Difficult recipe, but please, not difficult equipment to get. It's awfull when you can't even try because you have to get an space-grade terminator super vacuum food processor or any very expensive difficult to find stuff

In Germany we call these Engelsaugen which translates to "Angel's Eyes" which I think is cute until you realize the most popular filling is raspberry jam so according to german cookies Angels have glowing red eyes

I'm not even Swedish, and I'm having kittens over it. If the jam is not baked w/ the cookies, it won't thicken. That's the best paaaaaart!!!!
Balkan peninsula here, also crying over the uncooked jam. I love it when it's chewy. Our traditional plum jam is actually baked and after it's chilled you need an axe to cut into it xD

I made them and they were really good. I used speculaas (thats a sort of cookie for the hollidays in belgium and the netherlands) instead of demerara sugar and it turned out great. I will definitely make it more often.

I like to make a tarte dough to my thumbprint cookies:
200 gr Flour
80 gr Icing sugar or brown sugar mixed to a powder
Pinch of sea salt
120 gr room tempered butter
40 gr egg yellow

I love all your videos and watch them regularly, but I don't think I'm alone in wanting another channel just dedicated to some b-roll footage of foods. You can only learn so much from one video, and as such there's only so much rewatchability, but b-roll footage is so heavenly and so rewatchable.
Hallongrottor sounded ok! Looks jummie, but a traditional hallongrotta is baked with the raspberry jam, so it become slightly dehydrated at the top. This makes them easier to keep in a jar and they become a bit chewy. Sometimes we put them in little baking cups before we make the thumbprint. My grandmother used to bake these a lot.
