This is called koose in Ghana. It is a black eyed beans fritter also known as beans cake.it is commonly eaten in west Africa as a snack and very popular in Ghana
Nigerians call it akara . This snack was introduced to west Africa by the Hausa people of northern Nigeria, same as in Ghana and even Cameron Today we are making 3 type of koose. The normal raw one most of us know. The koose with bread and the akara with eggs.

Wow I made akara for breakfast today. Sure would try the other two type @tati. Sister Hajara is the bomb.
@abroad the blackeye pea is harder than the one back home @tati. An easy way is put the beans in the blender and use ur pulse button like three to 5times, what it does is to break the beans into two and separate the skin. Afterwards it’s to wash it.
Also when blending you use little water. If you use a lot of water, it would come out flat. Unlike Africa which they have mills, abroad you use the regular blender. While blending you use a spatula to make it turn more
