based on one of your older videos the difference between A5 and A4 is Letter- is yield and #-is marbling/quality. so B5 and A5 would taste the same A4 and A5 one will have a slightly less fat content.

When it comes to beef, restaurants in Japan are honest. The $30 buffet discloses honestly that it uses Wagyu A4. Many other restaurants, especially in Europe (Italy, noticeably) will cheat customers with garbage beef and say it Wagyu A5 quality.
Try Mong Kok market in Hong Kong and then a more premium place! We in the west are oddly afraid of offal. If you read between the lines, after the two big disagreements we had the affordability of premium cuts. Status would then dictate that anything less was bottom of the barrel. In so many ways the years I spent travelling have taught me so much about human nature?

Usa here beef tongue gets recognition and available grew up on it cant justify it for the price $30 per small tongue. Always boiled until tender slice peel dip in mix of horseradish and ketchup, great vid sunny. Where is it available? I've never once seen it in a supermarket, you'd have to go to a butcher store. And in restaurants, only Mexican places have it. So yeah, I'd say 90% of Americans probably never had cow tongue.
