AKARA: EASY STEP BY STEP GUIDE FOR BEGINNERS (DETAILED, 2018)

  • I love my Akara crunchy/crisp on the outside while fluffy on the inside. I ALWAYS make a badass "Akara" anytime (self-praise I know but I have to hahaha).
    Best eaten on the same day and while warm. But, most times I find out I have at least 4 to 5 pieces left. I take it as either snack alone, paired with bread or what we call soaking "garri" in Nigeria
    Full Ingredient list
    11/2 cup of beans (I used honey beans)
    2 habanero pepper(or to choice)
    ½ small sized red onion
    1 teaspoon salt (or to taste)
    Canola oil
    Cuisinart food processor used: amzn.to/2Ek77O4
    hand mixer:(couldn't find the one I used, but this should work, amzn.to/2XspokT )
    Notes
    #1. Presoak peeled beans overnight or at least 3/5hrs in the salt solution (that is, 1tsp of salt to about 1quart water). This will help easy blending and control the amount of water used during blending. We need a thick and not "runny" batter.
    #2. The edge is one of the tell signs to flip over... (with right heat level, it should take about 2 to 3mins but forget time, just look at it because the spoon you use in scooping might be larger than mine and will take a longer time)
    #3. The heat level should not be more than moderate (350F if using a deep fryer)
    #4. Some like theirs light golden or deep golden. It is totally up to you
    #5 when beating in air, it should be in one direction and not all over the place to avoid “deflating” the air already incorporated
    #6. After the oil cools off post-frying, pour into a container and store in your refrigerator for future use.
    #7. Be very cautious when splashing the hot oil onto the akara during frying.
    #8 The hand mixer help to incorporate air into the bean paste batter making it creamy thus achieving the fluffy interior. It saves time.

    This is the best Akara frying method I 've ever seen. I especially love the mixer part, never thought of using a mixer.... Yummy! yum!! yum!!!.

    Followed your instructions and my Akara came out perfect! Light and fluffy like a donut pillow. I drizzled orange fig jam and powdered sugar on top...and yes I used the pepper and onion. Delish!

    I just finished eating my akara which I made using your recipe. This is my 2nd attempt and I nailed it! My 1st attempt was about 8yrs ago and it was a mess! Since then, I haven't been confident to try it again. To be honest, I was going to make this last weekend using another recipe I saw on UA-cam, but instead I made moimoi, and moved the akara to this weekend. God probably wanted me to find this recipe...lol. I watched the video multiple times all through the night and went through so many comments. I find that some nuggets can always be found in the comments when people ask questions.
    So, thank you so much for this recipe. My husband said it was better than the type we buy outside and that it was not oily. I was soooooo happy! But I have now been sentenced to making akara every weekend. So help me God!

    Here in Brazil (bahia) this is a traditional food and is called acarajé, we split in half and stuffed with vatapá, caruru and pepper, the acarajé pasta has a harder consistency and we fry it in palm oil. Thanks for the video make more traditional foods from mother africa.

      Nice. I watched a documentary where a woman was cooking acarajé in Bahia, Brazil. Bahia has deep West African roots, particularly Yoruba based on those brought there during slavery. Traditionally, we also fry akara with palm oil.

    Wow, wow, it is good to know what you are doing and how to do what you do, I have seen lots of videos, but yours is a class apart, lovely; if you know Akara well, you would be able to tell what a lovely outcome this Akara you made will be, it seems light and don't hold too much oil, this is the major challenges with making Akara, thanks for putting out a good work, I never subscribed before, this is the first time I will go that length.

    Tasted for the 1st time yesterday at International Food dishes for Black History month. It was the best. We learned that the Akara is blacked peas so every time someone asked what the dish was , they were told blackeyed peas, they were amazed and just had to try it. Pleasantly surprised!

    Hi. Nice video. You don't have to use your hands to scrub the peels. You can remove the peels in less than a minute with the the lowest range of your blender and the beans will remain intact while the peel will be off.. Just make sure there is a lot of water in it.

      Thanks for the recommendation. I do that when I have a large amount of beans to skin. I dont feel it is necessary for me to use it for a cup of beans 😁.... moreover I just wanted to go old school on this and make it as basic as it can be(no bells or whistle). However thanks for sharing your knowledge someone might find it useful on here🤗

It is really not a lazy way for me using my hand to scrub it self is more lazy way cos I wont have to deal with having to rinse and clean up my big food processor and have to wash again after blending hahahha. But eh whatever is faster to one is a sure way to go. Thanks much for the love

    Looks so good, love your channel. Can you use any type of beans for akara? also, do you ever leave the batter to ferment before you whip it? or is that a different recipe

      Thanks much.
      Well not any type of beans can be used for traditional Nigerian akara. The most commonly used ones are honey beans, brown beans, black eye peas.
      No I do not leave the batter to ferment cos it will become rancid(sour). I only soak the dry beans in salted water to get it hydrated and soften to ease blending and reduce the work on the blender machine.

    Hiiii! Is it advisable to add salt and maggi to the batter before frying? Also can you just whisk it you don’t have a mixer?

      i will recommend added it before beating air into it or during blending the beans. You do not want to add it after incorporating the air so that you do not risk deflating the air already added... Whisking will require you to do a lot of arm exercise to achieve the fluffiness the mixer will give.

      Veeluvstocook_ I tried your method a few days ago and it was superb👍 Although I used a whisk and not a mixer , it still came out well. The idea of incorporating air into the mixture really made it fluffy on the inside. Thanks for sharing your recipe!
