    Nobody better be laughing at you, Lori! Your channel is amazing. It’s approachable, down to earth, and so helpful. Your channel has been both my steps into the water and my life raft out when I need that too. And hearing that your brother has a disability makes it make so much sense. As a disabled person, simple isn’t quite so simple for me. You’ve always given alternatives that are easier and recipes if we have the time and ability. And you’re not afraid to try something new and show those results. With you as my inspiration, weekly groceries have gone from $150-$200/wk to $60-90! And that’s in an expensive city in the northeast. I’m so grateful for your channel.
    Also, all the pitas I’ve ever seen have pockets. Maybe the pockets aren’t authentic? I thought pitas inherently had that big bubble from the way they’re cooked.
    Anyways, thanks for being you! Here’s some meals I found on other channels or articles since starting this journey:
    - tuna onigiri 🍙 is suuuper cheap and yummy
    - spam mushubi is great, especially with a fried egg. Low cost but not a cutthroat budget since eggs and spam have gone up
    - air fried spring rolls are great too! They can be filled with almost anything… especially leftovers 😉
    - sheet pan pancakes. I can’t recall if you’ve done this yet? SO easy and cheap
    - Buffalo chickpea wraps are quick, easy, and no cook! And very low cost if you have Buffalo sauce in the house already
    - baked carrot cake oatmeal, almost like a sweet oatmeal cassarole. I don’t follow any specific recipe. I just use all my leftover carrots for the week, about an equal amount of oats, some flour to fill in the gaps, baking powder, eggs, milk, sugar, and spices. You can prob find a recipe tho haha
    - McGriddle cups which I learned from Dollar Tree Dinners. They make good breakfasts leftover!

    I love that you keep things real with us!!
    What you need are pita pockets. That's what they are called and then you can stuff them with the chicken or even use them instead of bread for cold sandwiches like chicken salad.

    I love the greek chicken. My mother-in-law taught me how to make it when I was first married and didn't know how to cook! She also told me you can use boneless pork chops instead of chicken and we like it both ways. We also serve ours with tzatziki sauce and thinly sliced cucumbers. I learned the hard way to get the pita pockets. The Slow Cooker Roasted Chicken & Veggies looks sooo good I might have to fix that tomorrow!

    Lori, thank you so much for these recipes. I always use a liner. Right now it is so hot, I have been using my crockpot almost every day

    To get pita breads to "open up" it helps to warm them whole...then cut in half and you should get a "pocket" to stuff....that's how I do it....have been enjoying, and sharing, your videos Lori...you are a jewel, you.

    You have a Greek pita and it is used by merely folding it over. The pocket pita is from other Mediterranean countries. Yes, the taste is wonderful in the Greek ones. This chicken looks delicious. I love your videos. You do a great job!. I prayed for your brother and hope he gets well soon.

    I’ve seen some of the Greek Gyros made like you made yours. The pita was folded like a taco.

    I’m from Montgomery originally from Greenville and we love to take a trip to the Conecuh store! We have sausage dogs for lunch while we are there. We splurged and bought the hamburgers in bulk and they are SO good love the seasonings from there and my Mom and Sister love the maple syrup. We also love their bacon.

    Hello Lori, I am continuing to pray for Timmy. Does he live with you or with his mom and dad? I love your collander is that winnie the pooh on it ? I love using my crockpot in the winter and i love using liners. You can get pita pockets at walmart that will open. Love all the recipes take care and stay safe.

    I love crockpot and casserole/sheet pan meals (easy peasy) the crockpot ones are grrrreat rn with the heat.

    Love these recipes! I have been using my instant pot so much for the last few years. I’m trying to get back into using my crock pot. All the years when my Husband and I were raising our two Sons and working full time my crock pot was my lifesaver. I want to start using it more. Thank you for the meal inspiration.     Do look for the Pita bread that is already sliced. However you bought the correct ones for the meal you were serving. That pita bread is usually torn and dipped and picking up your food like that. The real Greek way. I liked the smoked sausage meal the best but all your ideas were good ones. Great job.

    the right pita bread are the thin larger in size those are the ones that open up when you cut in half

    I can't wait to try the broccoli and rice "dump!" The Greek chicken looks yummy too! I usually make potato wedges and cost them with EVOO plus all the seasonings you used in the chicken and pop in the air fryer!! So good for a hearty dinner and the leftovers are delicious!     These all look yummy. Thanks for sharing. It may not be the best way to do this, but when I need to brown an ingredient first, I usually just put my slow cooker bowl or whatever it is called directly on my cooktop and brown it there. I may have to drain any excess grease, but then I just put it back into the slow cooker and continue adding ingredients.

    There is an old episode of Julia Child’s PBS show where she had a guest in to show her how to make pita, and it was so fascinating. I never make them, I usually just make flatbreads and use them like you did here. But yeah, if I want pitas I look for the package that says pocket and hope for the best. 😅

    I think you have to get the package that actually says pita pockets or pocket pita on the bag. I did the same thing and it was so annoying but that is what the difference is. I hope your brother is feeling better. Great video!

    That chicken dish looked delicious! I think the
    Greek style Pita’s are thicker and not meant to open used for Gyro sandwiches. Middle-Eastern style is what you want. Speaking of those, reminded me to make Falafel- wonder if you have had it, quite good and budget friendly. Have a nice weekend 🇺🇸🇺🇸

      Falafel look like flattened small meatballs that are fried and stuffed into pita with a cucumber-Tomato salad and some tahini type dressing. Tahini is ground sesame seeds and resembles peanut butter. The falafel patties are mainly chickpeas and herbs, mainly parsley, the ones I have made come as a dry mix and you add water and form into patties after a short while. Took me a long time to try these, a friend would tell me I should, oh my gosh- so good, and extremely healthy. Check out video’s- I may be forgetting things, we don’t know what we’re missing if we don’t try different foods. Take care

    The pitas would really work better if you warmed them in a pan with butter or olive oil. It's how I do it and I don't use a pocket, I just fold it in half and fill it and eat. It all looked yummy and that salad SHUT THE DOOR, lol, soooooo yum. Sending more prayers to Timmy may the Lord bring healing speedily to him. Keep looking up!

      The pita bread is also good for a homemade pizza tho. I make little personal 1s for dinner sometimes it's cheaper than ordering out brush pita bread with some garlic butter just top with sauce cheese and toppings of each person's choice oven at 400 until cheese melts really good and kids love it

    Thank you. Great recipe. You did nothing wrong with those pitta. There are different types. The pocket ones are more oval and you need to toast them. Your pitta, you use like wraps…but they shouldn’t crack…maybe they were stale?

    You need to warm up the pita's first. That makes it pliable. You can then make slices

    It's still a pita..just not stuffed. Pile it up like a taco& fold it in half. Also next time add some feta cheese:)

    They look more like flat bread than a pita. Also put them on a plate with damp paper towels and heat them in the microwave for a minute or so. But either way you did wonderful.

    There are two styles of pita, “Arabic” style and Greek, Greek pita us more if a fluffy flat bread with no pocket. You can tell the difference between them by the more uniform thickness and even surface of the Greek type. The Arabic style is more wrinkly and oblong. Keeping your family in my thoughts. Take care.

    I’m late here but hopefully someone said to heat the pitas in a skillet or microwave. Personally I like these better than the pockets. I always break the pockets! You can also eat by tearing the bread and using like a spoon.

      Well, the piggies got the grease this time 😂. I usually save bacon grease but I didn’t think to keep the smoked sausage…..that’s a good idea!
