This is my chicken soup when I'm feeling under the weather, my staple when I don't know what else to cook, my cuddle blanket when I'm feeling sorry for myself and my tonic when I've indulged a little too much the night before. It's a poor man's main dish and a king's side dish - it's the simple humble masoor di dhal.
It forms a huge part of so many Indian peoples diets because it's cheap and is a great source of protein for the vast number of vegetarians. As children, we didn't know the names of all the different lentils so we would call this yellow dhal (even though it's made with red lentils) and that's what my children call it too.
Cooked with whole cumin seeds in a tomato based masala finished with crispy onions and fresh coriander.
Ingredients
Lentils
200g red lentils, washed
900ml water (approx.)
1 tsp of salt
Masala
1 tbsp ghee or vegetable oil
1 tsp of cumin seeds
1 bay leaf
1 small onion, chopped
1 garlic clove, chopped
2 tomatoes, finely chopped
1 tsp ginger, grated
1 tsp turmeric
1 chilli, finely chopped
1 tsp fenugreek leaves
1 tsp of garam masala
Garnish
1 or 2 whole chillies
Handful of coriander, chopped
Method
Place lentils in a pan with the salt, cover with the water and bring to the boil.
Remove the froth, reduce the heat and put the lid on the pan - leave to simmer for 10 minutes. Check the lentils are cooked by squeezing them between your fingers. Once soft remove from the heat.
In a frying pan heat the oil or butter. Using a fork pierce the whole chillies and add to the pan with a bay leaf and the cumin seeds.
When the seeds sizzle, remove the chilli and set to one side for your garnish.
Add the onion and garlic and fry until lightly browned. Reduce the heat and add the tomatoes, ginger, turmeric, fenugreek and the chopped chilli. Gently let the ingredients cook down for about 10 minutes to make a thick masala paste.
Add a ladle full of the lentils (dhal) to the masala paste in the frying pan and stir together, then empty all the contents back into the pan with the lentils and stir. It should have the consistency of a thick soup but if it's too thick just add a little boiling water and remove from the heat. If you prefer it thicker just leave it on the heat to reduce until you get the consistency you want.
Check the seasoning and add a little salt if required. Stir in the garam masala, coriander and top with the whole chillies to serve.

i love cooking videos but only watch a couple channels because i get sick of these "food blog" and "food-tuber" style videos where the recipe is 80% the cooks life story, 10% showing off their cooking gadgets, and 10% actual cooking. I tried looking up some recipe on google not too long ago and the recipe literally started off with talking about the cooks great grandmother for half the recipe, and you know a recipe cant be that great when it starts off in 1908 and we have to slog through paragraphs of some Edwardian era maids life before we get to a soup recipe.

This is promising to read, been tweaking my dal for the last little while, but it still doesn't have the pop I am looking for, hopefully this time around it's better, if not I'll try again sometime this month and try to figure out where I went wrong. In the beginning of the video itself I realised I have been caramelizing my onions which would lose the chunkiness and blend right with the lentils

Thanks. I bought a bag full of lentils from the Ethiopian store because I had not bought it from Indian Grocery for like around 15 years. Lentils were a staple in my diet, and I plan on continuing to get lentils from local Indian grocery stores for plant-based meals. This video was very informative, and I will watch the rest later. I got up to 1:45.
I know that this video was created years ago, but I wanted to say that I made this dish for myself and husband tonight and it turned out fantastic. It is a great way to connect more with my culture and it really does remind me so much of home. I find Indian food to be comforting. A thoughtful dish is a way that you can show others that you love them.

Its def next on my list to make (shops may be empty but I do have red lentils in the cupboard!). Indian food is perfect for now, such lovely flavours, comforting, filling, nutritious and either vegan or easily adaptable so perfect for me!

I first tried dhal when I worked as a security guard in one Indian kitchen and I'm telling you, I was very much fascinated. All food I tried was super good, but dhal is something simple, yet the best, at lest for me.
Also, I have only nice words for my Indian friends. I don't work there anymore, but I still message one of them, and sometimes I get to see him, when he can come downtown.

Cooked it today with some adjustments (added fresh coriander and mint; skipped fenugreek leaves) and this dhal came out much better than the other variations I've tried before. Better than the recipes that include coconut milk. Thank you a lot for a detailed recipe and all the additional explanations.

Difference between her cooking and other peoples' is that she made it with love! So much care and love is infused into each step which I believe you can taste it in the finished product. Hari Ghotra your cooking is beautiful.
The best red lentil Dahl I've ever tasted. I make it once a week, eat every other day. A real health food.

