- This creamy rice pudding is not only an easy gluten free dessert; it's also the perfect way to use up the leftover rice you might have lingering in the fridge. And if you want turn this simple rice pudding into a holiday dessert you can top it with pumpkin butter and whipped cream.

I know, I never even thought of it. What a great idea. I'm sick of cooking to much rice that gets wasted. Same with pasta. I need to be creative with left over pasta. Any idea's?

Thank you posting this! Great video and recipe, just made this after having so much leftover rice from a Chinese New Year order and my wife loved it. This was my first time making rice pudding and even I liked it (never been a fan of rice pudding). My only mod was adding a pinch of nutmeg. Hi Colleen, I did it all at once in March of 2011. I have MS and was pretty ill so I went gluten free in hopes of improving my situation. After a few months I saw enough improvement to remain committed to the gluten free life.
This came out as delicious as my mother used to make! Thank you so much 🙏

OMG!!!!!! This is just like the rice pudding my mother used to make 50 years ago. I can't wait for the pumpkin butter. This is definitely one of my Thanksgiving deserts for my kids. Mark, I've made it with brown rice and Stevia, it tastes the same but it's not quite as thick as with the white rice, but I'm sure you'll like just as much, take it from an old lady who also lost and kept the weight off (but only 50 lbs.) Great video.

Looks great ! I could fit this into my breakfast meal. I would use brown rice and Stevia because I don't eat regular sugar and white rice. Thanks for the idea.

Good idea. And this did make a big batch. I was eating rice pudding for days.
I have been GF for 3years due to medical issues including Celiac disease. I would say going GF cold turkey or little by little is a personal preference if it is by choice. Maybe start by substituting the obvious foods such as breads, pasta, crackers, etc. Then start reading labels, Pretty much ANYTHING in a box or can has gluten. Learn words that signify gluten other than wheat, rye, etc. Within just a couple weeks you will see a noticeable difference in bloating, weight, etc. Good luck!

If I'm not making fried rice we make rice pudding.
Truthfully I'd take the fried rice over the rice pudding any day of the week.

Did you go gluten free all at once or gradually?
So I thought you said 1 and half cups of sugar. I dug out a half cup. The rest soaked in. I am still making it lol. Merry Christmas
Creamy Rice Pudding
Do the eggs cook? You put them in at the end and it didn't seem like they would have time to cook.
The eggs do cook. The pudding is very hot when the eggs are added. You don't want the eggs to scramble. The pudding should be over the lowest flame as the tempered eggs are stirred in for 1-2 minutes. Then the egg mixture thickens the pudding to a custard-like consistency.
Has anyone tried making this with milk alternatives? How did it go? I have no milk on hand unfortunately =/ just oat milk/beverage. It's plain and unsweetened but more carby and less fatty than dairy milk and almost no proteins =o
I haven't personally tried a milk alternative so I'm not sure how to advise.
What if you don't have heavy cream? 🤔
You could swap out more milk but iit will be a little less decadent.
Way too much sugar. I use coconut milk instead of milk it's easy to substitute. Excellent 👍 presentation 👍 👍 pleasant voice
