    Ive never tried this food but it amazes me how its so fluffy and bread like it is yet it contains no gluten or yeast . Whoever invented this was lowkey a genius cause i would have never known blending some peas could result in such product

    I grew up in Port Harcourt in Nigeria.
    Back in the late 80s and early 90s this is what we often had for breakfast early in the morning before school. I was a student at Bereton Montesorri Primary.
    Sometimes I ate this for breakfast with Akamu (white corn custard with milk and sugar) together with my younger brother. This was far better than corn flakes or corn rings with milk. Other days it was fried yam with stew and scrambled eggs or fried plantains with beans or soft buttery bread with blue band margarine, strawberry or pineapple jam spread with hard boiled eggs, or even golden morn and buttered toast. We often finished it off with a hot cup of chocolate bornvita or tea with milk. Sometimes we added the bornvita to the Akamu. Then after breakfast we'd be rushing to the gate of our home, belly full with our strapped on backpacks to catch the school bus.😄Ahhh my good ol' childhood years!
    Although I don't live in Nigeria now, but i still eat Akara once in a while for breakfast. I soak the black eyed peas for 12 hours (preferably overnight) then I blend the whole thing in the morning without removing the skin. My nutritionist told me to blend the beans with the skin for the Akara because if I were to eat the beans in pottage form I'll still leave the skin on. It makes no sense to remove the skin which is the most fibrous and nutritious part and eat only the white. It comes out the same with extra fiber. Its a healthy breakfast treat and now that I'm grown up I eat this with carrot puree (which is zero carb) without sugar in place of the starchy corn Akamu and it works just fine.
    Carrot Akamu is just simply thoroughly boiled carrots that you add to a blender with a tablespoon of water and blend till completely smooth then you put into a pot and continue to stir till it becomes that Akamu/custard pureed consistency. No need for sugar. It has zero carbs and it's a healthier option.

    Here in Brazil, and specially in my hometown (Salvador), we have "acarajé"; it's a very similar recipe and It comes from west Africa!

      @@TheExlurker yes, precisely white beans. the main difference from traditional akara is the fillings. after they're fried, they get sliced in half and filled with shrimp, caruru (an okra-based stew), vatapá (a shrimp and coconut milk-based stew) and hot sauce.
      fun fact: plain akara is often used as an offering to yoruba deities in the candomblé religion (similar to cuban santería and haitian vodou).

      @@moisesduarte2926, sorry, you are wrong, we don't use white beans to make acarajé here in Bahia, we do use the same beans you can see in the video - the black eyed peas -, and here we call them "feijão fradinho". We only use the black eyed peas, white onions and salt in our traditional (which includes the religious offer to Orişa Oya) recipe, then fry them in red palm oil.

      @@augustalopes4926 you're absolutely right, it's black eyed peas and not common white beans; i misspoke there. it's the variety we call feijão de corda or feijão macassar here in pernambuco.

    I followed your exactly way of doing it but used a turner handle for the whisking i swear my akara was also bouncing in the lord. Its been three years trying to make akara but after watching your video yesterday i made a bouncing akara. Much love from the Netherlands

    I just made some following your steps. I used the already peeled beans but soaked them overnight. The batter was not like ice-cream because my hand mixer is a basic one & I don’t think I whisked for 10-15 as my arms became to ache 😣😄. It turned out well, was crunchy on the outside & did not soak oil 🤩
    Note to self: get a proper stand mixer 🤔😂

    I grew up in Jos. Every morning at 8am an elderly woman would arrive in my school with a huge wok type pot and filled it with groundnut oil. Long time later the wood fire had heated the oil enough and all the kids queued up to pay 5 kobo for a piece of koose or fried yam. I’ve wanted to re-experience that to relive my 8 year old self ever since. This recipe was so VERY CLOSE to that memory! THANK YOU!!!! 🙏 🙏

    I know I am late to the party but I love your videos. So straight to the point. No 30 minute introduction on something totally irrelevant. I prefer “wet and juicy” akara though. This air incorporation method makes the akara a bit too dry for me. Awesome recipe though. Keep up the good work.

    Thanks for the cooking tips...
    As a single man still waiting to find my better half (who honestly needs to be a chef and must surprise me everyday with her cooking, in the most pleasant way of course)...it's important for men to also know their way around the kitchen...and I must say that your cooking tips have done just that...now I invite ladies over for a cook and Netflix at my place and boy oh boy are they blown away by my cooking skills and etiquette.
    Needless to say they always ask for seconds...
    I think the jury is still out on which beans is the most suitable for Akara...i saw you used white beans, but can one also achieve similar results by using Oloyin (sugar/sweet) beans or any other variety of beans?

    Please how can I make Akara in such a way that the inside would be soft and not too hard? I discovered that my Akara is usually hard inside.
