Limitless Linda, pardon me, but it's become sooooo obvious that I'm living vicariously through your struggles in RV renovation/preparation. Your trials and tribulations have been revelatory/challenging, yet you ALWAYS become a problem-solver and innovator to meet whatever comes your way. Journeys physical/mental/emotional/timeframe/financial become opportunities for knowledge growth, skillset enhancement, and testing of a person's resolve/resilience to progress in life and projects along the way. The life-lessons that you are sharing with your " mini-me " with a hands-on approach will instill values for her to apply as she grows & emulates your successes, and yes, some not-so-successes. You are amazing, tackling jobs that would intimidate most of us. I've worked with my haands all my life, yet I'm not sure I would have had the courage to undertake this project. Congrats to you and your daughter.
I've been RVing since I was a boy in the 1950's. I am really impressed with your renovations so far. At this point I would label your efforts as .... "so far, so awesome"! I do have one suggestion for you at this point for this older vintage RV. Have a qualified RV tech run a full pressure test of your propane system. To do it correctly requires the proper equipment and expertise so It will cost a bit. But a propane leak fire costs everything! Watching this video with your daughter took me back to my teenage years when I would help my Dad repair and renovate their 18 foot Shasta trailer. Golden moments. I am looking forward to watching your next projects and especially your maiden voyage with Mr. Green!
Way to go! You both did an amazing job wrestling that AC unit! If you kept the interior ceiling box you could probably sell the parts on Ebay etc. I have the same Dometic Penguin unit and was looking for the 2 vent covers since a few of my tabs are broken.

How is your A/C unit working now? any problems (leaks, etc.,) Also, unless I missed it, I didn't see that you mentioned the brand and/or model number. I think mine is going out.
The AC has been working good, no leaks! The only time it didn’t work well was when it hit 104° and it struggled to keep the RV cool. But on normal hot days, it works great. It is a Furion Chill AC. I found the price a little cheaper on Amazon. Hope that helps and you’re able to replace yours!
