Don't ruin your favourite cheese!
So, you've gone down to your favourite cheese monger and accidentally bought too much cheese. You want to freeze some of it to save for later but you're not sure whether that is the right thing to do.
Some cheeses can be frozen without any changes to flavour, taste and aroma but most cheeses you should not freeze. This video will help you to know exactly which cheeses you can freeze and how to prepare your cheese for freezing.

hi to everyone, hope you're all well, about freezing cheese, one cheese that freezes well is vacuum packed halloumi, left to thaw in the fridge when needed

Awesome and thank you! She said nothing about halloumi and i was wondering since its a soft cheese. Its vacuum sealed in 2 500g parcels and i alone can not consume so much cheese by my self, lol! Thank you so much for sharing!!!

I freeze Danish feta all the time. It it slightly more crumbly on defrosting but tastes exactly the same. I buy in bulk when on special and separate the blocks into freezer bags.

how long can i keep frozen cheese? for example, I bought cheese, date is from 06.2022 till 06.2023. I froze it, now it is august, how much more can I keep it, does anyone know?
Swiss cheese (Gruyere and Emmental), do freeze very well.
I've always found that they're ok frozen after grating. Not so much whole.

Hi, thanks for the information. My son brought us several types of cheese from Holland and we can't consume it in 2 weeks, so I am thinking of freezing it. I don't really know the types, but will try to grate the hard cheese before freezing and wrap the soft ones before freezing. Hope this works.
Thank you for watching our video and leaving a comment. Let me know how you go with the frozen ones after thawing. My one advice would be to try to eat as much of the soft ones as possible before getting to the hard cheeses. The latter will definitely freeze better.

Dear madam, I am from Bangladesh where average temperature in winter 29 c to 10 c for three months and summer 38c to 21c. Now how I can freeze all type of cheese for preserve and rippen ?
I've frozen gorgonzola, since i use if for sauces. I didn't notice a problem with the flavour.
The difference is definitely less when you're cooking with the cheese. But if you were to serve it on a platter, you probably wouldn't enjoy the texture of a Gorgonzola that's been frozen and thawed

I agree. The texture wasn't as nice anymore.
If you can freeze butter which I have done for years, why can't you freeze soft cheese - especially if you are going to be mixing it with herbs and heating it in the oven when you use it?
You're right about baking frozen cheese. It tends to turn out almost the same. But I definitely wouldn't serve frozen and thawed soft cheese on a platter.
So pecorino Romano should be shredded and frozen?
I'd say it "can" be frozen once grated rather than it "should" be. Cheese is always best fresh.
You will be a real Wanker is you freeze Cheddar cheese as it matures in the fridge over time, the longer the better.
