  • Indian chef Maunika Gowardhan is back with her twist on a classic lentil curry. Infused with warm spices and tangy tamarind, this creamy dhal recipe is an all round winner.

      Maybe you could get the subtitles fixed? 'Mascara' sugar sounds just wrong and far less tasty than muscovado sugar. ;)

    I love this sweet dhal poured on a plate of plain basmati rice, with red onions and tomato salad, and some poppadum on the side. delicious!

    Definitely would like to see more of Maunika. I love cooking Indian food from scratch, and have previously mostly used recipes by Anjum Anand. This looks delicious so I will definitely be giving it a try tonight.

    This looks like a version of dal from Western or Southern parts of India. But the recipe is really nice. This made me crave for the north Indian dal tadka :)

    Yes! This is the dish I will cook for my wife tonight! I don't have tamarind paste, but fresh kokum from Goa. I'll try this as a substitue. I absolutely love the texture of the lentil you show in your video. Beautiful! Keep on don posting such great recepies. Fan of your food blog as well!

    Dear Maunica, thank you for this recipie which is as great as it is simple to make! Last friday I had to prepare a meal for about 25 persons in my small kitchen and I didn't want to spend all day there... so I chose to make this nice spicy dhal. Everybody loved it and no big deal to prepare it, even for so many guests!

    I was a bit worried to have a sparse dish like lentils with no coriander seed, no onion or tomato, no dairy of any kind, nor garlic or ginger. Not what I'm used to with Indian cooking. I fought off the urge to add any of those, and stuck to the recipe. My restraint was rewarded. A truly unique taste.
    I did add quite a bit more salt than the recipe called for. Probably a good 1/4 tsp or so. Have it with chapati - it makes the dish. I also put the cloves and cinnamon in a spice bag.

    I tried this recipe for a visit from my dad, who never eats indian food and he loved it!!! I did add a nice bit of garlic which worked very well, but in general I love this recipe, because it was so super easy! I didn't know dhal would be so easy to make. Thank you!

      For the amount of lentils the turmeric is great also I use Kashmiri chilli powder which has a mild heat:)

      you don't need them all. get garam masala, tumeric, cumin, and paprika. that will suffice. the rest you should have like salt+pepper...

    OMG it was delicious! I use saffron powder when the dhal is boiling as well. I used mango chutney for the sourish taste, it was awesome with roti!

    I have tried it with booth pigeon pea and split gram(chana dal) and the later tastes better. Also i used mustard oil for the tempering. it increased the flavour quite a notches.

    Hi Maunika, the dal came out perfect!
    The tamarindi paste changed a bit the color of the dal to a more darker then vibrant yellow but the taste is great!!

    what is Maunika's background in indian cuisine?
    I've seen many video's on youtube of indian cuisine, and I must say, a lot of them are WRONG, and are either not authentic, or just completely wrong, but Maunika's is on point, and authentic.

    perfect video, love dhal so much! It is a staple at my house. I'm from Bahrain so we have alot of different cultures melded together over many years. Indian being one of them but we do have a slight twist to the one shown. Since dhal or adas/ shoorbet adas in arabic is so easy and simple to cook it is very maliable in terms of flavour.
    In our family adas consists of;
    Ginger Sliced
    Potatoes Sliced
    Onions Finely chopped
    Garlic Finely chopped
    Coriander Finely chopped
    Tomatoes Finely chopped
    Lemon juiced
    Red lentils Washed
    Spices: coriander and tumeric
    Finally served with lemon wedge and rice, typically its seen as a side dish perhaps coupled with grilled grouper or hammour.

    It was soo easy and it was super easy. I thought for a moment that my spices were too burnt for the concentrated smell, but dont worry just lower the heat.

      We dont add butter in Indian recipes generally except on naaan or chapatis but thats wrong practice also if you love too much salt then u can add(personal taste)..we love our ghee(clarified butter)

    I saw you did not wash the lentils. Where they already clean or there was no need for a wash?
