I have an illness where my stomach and intestines are all paralyzed, so I am unable to eat, so I get all my nutrition via IV. but I LOVE to bake for family and friend 💜.     I liked this cake so much that I decided to make one like it for my husband's birthday. And it turned out really nice but not as good as yours.     How do you refrigerate a frosted cake without it drying out? Is it possible I could make, frost and decorate the cake the night before to bring out the next morning? Or do I have to frost the cake the morning I am giving it away?

      +2011Chocaholics You can definitely make the cake the day before, in fact it is what I always do. As long as your cake is frosted really well and there are no gaps where cake is showing, you should be ok with the cake not drying out. The frosting/buttercream will seal the cake.     This looks so yummy I have 6" 2 inch deep round pans. How many layers would you puffer. I want to make this cake for my girlfriends birthday in May . I make the Italian meringue buttercream frosting. Never made Swiss frosting before. Is it easy to make. What's the difference between the 2 frosting? Thank you

      The number of layers is up to you. You will need at least 4 if you want it to look tall. You can watch some of my other videos to see how to make the frosting and the difference :-)

      +Haley Ivers Hi Hayley. That's fabulous! I am so pleased to hear it :-) Once all your ingredients are assembled in front of you, if you haven't done something like this before, allow a couple of hours at least. The icing can be made ahead of time and refrigerated till you are ready to assemble. Just bring it back to room temp and and beat again till smooth and GO FOR IT! I would really love to see a pic if you decide to give it a go :-)

      You can use anything you enjoy. Whipped Caramel Ganache or Whipped Chocolate Ganache for a lighter texture or just regular Ganache.

    Thanks If I use 4 tear that would be like 8 inches tall. My pans are 6X2 I could probably get away with three tier 6 inches tall. Would you think that be OK. I can make more and play around I'm doing a trail cake anyway on May 6th

      3 layers would give you a good height because there is also buttercream between the layers which will lift it even more. Extra height seems to be quite on trend at the moment but it's a personal choice. :-)

    Hi for the dripping sauce can you suggest if we need to measure the cream before or after heating ......... as it's mentioned in ml the consistency of the cream hanged once heated and so there can be more cream poured in a 100 ml mark than a cream that's a lil thicker ....correct me if I am wrong

    Do you think it's OK to have one layer of caramel mud cake and the other layer chocolate or vanilla cake do you think white chocolate ganache or dark chocolate ganache thank you so much for helping

      I think the different layers sounds absolutely delicious! You can also use more than one ganache if you like. There are no rules. Just go with whatever you like in terms of taste and flavor. Maybe you can do one layer of white ganache and one layer of dark ganache. It's a great way of using any left over ganache you may have on the freezer ;-)

      I always have 5" cakes on hand in the freezer. They are a staple in my kitchen. When stacking, if I think I need more I;ll reach for another one or if I use less, I will freeze the remaining layers for later use. Nothing worse than getting caught out! :-)

      +Diana Siu Melted chocolate would be fine but it can't be poured on hot as it will melt the buttercream. Let it cool to warm and you should be ok :-)

    Hello, I wanted to make this cake for my boyfriends birthday.
    He loves chocolate and caramel and I think the decoration is gorgeous, so it inspired me to do a similar one.
    But I also like the full ganache look.
    Would I be able to cover the whole cake with ganache, and maybe drip over it with white chocolate/ganache?
    Is it possible to put ganache over ganache?

    I have one more question. So you used a 6" board on top of your cake while frosting. If I use my 6" round cake would I use a 7" round board on top. I have never seen a 7" board. I no you can buy 6, 8, 10 or 12 inch boards. Thanks

      You can use a 6" board and trim the cake sides slightly to form a gap. You can see this technique in some of my other videos :-)

    I love this, but I would like to make the frosting pink. I guess if I colour the caramel frosting with red it will turn out more brown? 😐

    Hi - I was wondering if you had a recipe for the pudding filling that doesn’t use the Cottees? We can’t do those artificial colours :(

      Unfortunately I don't have a scratch recipe at this stage. You can also use a vanilla cheesecake insert in the same way I used the Toblerone Cheesecake layers for this cake ua-cam.com/video/nNQkc4ggBQ4/v-deo.html

    what is the trimmed freezer bag? is it parchment paper...wax paper....?

      +Dawn2Dusk23 It's like a plastic film that is similar to the Glad Go Between which can also be used. :-)

      You can use white chocolate instead of dark and add a couple of tablespoons of Dulce de leche or Nestle Top 'n' Fill :-)

    I was wondering why you put frosting on your small cake board... it wasn't until you put it on top of the cake that I realize you were using it as a guide. Clever stuff.

    Can somebody help me out, is it okay to do it in a 9'' cake pan? I know its gonna look a little flat but is it still gonna look good?

      It will still look lovely! To correct the proportion, you may want to add two more layers to the height :-)

      It won't melt if you let the drip cool to room temp before using. Don't use it when it's hot. Also, drip over a chilled cake. Thanks for watching :-)

    What brand cake tins did you use if your cake is 5” and you used a 6” board. I use the Cecil tins and don’t need to go an inch up. If I bake a 6” I use 6” board and ganache lids. Hope that makes sense LOL .
