The absolute most important part is to put the lid straight back on as soon as you tip the tarka into the daal. That’s how they get that lovely garlic smokey flavour into the dish. He mentions it in his daal bhuna video. It’s taken me years to figure that out!!! Thanks so much.
Just made this. Got the Indian bay leaves and dried Kashmiri chillis on Amazon. Did it all just right. DELICIOUS!! Couldn’t stop eating it till it was all gone. And my house smells awesome. Am going to make it again on Sunday when my daughter and her mate are coming over for dinner. Looking forward to trying out more recipes from this channel. Thats great! I would highly recommend you check if you have a local asian store too. That way you won't need to buy off of amazon if its more convenient.
We feed our young, elderly and sick dhall. Of course though we all eat dhall. Its incredibly nourishing and can provide a full meal when eaten with rice. Its one of the comfort foods of our culinary culture. Although there are a million dhall recipes, every one of them mouth watering good 😊
Bro, i am glad your girlfriend liked it. But, what ever you ate is not daal. Another thing, and this is not a judgement at all, just saying coz we all can't know everything from all cultures, its daal not dhal.
@@abhinav0686 What a strange comment. Anyways as daal/dhal is written in other alphabetic systems than the many many many alphabetic systems of the world, then it can be spelt in numerous ways in other alphabet systems. So it can be dhal to some and daal to others who use the Latin/Roman alphabet system.
@@ts4686 you are correct, it is written in a different 'alphabetic system'. That is why I, who can speak and write both Hindi and English would have a better grasp of how it can be accurately phonetically written in a roman script. Because the only thing you can do is to make sound like it does in the original language. I think i would be a better judge of that. Of course, you are free to pronounce it wrong. So it can be dhal to only those who don't want to pronounce it correctly. Of course, you are free to not want to have to do it. Also, English is widely spoken in India. People from many different states can't really speak each others language. We use english to bridge that gap. That is is why more or less all menus in urban and semi urban india are printed in Roman script. Dal or daal has been spelt out in roman script on thousands and thousands of menus in restaurants across India. The correct spelling has been established. But your boy here does not know anything about a 'dhal'. Not how it's pronounced and not how it's made. For that mater if he was even 50 % correct in how to make it i would have appreciated his effort and not bothered with the pronunciation. But his recipe is all wrong, with all the right ingredients, but still wrong from the get go. may be the tempering was ok. Call it what ever you like but please go find someone who has lived in india till they are in their mid twenties and have the daal they make. You will realise what you really are missing out if you though the bowl of mish-mash you ate was good. I also find it highly irresponsible of a professional like him to dish out what ever BS he thinks is daal. He is misleading his followers. I wonder if he does this with other cuisines that he is not familiar with. Rest is up to you man. Cheers
@@abhinav0686 So many assumptions. Anyways m not sure who youre so upset with about their DAAL recipe. You do know you have commented on a person's comment who said that they made it for their gf, and not directly to the person who posted the video, and nowhere does it say how they made it. There is a massive Indian diaspora around the world, and as many recipes as there are for various dhal recipes in India, as are there as many changed ones through the various Indian diasporic people around the world, depending on where in the world Indian people were enslaved and moved around by europeans. Indian people took a horrific violent situation and turned it into some of the most diverse global, yet distinctly Indian food by developing their recipes through need. In some of these countries daal has been spelt as dhal, because a 'd' sound in English is not the same 'd' sound in an Indian language, hence the 'h' added to soften the 'd'. The europeans would not allow Indian people in many countries around the world to speak their mother tongues, hence through spelling one had to be reminded of how to pronounce words. These spellings do not follow any grammatical rules. Its purely colloquial vernacular.
After visitng India few weeks ago and never eating Indian food I learnt to love Dhal, a first ever Indian Cooking recipe for me and this was fab and so tasty.
Chef, I cooked this when you put the video out and I’ve cooked it so many times since. It’s a winner ! You’re a skilled educator with an obvious passion and respect in what you do.
God Bless you for all this gastromonical delight. You were born to do this! The fact you have made it so simple and easy to follow makes you one of the best I have seen so far.
Two YT channels changed my life. One thought me to hem jeans and the other is yours. I love your recipes, I have your dishes several times a month, the fridge is always filled with base gravy, and I don't do take aways anymore because no one comes close to your curries. This dal is also excellent. Thanks for all the effort you're putting into your channel and teaching us how to cook, mate!
