a large hunk of beef cut like fajitas, and with a full 3lbs tomato, 4 whole onions, and 1.5 lbs of jalapeños.
The meat was seared well, then set aside, and then add all of the slices of veggies.
Cook until the veg is almost done then add back the beef and cook until it's almost a Con Carne like gravy and meat.

Just made this recipe, it was great. So much flavor and better than most restaurant's I've been to.
I need to get one of these! I can use it with my cast aluminum chiminea which has a removable chimney. Really digging your channel because Latin American and Mexican cuisine, plus TX BBQ are two of my favorites - ¡Salud!

Si señor!! That is a great dish, I make mine with chorizo and only add jalapeño rajas and white onion. Also, I cook over a mesquite log fire. Gotta try it with the WOW though.

My dad and I used to eat our food using what you can a Mexican fork. Taking a tortilla piece curl it into a scoop and grabbing up a big chunk of whatever was on the plate, then splashing some salsa on it, followed by a Corona.
TexMex food is the best food in Texas by far ❤❤❤

I don't know if You do this, or not, but I have got into the habit of using tiny Gold potatoes, pop them in the
microwave for 4 minutes and then chop them up, skins and all !! That avoids having to wait for the potato to
cook properly, just a minute or two, in the pan and they're good to go !!
