Jam Drop Butter Cookies Eggless | Jam Biscuits | Episode 56

- Hope you enjoy these delicious little drops of cookie heaven :)
Ingredients:
Butter - 1/2 cup
Sugar - 1/3 cup or lesser (if you prefer)
Flour - 1 cup + 2 tablespoons
Vanilla extract - 2.5 teaspoons
Any fruit jam - 4 teaspoons
Detailed steps:
1. Pre-heat oven to 350 F or 180 C and have a greased baking tray ready
2. Add butter and sugar in a bowl and beat well until whipped and pale yellow in color
3. Add vanilla extract and mix well
4. Add flour and gently mix the dough until it comes together. Do not knead or over mix
5. Form small cookies with dough, and add a 1/4 tsp of jam to each cookie
6. Bake cookies in preheated over for 18-20 minutes or until bottom is golden brown and top is still white
7. Once baked, keep cookies out for cooling down for 10-15 mins.

Keep it in the oven only for about 22 mins , after that put them outside . They’ll cool and harden themselves.

I made these today they were really good but I suggest to add a little more sugar.
Deepika, after I’d finished making the cookies,my son asked suspiciously what I had made in the oven and I told him what I’d made. He went over and took a couple, comeback, took a whole lot more and no jokes, at the end of the evening, there are just four left, so you can see what a huge hit these have been with my husband and son, the latter being the prime consumer, with so few left over for me and my MIL!

Did you use unsalted butter yellow colour ?? I get only white colour unsalted butter close to my house. Can I use that or amul butter?
Deepika, I’ll be making the cookies tomorrow with unsalted butter, I did wait for a reply from you, but it wasn’t forthcoming and then I saw what one person had posted about using ghee, so I’m going to go ahead with the unsalted butter 🧈 and hope that it turns out just as well as it did the last time, keeping in mind that I can’t load the tray with the cookies, I don’t want to repeat that mistake once more

The cookies are crisp outside and soft inside just from the butter and yogurt :) so didn’t use any of that..

Hi if you mean on the stove top.. sure. You can add lot/pile of salt to a pan/thick bottom kadai, close it and heat it for 10-15 mins.. keep a baking pan/ plate greased with butter on a stand on top of
The sand. Close and cook for 10-15 mins in medium flame.. I think that should work (my mom does that since she doesn’t have oven).. or you can refer to any recipes where they do this method as well!
I tried these ...they came out yumm... except for the sugar never dissolve even after mixing whisking mixing abs whisking ...the butter remained white too :😞 maybe powdered sugar?!
hii - yes powdered sugar would work better in that case! thanks for the feedback. i always use normal sugar, probably because i am lazy to make it into powdered sugar :) and mostly it just becomes integrated once mixed and baked..also because the sugar i use is may be very granular. but powdered sugar should work :)
i saw one comment on pinterest saying that the cookie taste bland and the only flavour that is in there is the jam itself. so is it true?

I have not tried, it may not be as soft as butter., you can try ghee

You were right, I did go overboard with the cookies As in I put too many of them in one plate , not expecting them to expand, which unfortunately they did. The thing is that the amount of sugar I added was a little too less and I’ll have to make some changes the next time around, but I loved them and so did my mother in law and brother in law, so I’m going ahead and clicking the like button and subscribing to your channel, thank you for for you your recipe and looking forward to seeing more of them

hii - i used US cup measurements, so will be a little different in gms for dry/ wet ingredients. I would suggest, use one common cup for measuring all ingredients and use the proportions i mentioned..
Did anyone else have issues when mixing their butter and sugar ( i hand whipped mine for 5 min like she said but it never got very fluffy and white like hers, mostly yellow) 😩

hi! sorry to hear that.. try reducing the quantity of the jam/ make sure the jam is in fridge before you add on top... so it wont melt too much in the oven.
Can we use normal desi ghee rather than above butter ..
You can use, but whipping the butter and sugar will make the cookies soft in the inside..so make sure you whip the ghee well with sugar...
Yes i did whipp until the texture becomes creamy.. and it turns out to be best cookies i ever had...

Overall recipe is good but biscuits are very fragile like they break
do not hold shape crumbly
Thanks for the feedback..may be you can reduce the butter a bit. Sometimes depends on the consistency of the cookie dough.