This is masoor dhal (lentils). You can eat 1 kg of chicken or beef or fish and nothing will happen to you. However if you eat 50 gms of these lentils, you will bloated within the next few hours. :-)
Health foods are fruits, oily fish and vegetables, not lentils.
Rowen Fernandes bloating most often indicates you aren’t getting enough fiber in your diet, and actually need to be consuming more high-fiber food such as lentils and other pulses and legumes
@@rowenfernandes2956 Don't spread misinformation please. Lentils are top quality food across the board.
Fruits are full of sugar. Oily fish is extremely expensive and thus not accessible to most people. Vegetables contain no calories so you have to eat kilos of them. Beef has a Major CO2 footprint, not to mention the negative health effects. Chicken is fine, fish is fine, .. both in moderation & only to supply you with essential aminoacids.

I would just like to thank you for this recipe. My partner is Asian (uk pakistan) In 15 years I have never cooked any of the food I enjoy with my v talented inlaws. There are awesome cooks in the family - how could I compete? I did try to make channa years ago (followed a recipe to the T bought everything from an Asian grocers) and it was awful and knocked my confidence. I've been trying recipes off YT during lock down. I started with pakora, then Saag Aloo, and I thought I'd try your dahl. It was delicious! - to be told it was better than my sister in laws was high praise indeed, I was speechless! You've given me confidence so thank you. I'm vegetarian and I've always said if I could cook, saag aloo, dahl and channa I'd be happy. So I'll find a good channa recipe next. Thank you again. I made this tonight but with split yellow gram. Didn't have the grated ginger or the fenugreek.

This was always a staple when my wife and I were bringing up our five kids in the eighties. We also used to add currants and a clove or two. Always served with lots of rice.
I prepare it completely differently (all in one pot starting with the spices / aromas, no pre-cooking of lentils, no ghee, no salt until the end, no skimming etcetera), but it still turns out very nice.

I've never tried cooking indian food before. This recipe is absolutely delicious, and easy to make! It's vegan budget meal if you use oil instead of ghee.

I love lentils but I got tired of cooking it the same way every time. I found this and I decided to try it out. I couldn't find fenugreek leaves and garam masala but I asked my Indian friend and she gave me some. My Friend was even giving me tips on how to make it better but I told her that I was following the recipe in this video exactly.
After I was done I asked her to taste it and give me her verdict. She went from giving me tips to asking for this recipe ✌😄

I've made this so often it's a staple in my kitchen and I stopped needing the written recipe a while ago. Just made it again today, it's cloudy, rainy and a bit chilly --- perfect day for this.
Great recipe! In my family we always add the salt after the dahl has cooked. We found that the salt in with the dahl at the beginning keeps the grains separate. Love the fried chillies❣️🔥
I first made this about a year ago. I’m pretty sure I commented on how fabulous it was. I’m very new to Indian food still even after trying this a year ago. I’ve never had any other dhal than this. I absolutely love it, I make it very often sometimes four times a week LOL anyways I just want to say thank you for sharing and now that I’m on a holiday I’m going to do a marathon on all of your recipes. I am plant based so there’s a lot of things that I will need to change, but I just use vegetable broth in place of ghee. Thanks so much for sharing 😊

Gotta love anyone who cooks in Le Crueset!! Nice to see an Indian recipe being cooked in good stainless steel utensils instead of non stick pans (often scratched) that a lot of cooks use in their videos! I didn't need to learn how to make daal but I watched your video any way!

I dont know why i clicked on your video because i make masur dal so frequently so didn't need to learn it but I was the happiest after watching your video coz your accent is marvelous,your georgous and your process of making masur dal is just like mine.just a tip put the salt into the pan immediately after you add tomatoes,dont wait for long.salt helps to break down the tomatoes faster.i add another spoon ghee just before putting the garam masala.smells and tastes divine.

Just discovered Hari....I enjoy watching her since she makes this about the food and not about the opportunity to showcase herself. Great communicator, sequential instruction delivered with ease and with the desire to help those of us who are unfamiliar with Indian cuisine. I'm making her Byriani this evening...but using cod and shrimp in place of the chicken....and I will accompany it with the daal as she suggested as an accompaniment. I'll be back for more recipes.....my new source!

love red lentil dal along w crispy spicy potatoes and basmati rice its pure heaven. sometimes we add shredded cabbage halfwa thru the dal, it melts into the soft lentils. some sweet green peas on the side too! PS you're super beautiful lady!
