    Taking Cooking food back to basics.
    Ingredients:
    For the Filling:
    - 5 large Bramley apples, peeled, cored, and sliced
    - 3 ripe pears, peeled, cored, and sliced
    - Juice of 1 lemon
    - 1/2 cup (100g) granulated sugar, adjust based on the sweetness of the fruit - if using sweet apples 1 tbsp sugar
    - 1 teaspoon mixed spice
    - 1 tablespoon butter for dotting in water
    - 1/2 cup (120ml) water or more
    - 1 tablespoon cornstarch/flour water mixed - slurry
    For the Charlotte:
    - 12-16 slices of white bread, crusts removed amount depends on the tin used
    - 3/4 cup (170g) unsalted butter, melted
    - Additional granulated sugar for sprinkling
    - Powdered sugar for dusting (optional)
    - Custard, cream, or whipped cream for serving
    Mixed spice
    1 tbsp cinnamon
    1 tsp Nutmeg
    1 tsp allspice
    1 tsp ginger
    1/2 tsp cloves
    1/2 tsp coriander

    In all my many years of thrifty cooking I have never made a charlotte. I make my own bread and this is a terrific way of using up leftovers - I NEVER throw bread away. I always have a few apples in the fridge so this is on my list of things to make.

    Loved this so much, nan did it with apples and pears......she also made crab apple jelly so she would put some on top of the charlotte while serving..... we never wanted to try the crab apple jelly on our toast and we didnt know it was on the apple charlotte...she never told us for a few years, but once we knew, she could never make enough of the jelly to keep it in the pantry.....we ate it all in a few days and even washed out the jars expecting more..❤❤❤❤❤❤❤❤

    Looks great - I believe that here in the States there's something very similar called apple brown betty, although I've never had it. I made bread & butter pudding for the first time last week and it's so much better than plain bread pudding... ate too much and gave myself a stomach ache...
    These days, I can't imagine who has the money to buy perfect produce and full price groceries. Every time I shop, it's more and more expensive. If it doesn't turn around soon, we're really going to suffer. Of course our leaders don't care - they never suffer for anything.

    Wonderful! Great way to make a quick desert with old bread and discounted fruit! It's even tastier than pastry to me, the buttery toasted bread with the delicious luscious warm fruit.

    One of my favourite sayings is "I own a paring knife" I look for salvageable fruit & vegetables when the price is reduced. Great to maximize the variety of my cooking and eating choices and extend my pensioner's fixed income budget. This allows me to try creating something tasty with odd combinations, Apples go well with onions and no one will know that your garden compost pile also ate well.

    I love reduced specials! On chuck out I call it - because if you don't buy this now it's going in the bin lol. The Vietnamese supermarkets always had the best chuck out deals - like a whole carrier bag of fruit for one dollar! I think a lot of people turned their nose up because some of them were bruised or over ripe - but I'm like there's 20 Nashi pears in the bag, by the time I cut off the bad bits, I've still got 15 Nashi pears worth - for one dollar! Some people are so stuck up when it comes to food lol.

    The dish was named after Queen Charlotte who was married to George III in 18th century UK. Best served with ice cream and or cream. Like this twist to receipe using pears. Delicious.

    Reminds me of my youth. Apple trees in garden. Mum cooking Apple Charlotte. (different from your recipe - she used a large, open glass dish, Buttered the dish well. Buttered Baker's Bread, layered sliced apples and sugar and buttered bread. White sugar on top. The juice of the apples mixed with the sugar and butter and made toffee and toffee sauce. Served with Custard. Yum).

    Custard or vanilla ice cream ? Both definitely. Instead of mixed spice I use star anise when cooking apple. Baked stuffed apples, spam fritters the list is endless!

    Made mine with products in the house so it ended up as 'not a Charlotte but different'. Didn't have pears so used some preserved rhubarb I'd made last year with the apples and some spicy fruit mix left over from the Eccles cakes I'd made yesterday. Turned out magnificent, thanks for the recipe and and the methods of making.v

    That came out great. My Mrs saw this and has requested I make apple puff pastries for afters tonight. Super easy, canned apple pie filling in store bought puff pastry egg washed and sprinkled with sugar. Have you considered making a Woolton pie? I love the potato pastry and use it for chicken, bacon and leek pies too.

I’m going to make your bread and butter pudding tomorrow, it looks Devine and the recipe is so simple even a kitchen challenged person like me should be able to make .     I have been looking through all the videos you have done. It’s amazing and I have so much to catch up on. So far I have about half a dozen savoury dishes to do and the same with sweet desserts, including a favourite of mine, Eccles cakes. This looks delicious…😊

    That really looks good Rik, I remember making it at school in a basin and turning it out upside down & having it with custard, but it was just apples. It didn’t look as good as yours as I remember it 😀..Question for you Rik, why do we never make pear pie ? We make pies out of all other English fruits but never pear ❤

      Great questions and if anyone knows a region that makes pear pies would be appreciated - Myself I would think, likely have been made in regions of the UK where pears are grown. The UK has several regions known for their fruit production, including parts of England like Kent, known as the "Garden of England," where a variety of fruits including pears are grown. Similarly, the West Country, which encompasses counties like Somerset, Gloucestershire, and Devon, is known for its orchards and could also be a region where pear pie or pear-based desserts might have been more common. I agree usually more apple desserts. Best, Rik

    Love all the meal ideas you are showing, I have a question, can I cook scrambled eggs in the stunning airfryer, is it able to do a full English? One othe suggestion, can you say when cooking one of the main dishes like the suet bacon and onion, just when can I add vegetables to utilise the heat to cook the full meal all together. Love all the interesting and clever ideas, trying the garlic bread flowers this lunch time.

    I tried to make Summer Pudding and did have a really good crust/bread. It was basically a fruit compote and your supposed to soak up some of the fruit juices in the bread which seems simple but.... mine didn't soak up much juice. If you make this do you cook yours like this Charlotte? I'm wondering if there's a trick to it I missed? This one looks like a simple version of apple pie I don't see how you could go wrong there. I wish I could get all of that for less that 2 dollars though. A loaf of bread is anywhere from 1.25-5-6 dollars and Apples are usually 2.50 per lb or more depending on which one you chose.

      Do they not do reduced produce where you are? I buy all the reduced stuff. Folks look at me, and I just think - I will make that, I can make that. I don't think you missed any trick - some bread absorb more than others. I think you probably made it all correctly and just unlucky. It happens to all of us. Give it another go. Best, Rik

      You must have really dry bread for summer pudding, dry it in the oven if you have to. If it has any freshness in it, it will not soak up the fruit juice.

      @@BackyardChef Mostly big stores around me and they will throw everything out instead of reducing most times. Maybe a bakery cart will have "day olds" but that's about it. Farmers Markets are all but gone, there maybe one in a small town, but many orchards make cider with old apples. Cider =4-5 dollars a gallon at an Orchard. Many of the discount stores get run out of town because they buy stock wholesale (or less) from store taking it off of shelves because it's get close to a sell by date or ripe.(over stocks also) Small businesses are difficult to keep running especially markets, you need the support of a small town.

    Do you have a version of banana bread? I’ve tasted some that were delicious but when I’ve tried to make it, it came out dry. I’m not sure if the recipe I have is trying to be too healthy and leaving out something important.

    What a great bargain! $1.58 for a dessert to serve several people. I would expect to pay 4 to 5 dollars per serving at a restaurant for such a nice dessert.(pudding)
