For kidney, all the parts of calyx and pelvis (renal medulla) need to be removed. Those parts are contacted with high concentration of urea and other body waste fluid inside the body and always have the smells of those wastes. Removing all those parts and keep only the renal cortex is the major way in many places to cook the kidney.
I was wondering about this, I tend to dislike kidney because of the urea flavor I associate with it. I wondered if there is a technique to remove that and here it is. Thanks for explaining! If anyone else knows of any other tips for reducing the less pleasant flavors that can concentrate in organ meats please share them, I'm always curious!

Cooking wine and ginger are often used to remove the bad odors (soaking for minutes to 1 hour), but removing the kidney medulla is still the major way to prevent the bad tastes (then combine with cooking wine and ginger to remove the remaining odors).

Perhaps a dumb comment but I always see high end quality knives on the wall mounted magnetic strips like the ones on Guga's background kitchen. I very much appreciate how he places the knives handle up versus handle down. Most of my quality knives are in the 100pt or less range on my BESS sharpness tester so they are RAZOR sharp. A wet or slippery hand that grabs the knife from in the handle down position massively increases the chances of a slip up to have the blade run right through your fingers and palm. Being my knives are mirror edged and extremely sharp I position mine on the magnetic strip as Guga does as well. If I was to fumble grabbing one of my knives in the handle down position, its not a possible chance to get cut, its a absolutely positively will get cut badly chance. One nice thing about razor sharp knives, in the event you get a minor cut from just working with food, a simple cleaning, drying of the wound followed by a light dab of super glue and it heals practically overnight due to how clean the cut is. :)
I think Guga you should have done what sushi chefs do with octopus. They get a bunch of salt and vigorously massage it with salt. It softens the meat and some get an electric hand massager cuz its faster. It's significantly more tender and you literally don't need to cook it very long. Afterward you can cook it or etc. Just an opinion.