Man...you are amazing! I would have never boiled ginger, garlic without frying on oil (to get rid of raw smell) but you did (in your first process) it and taught me a new technique. Thank you!
OMG. Just made it. This dish is out of this world. I have been looking for this recipe over ten years from my favourite Indian restaurant that closed on me (sad story). The only thing different that I did, is that I replace Bay leaves(did not have) with Kaffir leaves.
I cook for a local business who has different delegates , Indians last week who asked for this specific dish , looked at the YT videos but this was the easiest to follow ( and your local 😂) really easy and the customer was amazed , cheers
This dish is sooooo good, Chef is a very straightforward teacher, he obviously loves his subject and is passionate about imparting his knowledge. A lovely simple but delicious dish, and I so envy that beautiful kitchen everything too hand and spotlessly clean. Made this old lady very happy.
This is just the right consistency like you did, let it reduce and thicken. That's how I make it. I have had this in a few restaurants and sometimes it's OK, but sometimes like thin yellow water with a few bits in it. Its easy to mess this dish up if you make it too thin and don't add enough flavour.
It doesn't matter how many time"s I watch this and any of your videos to help me cook, I LOVE IT! Thank you, I am an Englishman who now lives in the USA, this is the only place I can get the recipes and guidance to get/cook real BIR food! Thank you so much!!!!

Since then it's always been my comfort food - think I could live on just that and some paratha forever. Will have a go of this version, looks great
Yes, please, more! I appreciate your mis en place and showing what the amounts look like as well as giving the measurements. Wow, you're the man my friend!! I've just followed your brilliant instructions on how to make this dish and it turned out far better than I thought it would.
All I can say is a huge big thank you for your kind videos you share for us, I'm sure I speak on behalf of loads of people to say how grateful we are for your time. All the best. 👏👏👏😊
Latif, this was so nice to watch and learn. I have had this in restaurants before but never knew that it was done in two stages. My compliments to you on how clear and simple your instructions were, as you made it very easy to follow. Compliments also on how shiny and clean everything in the kitchen is.
Love your English accent!
Thanks for making this.
Just eating this now. Best dal I've ever eaten. Amazing. Thankyou
Inspirational! I always thought I could cook a TD but this easy to follow recipe was amazing. A dish worthy of anyone’s last meal, unless you have an allergy to lentils👍
Your comment hurt my brain
Great dal recipe easy and good flavor thanks for sharing !
I love dal, first learnt how to make it years ago when I was a vegetarian and sick of eating cheese and pasta. Had no idea how to cook before then, was the start of a long journey.
Since then it's always been my comfort food - think I could live on just that and some paratha forever.
Will have a go of this version, looks great
Yes, please, more! I appreciate your mis en place and showing what the amounts look like as well as giving the measurements. I've been cooking Indian-style vegan recipes for a few years and love these flavor profiles. However, I always left out the bay leaf, because I don't like bay. Today, I learned from you that it is a different type of bay! This is something I love about cooking - always something new to learn!
I am starting a new job,as a cook at a nursing home and there are many Asians who live there I would love to do them proud and cook good tasty food.I live in Birmingham Uk,my family are irish lol so a pot of coddle isn’t cutting it 😂
Just made this for the son in law and his partner and it was absolutely wonderful, as are all the dishes I've cooked from Latif's. Thanks
Nice! Hope to see more vegetarian recipes in future! :)
It's has ghee (animal product)
@@cyrilducklesworth3923 He said vegetarian, not vegan so ghee is fine here.
Great channel. Thanks so much for sharing these recipes and techniques to make great Indian food.
Thanks Latif, keep them coming.

Connor Murray bless you
I absolutely loved it! Very satisfying and tasty.
I'm trying more vegetarian recipes nowadays and this looks gorgious . I will try this coming week. Thanks for teaching us.
My first time making a curry, came out fantastic. Has given me the confidence to do more. This was such an easy recipe and result was not mediocre.
I have never used red dal before, usually we use yellow. But going to try to transition to tarka style : ) Nice and fatty
Thank you, mate. I had always wondered why my attempts at tarka daal were so underwhelming. This video explains everything so clearly. Hope you and the family are safe and healthy.
