  • Today, we are making a Lamb and mint pie incorporating the ingredients used in many manufacturers' products. The lamb and mint Pie frozen ready pie goes viral with all the internet food tasters. It is a straightforward pie, using minced lamb and mint sauce and adding textured soy protein, all encased in a buttery shortcrust pastry.

    Ingredients
    500g Minced Lamb
    50g Textured soy protein
    Oil
    Butter
    1 onion diced
    2 cloves garlic minced
    1 cup of beef stock made with a cube to hydrate soy protein
    2 cups beef broth made from granules
    1 tbsp tomato paste/puree
    1 tbsp Worcestershire sauce
    1 tsp dried thyme
    2 tbsp mint sauce - use ready-made or make • The BEST MINT Sauce AT...
    1 tsp rosemary
    1 cup frozen peas

    - 420 g All Purpose Flour
    - 65ml Water
    - 150g Shortening
    - 50g Butter / Marg
    - 1 medium egg
    - 1 tsp Apple cider vinegar
    - 1 tsp salt

    Here is the kicker to using Textured Soy Protein - Safe for most of us - Textured soy protein (TSP), also known as textured vegetable protein, is a popular meat substitute made from soy flour. It's a highly processed food item but can be part of a healthy diet if used correctly. Here's how it stacks up health-wise:
    Protein Content: TSP is an excellent source of protein, making it a great option for vegetarians and vegans who need to boost their protein intake.
    Low Fat: It is low in fat, which can benefit those looking to manage their weight or reduce fat intake.
    Fiber and Nutrients: While TSP is not high in fiber, it contains a range of minerals and vitamins, particularly when fortified.
    However, there are some considerations:
    Sodium Content: Many TSP products can be high in sodium, which might be a concern for those with hypertension or heart issues. Checking labels and choosing low-sodium varieties can help mitigate this.
    Phytoestrogens: Soy contains phytoestrogens, which can mimic the hormone estrogen in the body. There's ongoing debate about their effects, but moderate consumption is generally considered safe.
    Allergies: Soy is a common allergen, and those allergic to soy should avoid TSP.
    Processing: Some might prefer to limit their intake of highly processed foods, in which case TSP might be less desirable than whole soy products like tofu or edamame.

      Unfortunately, most soy products are made from GMO soy; they have glyphosate in their genes and are also heavily sprayed with glyphosate. Fortunately, non-GMO soy products can be found in supermarkets and will say so on the label. If not labeled as such, then it's GMO. I would omit the textured soy protein and use one of the following: (A) more lamb mince, (B) non-GMO soy protein powder, (C) mashed up non-GMO firm tofu, (D) ground almonds or cashews.

      ​@istudios225 I knew soy in general wasn't as good of the food industrial complex makes out but didn't realise it was GMO, I also believe it lowers testosterone levels.
      My vegetarian friend used to make us Quorn lasagna and I couldn't tell the difference from beef, it was excellent, but soy definitely isn't healthy.

    my goodness I have finally learned what to do with those soy protein balls located in the bulk foods section of a local large grocery store group where the store caters to East Indian staples for a concentrated population. This store smartened up to the needs of the customers who in the past drove 300 miles to the nearest big city center to purchase their favorite cooking ingredients. The local grocery store has managed to educate their non East Indian customers to a wider world of culinary possibilities. yet this is the first time I learned how to cook British foods with these dried soy protein balls.

      I used it as fake minced meat sauce and they didn’t taste it 😂😂😂 sometimes it is good, especially if you wanna make it on a weekend 😊

    I made this and so happy with results. I’m convinced egg and ACV in the pastry are game changing ingredients. I’m no food scientist, but I’ve never seen any other cook use them in shortcrust before. I’m sure it improves the texture of the pastry significantly! Thanks again 👍👍

      Fifty years ago our markets here in Hawaii used to sell hamburger meat with cellulose, or plant fiber so you could buy hamburger that looked and acted like hamburger for less money, I want to say it was about 20 percent cellulose. Many people refused to buy it unless you were a struggling parent like me, lol, I never could tell the difference and I am still here. It's not available any more think because it was finally decided it didn't qualify as a safe food.

