Ingredients:
1 cup (230g) Butter, softened
2/3 cup (85g) powdered sugar
1 teaspoon Vanilla extract
1/4 teaspoon Salt
1 Egg yolk
2¼ cups (280g) Flour
Jam of your choice
Directions:
1. Line two baking sheets with parchment paper and set aside. Preheat oven to 170°C (340°F).
2. In a large bowl cream butter and powder sugar until smooth and creamy. Add egg yolk, vanilla extract and mix until combined. Add flour, salt and stir until incorporated and dough is formed.
3. Using a one-tablespoon cookie scoop or measuring tablespoon take 1 tablespoon of dough and roll into balls.
4. Then place the balls on prepared baking sheets. Slightly flatten the balls and then make an indentation with your thumb or with a back of a spoon into each ball. At this stage, if dough is too soft, refrigerate for 30 minutes. Then, fill each with cookie the jam.
5. Bake for 12-15 minutes, the cookies should still be pale, but slightly golden at the bottom.
6. Dust with powdered sugar (optional) and allow to cool on a wire rack.

Thank you! This was such an easy recipe. I made 2 batches before I realized what I was doing! My wife and I love cooking/baking, which is crazy when I tell my friends that I LOVE to cook/bake...a guy! ME!
Anyway, we had some jalapeno jam...hooooo!! That is gooooooood!!! Then the rest were cherry and strawberry/rhubarb. Great for giving out at Christmas time.

Does anyone know how the egg yolk changes the end result? I made butter cookies following their other recipe with just butter, sugar and flour, and they came out pretty nice, so I was wondering what omitting the yolk does to the cookie.

When we bake the jam, doesn’t it become a little dry or something? Would it be different if I added the jam after the cookies got baked? Please let me know
The jam does thicken a little but is still “jammy”. If you fill after baking make sure you re-thumbprint the cookie as it bakes so they don’t puff up in the center, and the jam will just be a looser consistency when eating since it wasn’t baked. I DO recommend the baked version, I think it’s texturally important for the jam to go through the reduction process in the oven- even though it’s minimal it makes a difference. Hope that helps :)

Made these with Bob's redmill 1to1 gluten free flour, they turned out really crumbly, I'd suggest more butter if you go the gluten free route

Pop them in the fridge for 15 minutes after you shape them

Use the 1/8 measuring cup, it's equal to 2 tablespoon or 30 milligramme

I made this and the cookies tasted good but the jam was burned so my tip to you guys is PLEASE DO NOT ADD JAM TO THE COOKIES BEFORE, YOU CAN ADD AFTER THE COOKIES ARE BAKED! so because jam burned the cookies were ruined and tasted really bad, never gonna make these again. Peace ✌

Hi. So I saw another video where they added the jam after the cookies were just over half way done with baking. I think that should help with the jam being burnt

@@sellusions6994 u could say that but then I made the first batch without refrigerating the dough it came out good then I let the dough rest in the refrigerator for a while,the outcome was nice as well. We could say that either way the outcome might be the same so it's up to u whether or not u want to refrigerate the dough
