    Jemma I feel like I've almost mastered buttercream and I've made great cupcakes too! because of watching your frosting techniques and using the grams for the good butter and sugar and milk it's just been amazing and I've been baking for years and I love it but thank you so much!

      Patisserie Boy. I will never understand why the cups measurements are so popular in some countries. It's so much more accurate to work in weight rather than volume. Love your comment!

    hey Jemma, could you do a video about the different kinds of sugar, what to use them for and what they do in a cake or cookie. I'm sometimes a bit confused about the different kinds like dark brown, light brown, demerara, white sugar, etc.

    Hi, Jemma. Can you please please please do a video about how much icing do we need if we're making different sizes of cakes or if we're combining stuff from different recipes. I do this quite often and I never know how much I need 😑.

      Really good request! Usually a regular buttercream batch makes way more for 12 standard cupcakes or even a 2 inch cake. And you cant really save it for quite long or just eat with a spoon like pudding!! Often I find baffled how much to use for a 4 layer cake or a bigger 10 inch cake.

    Just want to say a massive Thankyou Gemma .. I have managed to make a 4 layer sponge cake and iced it with your famous buttercream and finished it off with a choc ganache drip .. it looks amazing and my whole family are shocked to the core .., I couldn’t of done any of it without watching your amazing videos ! Thankyou so much my daughter is going to love her b day cake ... oh and I’ve never made a cake before in my life 😊 x

    Thank you so much for this! I made a 2 tier Ferrero rocher cake yesterday and attempted a drip but it went terribly, my chocolate drips melted the buttercream, and were way to thick so they didn’t drip they were also pretty lumpy and now I see that I overheated it, I’m trying this today on the cake and hopefully it goes a lot better. Thanks for these tips!

      Always remember to check the temperature of your chocolate drip before applying it to the cake. I will be uplaoding a video next week regarding this xx

    O my Lord everything that could go wrong did go wrong..my ganache was too thick, the top shot off my squeeze bottle mid drip spilling ganache all down the sides..hot humid day in sunny Aus so buttercream softened really quickly.. crappy turntable got stuck, crooked and wobbly (note to self don't scrimp on key baking equipment) but I have learnt lot of repair tricks from you guys so persevered and got a "good enough" first effort to give to my newly wed neighbours as a wedding celebration cake..looked very home baked, but I learnt a lot..thanks Jemma

    For anyone who needs the measurements in cups if you buy 8oz a chocolate use 1 cup of heavy cream.
    As 8oz equals to 1 cups. Hope this helps! Great video this was really helpful and worked well when I tried it! :)

      It does not matter what the cake is covered with. Drips work with everything!xx

    just used this ganache recipe. was a good starting point but had to add loads more cream to make it runny.
    Tip for anyone with leftover ganache put it in a mug and add milk microwave until hot add a bit of sugar if u like and you have some yummy homemade hot chocolate. so good. Try it sometime

    I did a white chocolate drip last week with RED gel paste and it completely seized up and I had to throw it out...I never thought of using cocoa butter though!!! Thank you for the tips!!! Great channel!!

      Not really most people read their chocolate a bedtime story before using it in ganache. That's how it got it's name, "ganache" is french for "good night"

    Lovely drips, milady! Just curious if after the top ganache has settled in the fridge, does it smooth out completely, making it look glassy or is there another technique that you would use for that? Every ganache covered cake I’ve seen has that perfectly shiny smooth look to it.

    Hi Jemma, I love they way you help to make the techniques easy to follow . I have friend's daughter that is unable to have sugar (it is quite life threatening and for her 18th birthday her Mum asked if I could make her some macarons, but I have had a quick look for recipes, not really with much luck. Just wondering if you may have come across any? I would really appreciate it, I would just like to bring a little sunshine to her for her birthday, she has had a couple of tough years. Sharon

    First time I've done a drip thank you it turned out ok not fantastic by all means but I'm happy with it I had to do a mix though of chocolate I only had milk 35% and dark 70% so did half and half worked ok

    This was so good Jemma!! Quick question, do you think it’s possible to still get a drip effect if you use just is icing sugar, cocoa powder and water? (I.e make it to the consistency you need, and the put it on?, or will it not work as it wont set as well?)

    I’m making a drip cake for my sister who’s turning 9 this July ❤️ I’ve never decorated a cake ever let alone do a dripping design. Wish me luck😶😂

    Hi Jemma, thank you for the video! I want to make a drip cake for my 5 year old son's birthday. He's asked for a batman themed cake and I'd like the drip to be black.