    The filling kinda looks like a keema curry😋my Mum's friend worked as a cook at a posh school and would bring home the spare keema curry on the menu that the posh kids didn't eat and would give my Mum some which would then end up in my stomach!😋 good times! got to love a freebie

    I forgot how much I used to enjoy meat pies but you keep reminding me. Like you, I love lamb but prefer not to use the TVP but that's just my choice. Squashed chick peas or lentils or something would work for me. Never liked mint sauce or mushy peas but lots of alternatives to enjoy.

    I'm a huge consumer of soy products, I only eat meat around once a month to keep my iron levels up. This pie looks amazing and I've made Riks pastry several times now and it's tasty and failure proof.

But the experience is one important and impressive part of life. And you CAN cook. Like omg, I watch other chefs, but rik it ain’t important to me it’s what h how you make it. I’m no star 5 or even a half, I’m surprised my kids are still kicking. Lol but I watch because you make n explain it as simple and easy to understand. The simple the better n omg the look of just delicious, that wins my heart everytime. I’m just a plain n simple person rik.     The American equivalent would be "Hamburger Helper" ... which is soy protein crumbles. It does stretch the meat to serve more.

    My wife loves lamb, especially Lamb chops and I will only eat it if it’s well done but for the life of me, I can’t understand how people can put mint jelly on their lamb. Growing up my mom and grandma never really made lamb. It was always either pork, veal or chicken. I love stuffed breast of veal but it’s so hard to find a breast large enough to stuff. Sorry that I kind of went off topic.

    Could dried barley or some other edible food item be used as a substitute for the dehydrated soy protein? Rolled oats maybe?

    Looks absolutely delicious Rik as always your pies are a thing of beauty 🥧😍! Great tip about using textured soy, have never heard of it, but will keep an eye out for it, a great way to make your meat stretch further!👍 When I cook a beef chill con carne or beef bolognaise sauce I always add a good handful of rolled oatmeal for every 500gm of mince, the same principle it makes your meat go further & is practically impossible to detect taste or texture wise as long as you don’t overdo it. I made it like this for years & it was only when I was ill & had to have major surgery, & my husband had to take over cooking duties for a few weeks, that he learned my secret ingredient, both he & my daughter (she detested porridge)🤭, couldn’t believe they’d been unconsciously consuming porridge most weeks for over 20 years!😆😂

    Oh boy, I don't know about this one. I've never had lamb or mint sauce, but I trust you. I'm going to see if Amazon Fresh ( my grocery) has these items to try. It sure looks good, Rik!

    Ok I found 1lb ground lamb $9.79 and then I found jar of Coleman's Mint sauce $6. Here in Arizona

    What was the reason for putting the cardboard in? Can it be left out?

      The cardboard turns into a gummy mess ... it replaces flour as a thickener.

      If you leave it out, use some flour or mashed potato to help make a gravy and hold the lamb together.

    I have seen a few of those viral pie taste testers.Not my cuppa tea ,anything processed.Love the idea of a Lamb n Mint pie though. Rather novel for me,soy protein.Must check it out.Thanks for an interesting video.

      @@BackyardChef I honestly don’t know but given that you happily eat it I seriously doubt it’s the same poison. Stuff was like bland rubber and ohhh the farts!!! My father had to eat it for a while and the house was virtually unliveable.

    Textured soy protein is not healthy, nor is it good for you. Why ruin beautiful British lamb, peas and pastry?

    Soy is not recommended for cancer patients. It is a processed food, is likely a GMO, has chemical additives. Soy has plant hormones which can negatively impact human hormone levels. It can be hard to digest. Soy isnt a healthier substitute for meat when all of the above are considered.

      These day’s everything is unhealthy for anybody, if you ask around… everybody is old enough to find the food, he/she wants, this recipe is a can make, not a must😥

      @lwoerner9683 I'm in your camp. I wouldn't touch commercial textured soy (or vegetable) protein with a ten-foot pole. Sorry, Rik! I'm not a cancer patient, just particular about what goes into my body. You are what you eat, and all that. Cheers!
