  • If there were a competition for the most beautiful cheese, Cornish Yarg would claim the title. Each cheese is wrapped in wild stinging nettles, which are brushed on by hand one by one. With aging, the nettles form a natural rind around the cheese, giving it a fresh, creamy taste with hints of herbs, mushrooms, seaweed, and even lemon. So how did this recipe even come about? It was actually found randomly in a book about 400 years ago. We visited Lynher Dairies in the heart of Cornwall to find out more.

I'm an Italian living in the UK, and I drool at the thought of a cornish pasty or a proper pork pie. Two of my most favorite foods ever. While the food of my country will always be my favorite, the UK is definitely one of the nations in which I've eaten the best. Both for its traditional dishes, as well as the large variety of quality world cuisine you can find even in the smallest village.
I also love the cheese in this video. In my opinion way underrated (or little-known, anyway, for some reason).

Maybe simply try nettles? Attention: Harvest, wash and cut them with rubber gloves on! On the other hand it's said that it's healthy to get "nettled" (at least if it isn't the whole body). ;-) After being cooked or dipped in boiling water, they definitely don't sting anymore.
You can also use nettle leaves in smoothies and especially in Italian Pesto!!! Delicious!

Anyone wanting to know what yarg is like. I'm not a cheese expert, this is written for the average cheese eater with comparisons and descriptions.
The closest I can tell you the texture is like edam. Slight flex and a softness to the bite. It does not crumble at all, a slice will crack at the rind and the partitions meet cleanly toward the centre as it bends. It has a firmer brie like quality to it, so its got more bite on the outer edges and a bit of a flex to the centre but the flavour is deeper than edam and it will bite back so expect a tang but it's not offensive. Imagine a milder brie flavour with a firmer edam texture in the centre. The rind is not as soft as brie and actually is in my opinion the way you can tell how fresh the cheese is by how dry and hard the rind is. the nettles have the same crispness of dried seaweed with light lemon flower and spinach flavours.

You’ve obviously never handmade a large quantity of things. Take rice paper. Dips are easier to control than soaks.
      But go off, lmao

"Yarg" is Gray spelled backwards... this is supposedly one of the name origins for the cheese...

Recently it seems a lot of Italians are Emigrating to England I'm not sure if Brexit made it easier but where I live we have 3 Italian Cafes down one street with the majority of employees from the same family they are insanely good too. Italians are such nice people almost suspiciously too nice.
