Corned Beef and Potato Pie Recipe

  • I have been making Corned Beef and potato Pie for years for my own family and as a school cook. It is a cheap dish to make and a favourite with the British. I have used a little less pastry, so there is no pie edge. You can trim it once cooked to give you the pie slices. The Corned beef Pie can be eaten hot or cold, but are really nice left to go cold and taken on picnics, eaten for lunch or cut into small portions for an afternoon treat or snack.
    The ingredients should fill a 20 x 20cm tin. This recipe made 6 really deep good size portions. It works out at only 37p per slice for this classic British Pie recipe.

    CORNED BEEF PIE SLICE RECIPE:
    • PASTRY:
    • 225g (8oz) Plain Flour (UK) or All-Purpose Flour (USA)
    • Pinch of Salt
    • 50g (2oz) Cold Butter
    • 50g (2oz) Lard
    • 5-6 tablespoons cold water
    • FILLING:
    • 250g (9oz) Corned Beef (UK) - Brisket of Beef/Salt Beef/Bully Beef (USA)
    • 400g Cooked Potatoes
    • 1 Large Onion
    • Milk to glaze pastry
    INSTRUCTIONS:
    Make your pastry. Sieve the flour, add the fats, rub in.
    Add water to make a dough. Wrap in cling film and rest in fridge for at least 30 mins.
    Peel and boil your potatoes.
    Preheat the oven to 180°C (gas mark 4, 350°F)
    Chop up and cook your onions.
    Chop up your corned beef, add to the warm cooked potatoes and mash in until fully mixed. Then add the cooked onions. (Try to caramelize your onions, it adds to the flavour) Then let the filling cool.
    Roll out your pastry, cut round tin for base.
    Add filling, roll out rest of pastry and add the top. Cut top to square shape to just cover top of pie.
    We are not overlapping and doing a pie crust edge.
    Bake for 35-40 mins. It helps to cook the base of pastry if you put the pie on an already hot baking tray in the oven.
    Once cooked, leave to cool slightly before slicing. Nice hot or cold.

    Thank you for a well detailed post - I always like to see the size of containers used to replicate the recipes. I look forward to making this when we get the 8"x 8" tin that we saw in Tesco yesterday - another trip back to the shops required. (just subscribed)

      I make this regularly. The trick is definately caramelize your onions. It enhances the flavour. Its great hot and cold. Hope you enjoy it.

      Oh yes, sounds great. I love mine with mushy peas and mint sauce crunch. Iceburg lettuce chopped up with a bt of raw onion, coated in mint sauce and served on the side! A childhood thing my mum used to make cause my dad grew lettuce and fresh mint and onions in the garden, so we had that with allsorts. Its lovely.

    Looks great--loved my gramma made the best beef pies when I was a kid! Now I eat seitan as I have learned I have a family history of Cancer so need to avoid the BLV, igf-1 and pesticides in meat. Thanks for sharing and for reminding me of great times with Gramma

    I found your channel via looking at an air fryer i am getting today, to see what its like and ehat people think of it, the 10 ltr Duronic air fryer, watched your unboxing then i came to your channel to see if there was an update on it or a review but i cant find one from you or anyone on youtube actually lol so now i am watching your lovely food cooking videos and have now subscribed 😊 My mother used to make corned beef pies... since she passed away in 2015 i have been looking everywhere for any bakery or shop selling any but alas have never come across a corned beef pie anywhere in this past 9 years which i find very odd as they are amazing. So now I'll just get off my backside and make one with your recipe as no idea how my mum made hers lol. Will give it a go in the coming weeks 😊 thanks, keep up the excellent job you're doing.       Hi Matthew, thank you for subscribing, its much appreciated as we try to grow the channel with recipes. Yes I've been testing the duronic air fryer out with different recipes and foods. I'm going to do an update video in the next few weeks to give my opinion on it and will then be adding some recipes and foods I've cooked using it, so will start to have more coming out over the summer and beyond.

      I sometimes add a bit of garlic salt, when not making it for kids. Thats quite nice aswell.

    Canned corn beef , salty as hell , would use minced up corn beef cooked in slow cooker, probably add some peas as 😊

      You can get tinned corned beef with reduced salt if needed, but this is a traditional british pie favourite, so is a classic as it is, but if it works for you using minced and in a slow cooker with added peas, then thats all that matters.

      You can use SR flour yes, I have done before when got no plain flour in. It may rise a little, almost like an air bubble if you blind bake it at all, but I didn't blind bake this recipe so should be fine. Hope you enjoy it, I love this recipe, so tasty..a real comfort food!

      The caramelized onions add lots of flavour, but a little pepper seasoning is also nice if you fancy a bit of extra seasoning. I didn't add it when making it, as my lot seem to like it without anything else. Enjoy!

    Why is my filling always turning out to soft and sloppy, I dont add anything to it no butter , no milk?

      The only issue you may have if your following the recipe quantities and its a bit sloppy could be the potatoes your using. They need to be good for mash, some potaotes are quite watery. or you may be over boiling them. They don't need to be really soft, over boiling can make them more mushy and will also produce a wetter filling. Also try draining the potatoes and leaving them to air dry a little before adding the corned beef and onions.
